Winner for best new Restaurant, Anima by EDO merges Italian and Spanish Cuisine into an elegant experience from Chef Oscar Amador.Run by industry veterans from front-of-house to kitchen it is following warm greetings at the door that guests are led to a choice of diverse seating options, banquets in the back most quiet with a full view of murals from local artist Apolo Torres.More "approachable" than EDO Gastro Tapas & Wine per General Manager Roberto Liendo, though certainly never lacking for creativity, Dinner at Anima begins with Appetizers ranging from classic Tomato Bread and Jamon to savory Churros with Caviar and all the traditional garnishes.Not forgetting fresh Shellfish, first Tom Kha Scallops then Spot Prawn Aguachile with edible Heads, Bluefin Tuna referenced the classic Basque Pintxo prior to indulgent French Toast topped in Uni and Truffles.Adding Oscar's Vegan Tartare by request, a prior favorite of the Chef at this table, tender Octopus took on Japanese and Latin influence prior to caramelized Bone Marrow lined in Escargot.Largely off-menu for this tasting, a meal originally intended for EDO transported to The Gramercy, Eggs in a glass got upgraded by Duck Liver prior to an all-Socarrat Paella preceded by the defiantly-delicious blend of Mushrooms, 'Nduja and White Chocolate.The second visit in thirteen days, an all-new Steak setup adding EDO's layered Potatoes plus an intense Sauce with Curry, Mustard and Anchovies, Dessert fused sweet and savory via sweet Cream Cheese, Miso-glazed Squash and piquant Peanut Salsa.

Not sure I would say we had a good time here. We really couldn't enjoy because the waiter at the table next to us was extremely loud and too talkative. It was our anniversary celebration and we decided to double date with my brother and SIL since we both were visiting in Las Vegas. The place wasn't busy and we got seated, then shortly after another group party of 4 got seated right next to us. Oddly there were other tables they could have been seated. So every time the waiter came by, which was a lot, he had so much to say with his volume turned up and he came by a lot and would stay for 5+ minutes at a time. We couldn't even hear ourselves talk to each other because the waiter was that loud. It even seemed like he got louder each time and we would get annoyed at him even commenting "dude we can't hear you" or "must you be so loud?" Obviously the waiter must have a hearing problem because he didn't get the memo. At the end of our dinner, I tried to find the manager, but he wasn't available. I complained to the guy in the front about the waiter of table next to us. I wish I said something earlier to get moved or complain about his volume because it was much better during dessert and we didn't need to shout over him to hear each other. It wasn't like it was busy. No other people were in our section, just the two tables. The table next to us was pleasant and normal when the waiter wasn't around. Their waiter was TOO MUCH! If it weren't for the loud waiter at the table next to us, I'd fully recommend this place. Our waiter was great. Even took in my food allergies into consideration. Food was great. It would have been nice if the manager came by and asked how we were doing because that waiter next to our table didn't give us the experience we hoped.

(Insert expletives in the best way possible)I can't speak on behalf of my wife and friends about their experience but the meal and overall experience went above and beyond my expectations. Those expectations were already set at a high bar too. The cherries on the top though are BJ and Joe; thank you is an understatement and we're blessed to have met you two. Shoutout to David as well! The tasting menu is incredible but the price point is even more so. Also, hats off to the amaze-balls selection of wines that were paired with the dishes. Main takeaway is this: you will without question end the night with a happy and full belly of the upmost quality of ingredients & deliciousness. Oh and their cocktails?? It rivals some of the best cocktail focused bars we've ever been to. PURE MAGIC.By far, this is easily in our top 3 dining experiences (collectively as a group). Great food, great wines, great ambiance and best of all - the people behind and in front of the scenes.Edit: the smoked hamachi with foie gras is an absolute panty dropper. Good mother of sweet baby Jesus. That's a DISH.

This was the perfect dining experience to have before I have to give birth. My husband and I have been eyeing this place for a few months and finally had the opportunity to come dine in last night. The restaurant is beautiful! Definitely loved the vibe walking in. You'd expect this from a restaurant closer or on the strip and I love that we have this closer to home if we're feeling fancy.Right off the bat, we knew we were going to try the tasting menu which was about $89pp. Might be steep for some, but it was a special occasion and we'd rather have a whole assortment of food so that we could try multiple dishes. I thought it was fair given if we ordered a la carte, it would've cost way more. I'd definitely recommend going this route if you're adventurous and want to try a little bit of everything.Service was on point. The hosts and wait staff were so accommodating and on top of everything. They were all very knowledgable about the menu and were passionate about their craft. We enjoyed every minute of our experience and the food was exceptional. Every bite was an immediate show stopper. A food lover's dream.We will be back again and will try their other restaurant.

Octopus, tender and Highly recommend. The pairing with the potatoes and sauces were delicious. Pastas, a bit on the saltier side. Still tasty but I think I would rather have eaten more octopus or smoked hamachi (not pictured) The reason I couldn't give edo 4 stars is due to our server forgetting one of our meals. We ordered the hanger steak which tasted excellent, but the rest of us had already been long finished with our meals by the time it came out. The staff didn't check on us during the meal so we couldn't bring it to their attention. The restaurant wasn't busy and im just a bit disappointed in their service

I'm a big fan of EDO so was excited to hear they opened a new place called Anima. I was hoping to get here when I was in town earlier in 2023 but just wasn't able to, I'm glad was able to finally eat here this past visit.Anima definitely feels like an elevated extension of EDO with a large spacious dining area that was sectioned off in places so it felt a lot more intimate than if it were one big space. The menu also was a similar format to EDO but the dishes did lean towards the Italian side.We opted for the tasting menu which was...Peruvian Scallop CrudoSmoked HamachiBurratini Alla PannaArtichoke FritaSpinach & Ricotta RavioliCanelonVermut Braised Pork CheekPersimmon & Ginger Creme Brulee for dessertI think all the dishes were good but the ones we both thought were outstanding were the smoked hamachi, artichoke frita, and the ravioli. These 3 dishes already sounded good on paper but they definitely exceeded their descriptions. I think our least favorite was the braised pork cheek. Flavor, presention and aroma were all fantastic but the pork cheek itself wasn't as tender as we'd hoped it would be. It was still a delicious dish, though.Defintely a great meal. The ambience and staff were top notch and like EDO, a great tasting menu and a really good price.

I have enjoyed EDO in Chinatown and noticed this location when searching for a Friday dinner spot after shopping nearby. The host says this location is Italian focused.We were lucky to have found open spots at the bar. The bartender (Alex?) made me a Gorilla in the Mist bourbon cocktail that was perfectly balanced. Yay to Friday night!My husband enjoyed a perfectly cooked octopus paired with paprika aioli. He rarely liked any aioli but this was an exception because it's not garlic forward. I had the green goddess salad with avocado cream that was creamy but light.Moving onto the entrees. Let me just say, I was blown away. Normally it's a hit or miss whenever I order pork. Restaurant often overcook/season the protein. The Iberica look tasted buttery, flavorful, and juicy. The potato cubes were sinfully complimentary. It's like an elevated thick cut fries that's perfectly crunchy on the outside and starchy on the inside. If the pork was then yin, the branzino was the yen. My husband's fish fillet was flakey, delicate, and flavorful.We finished the night with pistachio tiramisu with coffee gelato. Yummy!Overall, I appreciate the chef's intention towards each ingredients in each dish. They worked together to highlight, not distract, the main ingredient. We hope this placed continues to do well and stays true to using quality ingredients, provides great service, and crafts delicious food!

We started the year off with a tasting experience for the soul at Anima by EDO in Las Vegas. Not to be mistaken by Anyma at the Sphere, an entirely different experience. When it comes to fine dining, the food is the star, but the experience is performed by the people. @animabyedo hit all the marks. The food was amazing, the tasting menu well priced, and the portions were great. We barely made it through to the dessert. The evening highlight was laughter and smiles with BJ and Joe, our waiter and sommelier. The night was well worth the 30-minute trip from the Vegas strip. The Kaluga Caviar & Eggs *chef's kiss* I still daydream of that egg , highly recommend the supplement. We also had fantastic wine pairing and cocktails. (Their sister restaurant Edo Gastro in Chinatown is also a fantastic experience).

We dined at Anima the night after dining at Edo. We love Edo and knew we needed to try this restaurant as well. The concept is very similar but the menu and vibe of the restaurant are different. We went with the Tasting Menu and savored each course and every delicious bite. The portions are generous, the flavors are creative, and each course is artistically composed and presented. This is also a fantastic value compared to most other tasting menus nationwide.Anima is located in a newer area off the strip and is in a modern, open space. The ambiance is comfortable - there was a range of people from casual to more dressed up. The service is hospitable and efficient. While we did not order wine, we observed that the sommelier (I think his name is Paolo) was knowledgeable and delightful. Our server was excellent and all of the staff are friendly and helpful. They also presented us with an additional dessert because we were celebrating a birthday - this is a lovely touch that many restaurants no longer do. We are adding this restaurant to our favorites anytime we come to Vegas!
