My boyfriend made a reservation for my birthday dinner at this place at 10:30 but we were running late so I called and they said as long as we showed up by 10:45 we would be fine Thankfully we made it in time for their last seating. Upon arrival I noticed how beautiful the restaurant entrance was. After checking in, we were walked back thru the restaurant to our booth and greeted for water service.The view from our booth was beautiful! The chandelier was huge and made of seashells which was so stunning. The whole restaurant was incredibly gorgeous to me. They even had fire performers and dancers giving the place the best vibe and the warm ambient lighting was the perfect touch. We ordered their flaming appetizer with some drinks. I ordered the mezcal drink which was amazing while my boyfriend ordered the Paloma. Both drinks were yummy. Our server Melissa was so nice and helped us order, she is awesome! I ended up going with the angry fish which was amazing and light and I cannot wait to go back to order it again. The octopus was amazing too and so flavorful. The prawns were good, too, but we will probably try other items next time. We got the flan for dessert. All of their desserts sounded so good so we'll have to try a different one next time. This is my favorite restaurant in Vegas right now. From the food to the staff to the vibes 10/10 HIGHLY RECOMMEND

I came here two nights in a row and Amaya easily would have gotten 5 stars based on the first visit. (A 5 star review from me based on just one visit is rare - the place must be exceptional!) Still, this place is a new fave and I cannot wait to come back!For the first night, I made reservations the day of and all the times available were either for an early or late dinner. We opted for an early dinner, and that seemed to be a good choice. We were seated promptly in the first dining room to the left off the bar/entrance - I have to say the restaurant is absolutely beautiful inside! It was just a wonderful first experience - we were seen promptly, our waters were always refilled, and our food and drink orders came out fast!The food was delicious! We ordered the guacamole, shrimp tacos, surf and turf burrito, churro ice cream sandwich, and Flor De La Pasion drink (for me) - everything was excellent! When we went back the next night, we ordered the same without dessert or drink, and got fish instead of shrimp tacos. Note that if you get the guac it comes with mild salsa, and if you want spicy, there's a $5 charge for it. Green salsa came with the tacos, and I preferred that over the mild red salsa. We paid the $5 extra for the spicy one on the second night and it was so good, definitely had a kick to it!Service was slow on our second visit. We came later in the evening and the place was packed. We had to wait a few minutes to get seated, and wait for pretty much everything the rest of our night. Also, our water glasses never got refilled. Service was better by the end, though. Our server gave us his recommendations - though it would have been nice to get them at the beginning because one of the dishes he mentioned we had been eying the night before but forgot when we were ordering that night. He did take the guac off our bill because he said it looked like we hadn't eaten much of it, so that was a nice touch.To note, they don't seem to give complimentary birthday desserts. I had noted in our reservations that we were celebrating a birthday, but we didn't even get a birthday greeting. Still, my stomach and I can't wait to come back and have our faves and try a different dish as well next time!

Amaya in the Cosmopolitan A buddy and I stopped in for a cocktail at this very popular place - often hard to snag a table or bar seat. We grabbed 2 of the last seats at the bar. He had been there and was on a mission: the Carajillo - Don Julio Blanco, Kahlua, cold brew espresso and licor. I tried the La Llarona margarita: reposado, ancho reyes liqueur, Cointreau, lemon and lime juice, ginger syrup and fire bitters. They have an extensive drink menu with a wide variety of margaritas and specialty cocktails. Of course he enjoyed his drink, and I really liked my margarita. It was not too sweet, and the fire bitters and heat was mild but enough to know it was there. Complimentary chips and salsa were served; the salsa was very mild. So if you're looking for hot, you may need to ask for other options. The bartenders were friendly and helped with my margarita selection. A gentleman next to us had quite a feast in front of him - his carne asada tacos looked fantastic. I look forward to returning and trying some of their food!

Sexy upscale coastal Mexican food. From the elegant long dresses of the hostesses to the dimly lit interior everything speaks softly of an upscale trendy experience. Food is good too. Starting with the authentically oily tortilla chips, to the baked oysters, Caesar salad, shrimp aguachile, lobster, angry fish, everything was quite good. Had a birthday ice cream cupcake, and fish for dessert. Service was a little spotty - slow between the final entree and dessert. Over all an enjoyable experience and would return, bearing in mind that some of the food here is saucy and rich not for diurnal consumption!

Three stars, it was lovely! The restaurant was gorgeous, amazing decor. Service was alright, a few hiccups since they just opened, but our server was great.The menu items weren't all available as what was on the menu they didnt have. A menu for opening day would have been great. Food was ok, guacamole could have been seasoned it was bland. Chips were cold. Tacos were ok. Drinks were amazing. Not sure why Holsteins left this space as that was our go to when in Vegas, but oh well. So, will I come back, eh! not sure on the fence. I'm at the Cosmopolitan often so I may give it another try. As I frequent Javiers at the Aria, Amaya has a lot to live up to. Better and tastier food options would be great.

Super cozy! Mexican fine dining! Food is epic! I ordered their Beef biria taco paired with a side of spanish rice, paired with Grapefruit and sage mimosa... love it! My husband ordered the Carne asado, the beef was so tender. Lots of servers checking on us!

Last night, I organized a group dinner at Amaya Modern Mexican Restaurant for 20 people, and I must say, it was some of the best Mexican food I've ever eaten. I would absolutely go back there again. In fact, it's now on my list of must-visit restaurants for an excellent dining experience when in Vegas. The place is a total vibe with so much entertainment. There was a DJ blasting music and even a few performers dancing and blowing fire. You have to experience it for yourself.I chose the family-style option for us, and everyone raved about how good everything was. The drinks were perfectly made. I'm not a huge drinker, but I do have a drink every now and then, so my colleagues don't think I'm the undercover watchwoman. LOL. We had tons of food: queso, salsa, and guac with chips. Then came the Big Eye Tuna Tostada, which was an absolute crowd-pleaser, followed by the Lobster and Corn Tostada, which had more lobster than anything else. Most of the time, when you order lobster, you get a lot of filler--not here. It was straight scrumptious lobster for you to enjoy.For our entrees, we had Ahi Tuna Steak, Birria Short Ribs, Lobster Tacos, and the "BIG BOY" Tomahawk Steak. Our sides were Mexican street corn, Frijoles Charros, and Spanish Rice. I'm also watching my carb intake, but this rice is worth the calories and the carbs. Nice, shelly rice bursting with flavor in your mouth. It was soo good. I would have eaten the entire side myself. For dessert, I went with the Flan, which everyone loved. I'm just not a huge fan of flan.Overall, I'm giving Amaya a 12/10--yes, 12. Everything was delicious. My only feedback would be to slow down the pace at which the food comes out, but maybe they were trying to get the next big group in and us out.

Amaya is the newest addition to the Cosmo, and it didn't disappoint. Was in town for a conference and visited Amaya on a Monday night, it was still decently busy. Alexis was my waitress, and she was great, super attentive, and kind, she even had the restaurant text me when I forgot my credit card!! From the moment you step in, it's like you've entered a modern jungle, the decor is really cool with a unique flare. Highly recommend the Fuego y Hielo cocktail for an entertaining and delicious drink. Had the Surf and Turf burrito, and it was amazing. Packed with flavor and kept me coming back bite after bite. The chips and salsa were also really good. Great new addition to the Cosmo, looking forward to future visits.

When I first saw Amaya at the Cosmopolitan I thought that's Toca Madera /V2. They even have fire dancers. I was able to score three seats at the bar, a very hard pro trick to pull off. I landed there first so I scanned the bar & locked in 2 seats next to a single lady enjoying her feast. I knew my friends were stuck in traffic so I ordered a drink, the table salsa & guacamole, & struck up a conversation with my needed 3rd chair. Turns out she was pretty cool, in town from Reno, running the same race. Just as she got up to leave, I said, hey, I have a deal for you. Can we buy you a drink to hold your seat until my friends get here? She loved that, & our problem for 3 at the bar at a restaurant with no reservations was solved. Kindness & booze always works. Our feast included the GUACAMOLE [ onions, tomato, cilantro, jalapeño, lime ], CHARRED OCTOPUS [ chorizo, guajillo, white bean, potato, pickled onion, lime aioli ], LOBSTER TACOS [ maine lobster, cabbage, avocado, tomatillo salsa, corn, black beans, pico de gallo, flour tortillas ], CARNE ASADA [ prime grilled skirt steak, chili butter, grilled cebollita, sweet peppers, chimichurri ], ROASTED CABBAGE [ tamarind glaze, carrot puree, micro cilantro ], and the FIRE ROASTED SHRIMP TACOS [ grilled shrimp, cabbage, chipotle aioli, pico de gallo, roasted tomatillo salsa ]. The Cosmopolitan rarely misses, & this spot was fire. The service was amazing, food perfectly cooked & prepared, full of robust flavors, & the cocktails hit! A perfect start to a night that ended at the barbershop!

We were very excited to try the new Mexican restaurant at The Cosmopolitan...Nice welcoming atmosphere, not too crowded on a Monday afternoon, friendly & attentive staff, timely service... our disappointments were with the food itself, guacamole was very bland as well as the house salsa , breakfast burrito & frijole beans. Tortilla chips & Flan were good. Might give it another try. Prices were about $$$ out of $$$$.
