10/10 Delicious and "different "I think Central American cuisine is on the rise in PNW with other gems like Cabaña. I Was Really, Surprise With The Service de Cleaning Less. You can tell it's owned by young people because their social media game is good. Their color palette is fun and the plate presentation looks very "American" friendly. Prices are good too. Flavor wise really authentic using old school grandma recipes. Was a bit skeptical about them having tacos (which are Mexican) but owner explained is to have some friendly food truck items for the region and mom's husband is Mexican. They let me have a Birria taco and it was great. The tortilla was really soft and tasty. Definitely will keep coming back and I encourage everyone in the area to try it.

In short:Holy cow, we had lunch here and we're ready to go back for dinner already tonight. Our new favorite food truck (and that's not a short list).In long:A food truck that seems to be growing rapidly into a small institution. This is a forgotten-looking parking lot that still manages to get busy, and as of today they're building out biggish improvements to the overall area--La Casa seems to have its spot dialed in over by the street.We pulled in and couldn't quite tell what all comprised the business, in a good way. They have their trailer where they take orders, cook, and serve. They have an espresso-shed-type building for storage and some signage. They have a lean-to type deal on the building side, where they have covered and shielded seating at a couple picnic tables. It's a small compound.The window is manned by quite possibly the nicest kid in King County. He's friendly, answers questions, makes sure you know which things are spicy. The rest of the crew might be his folks, for all I know. The whole place has a very friendly, homey vibe. We picked up 3 plates plus peppers and drinks for $40 plus tip. Prices here are fantastic.PastelitosWe got 2 beef and 1 chicken for our order. These are ridiculously good. Crunchy on the outside, with enough dough to also have a little light, airy, chewy layer under the thin crunch of the outside. Big flavors, all in perfect balance, in the fillings. Not especially spicy. Beef was our favorite, but try both.Honduran EnchiladasThey name these enchiladas, but describe them as tostadas, and what you get looks and eats like a tostada for sure. I don't know enough about Honduran culinary traditions to explain this, but I know they're delicious. Big flavors, nice crunchy tortilla, holds together for the whole meal. Again, not that spicy, but everything comes with pickled peppers and veg, and you can order lots more of that if you want that kick.BaleadaThis was very mild in flavor, and by far the softest textures of everything we tried. Delicious! Sort of a big taco folded closed with beans and egg inside. I loved it but will add peppers and salsa as I eat next time.HabanerosLots of pickling flavor happening with these, good heat, some other veg in the little cup with them. I could go through 3-5 of these with a meal.You don't get a fork; they might have them on a side table or you might have to ask.If you opt to eat in your car, and they're not too busy, there's a decent chance they will come find you and open your drink for you.I can't say enough good things about the food, service, or prices here. If you're anywhere near the area, check 'em out.

Asked them to make the taco plate and burrito vegan by using whole beans and plantains and both were tasty. The radish salsa or chimol was really good - wish there had been more in the burrito ;)

This place is a little slice of heaven hidden in an Edmonds strip mall. They must have magical elves hiding in that truck because the food is sooooo good. They melt the cheese on the tortilla using the flattop which gets the cheese all melty and crispy on the edges. I can't get enough of their burritos, asada, pollo, I don't care it is all good. Don't sleep on the birria either, that consome is to die for get it for everything.

4 words. Pollo Fritos con Tajadas.I don't think I've ever had Honduran food before but it won't be my last for sure! This was amazingly packed with flavor, from the fixings to chicken leg quarter. It was a generous amount too and I shared it with my son and had leftovers for another day! This is a static food truck that's only opened certain times during the week. I foresee it being opened more days once business is up and running. Seating is limited with just two picnic benches but food was still amazing to eat at home. I'm craving for my next visit which will be soon! I am an amiga for sure!'

Ordered some tacos and a burrito. Burrito was very good size and I enjoyed that the tacos came with beans and rice. Overall nothing wowed me. Honestly wouldn't recommend either item. But there's other things on the menu worth trying. Food came out fast and hot.

food was very good and good service too. they had a nice covered area by the food truck. We chatted with the guy at the window wondering how Honduran food was different from Mexican he was very friendly and happy to help 10/10 if you are in edmonds you should go here.

My wife is a SoCal native and we make frequent trips there to visit our burritos. And her parents I guess. We've been starved for good Mexican food in the PNW for far too long. I'd say the closest we've gotten to the taste of Cali Mexican food was at the defunct Hecho's in Greenwood. Oh, how I miss their lengua tacos.Well the search for a good burrito is over. I know this is technically a Honduran food truck but my taste buds aren't clever enough to know the difference. The rice is certainly different, but in a pleasing way. The birria burrito is sublime, pair it with some sour cream and your favorite hot salsa and you will not be disappointed. We've tried some of their other offerings, and they're okay, but each time we stray from our truth we pay the steep opportunity cost knowing we could have been having a birria burrito.Just do me a favor and leave some birria for us.
