A solid effort on the carne asada street tacos. Tried them at a corporate sponsored event so I'm not sure if the 2 taco plate was the regular serving size but that's not a meal.Flavor of the meat was 8/10 and it was tender too. One of the drizzled sauces was a crema but the other was more BBQ inspired. Tasty, just unusual but not in a bad way. What kept these from receiving a higher rating was how flimsy the corn tortillas were. They fell apart and made a traditionally hand held food nearly impossible to eat.

Really nice people. I've caught up with them on several occasions when they've been out and about. They do Mexican food, and cook it quite well. I've had their quesidillas, tamales, and raspberry tamales. I think the quesidillas might be my favorite, but on different days, they tend to offer different things. Maybe the bbq nachos are my favorite, or the tamales. Once, in Raytown, I had their barbecue nachos. It was way more than I could eat, which made 2 excellent meals. They didn't put much gloppy cheese on it, (like I requested) and the nachos were even good at the second meal. It pulled pork, bbq sauce, and fresh vegetable. Little cheese. I like their tamales too. Heck, I generally like it all.If you make a special request, they will go out of the way to make the food for you, say, no dairy sauce, or no cheese. No problem. They are polite and nice about it. I didn't try one of their burgers yesterday. I probably should've but this truck seems to get out and about. Including the areas around where I live. I follow them on FB, and Twitter, and keep up with where they are.They've had a couple of mishaps to get around in the past, but thank goodness they they did it, and are successful.

I've been lucky enough to get Indios Carbonsitos for breakfast a couple of times over the last couple of weeks, this is a special treat because I often do not find myself out and about at the times or locations that the truck is out and about as well.First time I had two Carne Asada burritos. Wow. You know food is good when you close your eyes to chew it to hold back the tears of joy. I didn't wash my hands for awhile after eating either so I could still smell the yumminess left on my fingertips.This week I tried a Chicken Tinga burrito to go with my Carne Asada... there's nothing wrong with the chicken tinga, it's just not my taste. The heat was perfect, but I am not a fan of the taste of chipotle. I'd eat it again, though.I've had a variety of foods from Indios Carbonsitos: hamburgers, hot dogs, brisket, tenderloin... it's all good... oh and whole chicken...that was awesome too.

Ran across this truck at the Merriam Farmer's market, and was excited to give it a try. The young lady who took my order was super nice, and the sandwich (Akcel) came out quickly. The bun, split hot-dog style, was kinda meh. Soft and a little crumbly, I feel like it could have benefitted from a little time on the flat top-- would have added some texture to the composition-- and allowed it to hold up better. There was some shredded quesadilla-like cheese at the bottom, but it wasn't melted, though it did add a nice creaminess to the overall mouthfeel. The carne asada was excellent though, and the mix of peppers (red and I think poblano) and onions gave it a great kick. The salsa rojo they capped it off with was a nice touch, and the overall feel of the meat/pepper combo was spicy and savory but not overdone. Tasty sandwich overall and I look forward to trying more of their stuff.

A family-run authentic Mexican food truck in KCK. The menu is different every time he is out but so far I tried and liked tortas ahogadas and gorditas. Tortas ahogadas are served dipped in hot sauce in a large ziplock bag because that's the only way to handle them. Gorditas are crunchy on the edges filled with pork or beef with beans and hot salsa. To start off I love 'Mexi-que.' I ate at this place while at the Kansas Food Truck Fest and the BBQ brisket quesadilla was on fire. Packed with very tender flavorful meat and cheese, a sizable flour tortilla, drizzled generously with some great kickin barbeque. I'd definitely go back to try some of their other menu items!

I have been waiting a long time to run into this particular food truck - and believe me, it didn't disappoint. I have the Indios Nachos with tasty morsels of carne asada on the top. The cheese was so tasty and the chips really crispy - it was Nacho perfection! The chihuahua dog was amazing! The cojito cheese really makes this hot dog! If you are out and about and see this truck - stop for some amazing food!

Sometimes a place is hyped up and it lives up to the hype. Other times it's hyped and falls quite short. Indios definitely falls into the latter category. It's unfortunate since I really, really, really wanted to love their food.I've been several times. The food was average. But that's fine. The stand out is supposed to be the ahogado but I don't eat pork so I won't get to try it. I've tried a few of their other items and everything tastes fine. Just average. Not a standout on the BBQ end nor the Mexican end. That's so disappointing because there's just such potential. What kills me, though, is not once have they ever gotten my order right. You are assembling it from scratch, right? I can understand if it's pre-made but if you make it from scratch, a couple substitutions or just leaving one or two things out (cheaper for you!) should be easily doable. Nope. They've gotten it wrong. Every. Single Time. Once, I even had to get it remade two or three times (I lost track) because they just couldn't get it right. Seriously?This is really what gets them knocked down to two stars. So I guess if you go, go for the ahogado and don't change it at all because I guarantee they'll get it wrong.
