We stopped by on a holiday and we're happy to see them open. The prep time was long, but there was just one employee taking orders, cooking, and running for drinks. The food was great. We had fish tacos and beans & rice. The tacos were very good, fresh and come in flour or corn tortillas. The beans and rice were phenomenal! Spicy rice and black beans with peppers, onions and blistered tomatoes. Oh my!For $7 per taco, it would be nice to add some chips. We will definitely return.

We saw where a food truck court was available nearby, the Village Garden. Within the Garden are several concepts; Acai Bowls, BBQ, Coloradan Fusion, Mexican and Pizza, along with a coffee offering within the permanent building on site.I decided to go south of the border and put an order in at The Little Sombrero.My order was a small chips and queso and a seasoned chicken quesataco.The chips and queso were fair, the chips could have been improved with some warming. The queso was thick and tasty, but being in a plastic go container didn't lend itself to being heated to a more liquidy consistency.The quesataco was really good. Served with an accompanying sauce it was a winner. Pulled chicken in a red sauce, cheese, onion and pepper in a griddled tortilla. Man, this hit the spot. I rounded that out with a Coke and a smile.The menu has many offerings in the taco, burrito department. Mexican street corn was a side I shudda tried, but I didn't commit on that, saving room for a dessert to come afterward in downtown.I give Little Sombrero good marks, it was fast and tasty. Expect tospend around $12-15 dollars depending on your hunger level.
