What a wonderful time! We celebrated my 39th birthday at Salt, and everything was just perfect. The ambiance was amazing, low lights, soft music, and a welcoming vibe that set the mood from the moment we walked in. From the warm greeting to the very end of our meal, the experience was fantastic.David, our server, was attentive and made sure each course was spot on. We tried a few appetizers and a steak, and the flavors were outstanding. I especially loved the unique touch of having three different types of salt to customize our food each one transformed the dish, making it feel like we were enjoying three meals in one!The drinks were delightful, but the cherry on top was the thoughtful birthday gift, a piece of chocolate and salt to take home. We absolutely loved it, and we'll definitely be back!

We attended a private lunch event at Salt, called the Chefs Theater where the head chefs conduct cooking demonstrations. You can enjoy champagne while they demonstrate each dish, then you are served the dishes with a beautiful wine pairing. It's such a memorable, and enjoyable way to experience Salt. On this occasion, we enjoyed the following fine dining courses...Lightly cooked scallops with artichoke veloutè, chanterelles, and caviar Halibut with lobster medallions, parsnip, and beurre noisetteKey lime soufflèEverything was wonderful! I learned so much about fine dining and how important it is to use good ingredients. The wine was fantastic, the view was gorgeous, and the service was lovely. It was also fun to meet the chefs and get to know them. Salt offers a beautiful fine dining experience and I would definitely recommend you give them a try.

One of the best meals I've had!! Everything we ordered was SO good and did not disappoint. It was such a vibe too. Of course, the service was amazing, and the food presentation. They offer a piece of complimentary bread. None of the meals were salty at all lol! I love how they give you 3 different salts to take home. Love a good souvenir. A friend was in town and staying at The Ritz for a conference. She had a reservation at Salt and invited me to join her. Interestingly, although I'd obviously heard of Salt and been at The Ritz on several occasions, I hadn't dined there. So I was open to trying it. We went with the tasting menu for which was seafood themed and five courses.Walking in, the place was nice and quiet. All of their salts were on display, just past the host stand. We were taken to a table, and our waitress came over almost immediately to offer bread with butter and some of their salts. I loved being able to taste a few different salts. The five course tasting menu was disappointing overall. While there were definite high points such as the branzino, several dishes lacked seasoning such as the sole. I also wasn't a fan of the Paris Brest that they served for dessert but the blueberry ice cream accompanying it was delicious. For a lower price point, I would't have minded but for $245, I expected the food to be amazing...it wasn't. It sort of seemed to me that the prices are unnecessarily high here. I did appreciate however that we got to choose which salt we wanted to take home at the end of the night. If I returned, I would order a main entree off the menu and skip the tasting menu.

Here it is - a review that I'm sure is anticipated by many.The infamous "SALT" in Fernandina Beach inside the Ritz Carlton Amelia Island was my destination on July 2, 2024.We often frequent the lovely resort, but have never had a chance to enjoy this dining establishment. Because it was our anniversary we decided to enjoy a lovely evening here.What you need to know: - It is a five diamond award-winning seafood forward restaurant using simple fresh ingredients to tantalize your tastebuds!- The wine cellar boasts 400 labels for you to enjoy.- Located in a coastal setting, over 40 varieties of salts harvested from all over the world are available to enhance the flavor of your evening!-It is located inside the Ritz Carlton resort in Amelia Island. You do not have to stay at the resort to enjoy the experience here. Simply pull up to the front of the resort and let vallet take your car - enter the resort and make your way to the restaurant. However, if you are staying here , definitely save an evening for SALT!- There's a strict dress code! I find this so refreshing! Gentlemen are required to wear long pants and closed toed shoes. Hats are not allowed. Jackets are encouraged. And of course, the ladies will want to dress accordingly. - $$$$ - You can make a reservation on OpenTable and Salt will require a deposit.This is a white tablecloth fine dining beachfront establishment. The views are amazing from almost anywhere in the restaurant as all tables have some sort of view of the ocean. It is beautifully decorated and provides a romantic ambience. Music was chiming in the background - it was relaxing and upbeat at the same time. There is a nice bar/lounge outside the restaurant as you enter if you choose to have a cocktail there before hand. There is also a nice patio off of the restaurant outside that overlooks the ocean. Just as you would expect at a place like this, the wait staff was extremely professional and attention to detail was not spared. The food was on par and perfect, every single dish! It was a perfect evening! If you are looking for an upscale fine dining venue that allows you to dress up for a nice evening out - you have found it! Perfect for a special occasions, birthdays, anniversaries, perfect anytime! Grab a date and go! My apologies in advance for not getting photos of the entrees and other items that we enjoyed. I did not want to disturb anybody by taking pictures. However, we delighted in the greens and vegetables, Cobia, Beef tenderloin, a beautiful bottle of Malbec, and of course, the fantastic soufflés for two! Everything was perfect! Everything was amazing! From service, to ambiance, to food. Our server Olga was very knowledgeable and made great recommendations. We loved our salts selections for assortments of breads. Lamb was the best I've ever tried, flavorful but not overpowering. Baklava desert was delicious and we loved it with selections of hot teas that they had to offer. We also enjoyed our complimentary macaroons and truffles.

To begin Salt is the white tablecloth of the Ritz Carlton in Jacksonville, Fl. Being in the Ritz speaks for itself. Everyone and everywhere you go within the hotel you receive great service and our waiter at Salt provided exceptional service. The room was a little dated, dark brown cigar-style, although we were informed they were setting up for a major renovation. My wife and I at the Ritz for our Wedding anniversary so they took extra care of us and made us feel special. I highly recommend Salt and also the smokey old fashion at the lobby bar. Go and enjoy!!

Not a bad word to say. We were on a week long family trip to a couple resorts and this meal is the best we had as far as food, service and ambiance. The attention to detail is what sets them apart from other restaurants. Olga our waitress was personable and made sure our every needs were attended before we even had to ask (especially with our almost two year old daughter there as well).We had the pasta special, a salad, Sole, Beef and souffle. Our favorites were the Wagyu beef with an Asian sauce and the Seafood pasta with the fennel cream sauce. The fennel perfectly balanced out the richness of the seafood and cream. There was also a lobster amuse which I could have eaten 6 of.Again thank you to Olga for making it a special evening for our family.

My husband and I have eaten at salt twice. Once a year ago in their regular dining room, we had a lovely three-course dinner with excellently paired wines. We love the ambience of the restaurant, which is warm and inviting and the service is really friendly.Yesterday I took my husband to dine at the kitchen table, which is a special table inside the kitchen closed off so that you can see the inner workings of the restaurant. It was a particularly busy night for their off-season, because of a conference going on in the hotel, so the kitchen was going full-speed. We believe the head chef was out, and the sous chef was standing in for him. At the kitchen table, they create a Chefs tasting menu of about seven courses, and you have the option of choosing the wine pairing. I have the savory dishes we particularly liked the terrine and the oyster with caviar. For desserts, we were very, very fond of the chefs take on baklava, refreshing, light, crunchy, with pistachios. We will definitely be back to salt in the future, but we will probably not do the kitchen table again. The experience took about 3 1/2 hours because of how busy the rest of the restaurant was, and while the menu was creative, and well executed, we felt the ingredients could've been a little bit more fresh , and a few of the dishes could've been more artfully plated. Enjoyed listening to Troy, the guitarist! Decorated cutely for the holidays.
