Sailbird Distilling

I stopped by Sailbird while spending the weekend in St. Augustine. As I was exploring, I came across this bar on a map and decided to look it up. It seemed interesting, so I checked it out. The place is small, but the drinks really pack a punch. The owner was very nice and clearly knows how to mix a good drink. If you're in the military, I highly recommend trying this place. Just let the owner or bartender know; I won't spoil the surprise.I tried the Nutty Professor cocktail, which was absolutely delicious. It's similar to an Old Fashioned but with a unique "nutty" twist. If you're familiar with the local Kookaburra Coffee Shop, you'll definitely love the Kookaburra Coffee Martini. Sailbird makes their own coffee liqueur using beans from Kookaburra coffee, and it's fantastic. Be sure to grab a bottle!

Sailbird Distillery has opened a small bar, that serves drinks and sells their bottles. Stopped by to get a few bottles for friends and myself. Needed more datil pepper vodka and Coffee liquor.Tried 2 drinks while we were there a smoked hot (make with habanero whiskey) old fashioned and a coffee martini. Both were very good...

We were here last year, and wanted to come back to check out the new tasting room! Last year Brian was our guide, this year his spouse Susan was in charge. We had a great tasting-and the new space is amazing. They now offer cocktails as well as tasting the different blends. Very awesome!

One of my all time fav distilleries in Florida. We have been visiting this place for a few years now. Love chatting with the owners Brian & Susan. You can tell they love what they do and more importantly they love their products and love to share it with others. The warehouse location they have is super cool but I love their new modern bar. Trust me their whiskey is truly delicious it is a great everyday whiskey. Susan had a a blue moonshine that isn't available yet she let me taste and omg they need to start selling that stuff asap! What Brian & Susan have created is truly spiritual chemistry. The other distilleries in town are commercial in my opinion this place truly is a micro distillery that will soon be taking over the state and will be your new favorite! Definitely try this place out you won't regret it!

this place is so elegant while maintaining the distillery type of vibe. they make their own liqueur & it tastes amazing! i love supporting local businesses especially when the owners are so gosh dang nice! brian's old fashion balls are awesome feels like home!thanks brian & susan

Oh how I love small businesses! Especially when the owners are right there doing the hard work and selling you on their dream/product. And that's how I felt talking to the owners- like this was a hobby turned dream and they are fulfilling other dreams through this business. Another thing I love is businesses who give back to their community- community is everything! Small but mighty comes to mind. I met the owner/distiller at the garage door of the industrial building and he invited us in for a tour. I had some time restraints, but enjoyed listening to him tell me how he started distilling at home and how it was horrible at first and he slowly turned his chemist knowledge into a business, inspired by watching a moonshiners show to boot! This really did make me chuckle. They opened during a pandemic, ended up making hand sanitizer for a spell and are expanding by adding a tasting room "in town"! Tastings- tiny closet of a tasting room- there were two people already in there finishing up their tasting. My son and I stood back and waited till they were done their purchases and happily stepped up to the bar for tastings. They have rum (naturally), vodka, gin, whiskey & cellos. I liked several of their spirits and bought their whiskey and their lemon-cello. The whiskey was smooth, just my taste. If I didn't have 2 orange cellos at home, I would have bought the orange! And I did enjoy the rums and vodkas. Some bottle purchases give a kickback to local non-profits too. I can't wait until their new tasting room opens! They are still a baby in the business and I am excited to see them grow! Thanks to the Florida Distillery Tour for cluing me in on this budding business!

Great local spot on King street. Friendly service and great drinks. The bartender was really friendly and able to make whatever kind of drink you want!

We were there yesterday for the first time and it is fantastic. I think it's the best distillery in St Augustine. Susan is awesome and will take care of you. I'm about to make a spicy old fashioned with their dragon's kiss whiskey. The gin is also wonderful. I did not have a bad tasting of any of their alcohol. We ended up buying five bottles.

spent a wonderful couple of hours on a rainy St Augustine afternoon with Susan!! Amazing great priced unique drinks and knowledgeable fun bartender! Highly recommend
