If I'm hot for teacher, I'm blazing for Professor Panini. I was lucky enough to try this truck at Aardwolf tonight, and much to my surprise -- I was impressed!The Buffalo Chicken Panini w/ a side of Mac n' Cheese was da bomb. First off, the texture of the bread is much different than your traditionally prepared panini. It's rather soft and topped with Parmesean cheese. Strangely delicious! The Mac n' cheese was excellent. Really great flavors all around.For $10, my appetite was satisfied. The special of the day was a Cuban and unfortunately they were sold out. The owner said the pork cooks for 10 hours -- I can't wait to place my paws around that sammie! Very pleased with my first visit.

As a die hard chicken tenders aficionado, I was eagerly anticipating my "small" 3 piece chicken tenders combo meal with BBQ sauce on the side (vice tossed) and swap out of fries for grilled asparagus order! Well The professor delivered! The chicken tenders portions were huge - each tender was 6" x almost 2"...cooked nicely in a medium thick batter and served piping hot! The kind lady who took my order gave me my tenders box first and asked me to wait for my asparagus still on the grill (only mere minutes and so worth the wait because the asparagus was delish and healthy too). When I opened my tenders box, I discovered fries - glad they were included so I could try a few (a bunch). The fries were perfectly made - not too crispy and just lightly fried like I like 'em (so that you can still sink your teeth into that soft inside potato) and tossed in a flavorful light Cajun spice.The Professor is on my "food truck" repeat visitors list. It's panini time next time!

I have to start off by saying this is one of the better food trucks in Jacksonville. Both the quality and quantity of food are great. We have two food trucks at our office everyday so I've had the chance to try a lot of them.I got the chicken panini with Mac and Cheese on the sandwich. This panini also has extra cheese on it. Since I'm a cheese lover this was perfect for me. I also had their house fries which have a parmesan seasoning on them. I asked for them extra crisp and they turned out nice and crisp just like I wanted.The prices are in line with other food trucks. Average price for a sandwich is $8 and a side is $4 (choice of fries, Mac & cheese or Asparagus).Other who work with me love this truck. The one thing they do mention is that sometime the sandwiches come with a lot of sauce. Be sure to let them know if you like it lighter.I'm actually looking forward to the next time they are here.

This review has been a long-time coming, but finally feels appropriate to write. This truck visited my place of work yesterday and after talking to the staff, I felt the need to share my excellent experience. First thing's first, the paninis are the perfect combination of crispy and soft, and based on my few experiences, they really have put thought into what flavor combinations work best. The two newest flavors (a pork/slaw and chicken parmesan) reflect this philosophy as well, and I can't wait to try both! The owner wakes up at 5 a.m. and makes the mac and cheese from scratch every. single. day. from the homemade roux to the list of cheeses included, it's clear in her description that this recipe is made with love. And it comes across in the flavor. The portions here are also large, which means you can share a combo meal (one panini, one side, and a drink) with someone, effectively giving you a delicious and rich lunch for $6. The only comment I have to make in the negative is that my panini was a little greasy and I had to eat it with a knife and fork. I didn't mind, but generally prefer to eat my sandwiches as a hand-food :)

Discovered this food truck parked behind the Avmed building on Riverplace Blvd on Wednesdays purely by accident. The crew inside this tiny food truck were fun and in a great mood for being out in the cold with no customers. I don't think many people know they are there every wednesday as the crew told me while they started me on a punch card for return visits. All in, it took about 5 minutes to get my order after I had made my decision with numerous recommendations from the crew.I ordered the Brilliant Buffalo Chicken Panini (Chicken breast chunks with peppers, Franks hot sauce and ranch dressing with a slice of american cheese). They gave me fair warning that it was messy and included extra napkins so I wouldn't ruin my desk with my eating. The panini was made with half of a deep pita that had been sliced, filled with ingredients, then grilled to crispy soft goodness. They set it on a bed of lettuce leaf and added a touch of parmesan cheese on top. My only complaint is that I could have used a little less ranch and a little bit more hot sauce - possibly they should offer it on the side. The taste though was heaven! I debated between the mac&cheese, the broccoli & cheese soup or the asparagus and finally settled on the asparagus after viewing the pictures on yelp. The asparagus themselves though were the right call as they were perfectly grilled with a touch of seasoning and served with more of the parmesan cheese sprinkled liberally on top. You can tell that the chef loves asparagus as much as I do as they were just right with none of the horrible white ends full of too much fiber and also not overcooked to limp noodle status.Final verdict? The frequent buyer card has earned a spot on my desk so I can be back every Wednesday - I think I will try the silicon valley panini next!

I paid $8.00 for a small cup of burnt bread and tomato stuff? Gave them a $1.00 tip as they looked like they needed it. For another $4.00 ($12.00 total) I could get a bottle of water and a handful of mac n cheese. No thanks. I noticed the line was very short and I guess the word is out on the Southbank.No amount of 5 star reviews are going to save this truck. Check out the competition.

So, full disclosure, I'm a sucker for sandwiches. I stumbled on Professor Panini downtown at Riverplace Tower and decided to try it. I had the Chicken Parm Panini - it was absolutely incredible!!! The chicken is hand breaded and fried right in front of you, the provolone cheese was melted and the marinara tasted homemade. It I wasn't holding it like a sandwich, I would've thought i was at a nice Italian restaurant. I would highly recommend Professor Panini to anyone who loves a great sandwich!

Took a chance on this as my wife has my vehicle and I was stuck in the office with nowhere to eat lunch. The panini I chose the "Silicon Valley", I expected California fresh and what I got was salty and greasy. They used way too much pesto (a cheap, restaurant supply store grade of it), and the whole bottom of the takeout box was sopping in olive oil. Also, American cheese is a poor substitute for provolone or another cheese would have been far more appropriate.

The best panini I've had yet, It included avocado, chicken, two different cheeses, and pesto! And the asparagus was cooked to perfection. I wouldn't mind going to the truck for the asparagus alone. It's amazing. The service was fast and the owner is so friendly! I definitely plan on going back again.
