***4.5 STARS***Last weekend I was tasked to pick up spareribs for employee meal. I've done this multiple times previously. No big deal. Wrong. After I secured free street parking on a Sunday morning, I went to my go to place for meats and was caught off guard when the staff told me they were sold out on what I asked for. They did have local spareribs but with our previous experience we found these spareribs to have excess bones and the meat quality not as good. I found myself going to other back up places only to find out the sparerib prices are 17% to 30% higher. I was tasked to pick up over 5 lbs so to keep my cost low, I found myself walking over to Oahu Market. I stumbled across Sing Hing Market (SHM), a meat stall at the corner of Kekaulike and N King Street. They had a large display of assorted pork cuts, along with Chinese roast pork and char siu meats. Immediately my eyes landed on the spareribs I was looking for and was delighted when the staff quoted me a price that was 16% cheaper than what I usually pay for at my go to place. I asked if they had 5 lbs plus as I had to feed a crew and the next thing I witnessed the male staff brought a whole bunch out and placed it on a scale that totaled over 5lbs. ***happy dance***I advised the staff that I was making steamed spareribs. The next thing I witnessed, one of the male staff ran the sparerib slabs through the meat saw. It was then transported to the counter where the female staff chopped the spareribs into bite sized pieces for steaming. The staff had this process well set up where my waiting time was minimal. I also appreciated this stall's display as the layout of the meats were sorted in a way where it was convenient for the consumer to see what's available. Upon payment, I asked the staff for a receipt as I was getting reimbursed. I was impressed the female staff wrote "pork" along with the date and total amount paid.One of our employees marinated the pork and steamed it for lunch that day where it made a delicious meal. Several other staff also commented that the spareribs were delicious but the quality wasn't as good as where usually get them from. I personally felt the same way, too. Overall, SHM was a great find and came through when my go to place didn't have what I wanted. I'm willing to give them another chance as the sparerib price was considerably cheaper. Perhaps I didn't get the best quality but worthy for another try in my books.

Happy New Year!Yes this was visit for the up coming new year as the lunar dates lined up so nice this year that I actually got to enjoy both days off for both the eve and New Year Day. As some do take the time to close on these days I decided to give downtown a glance as parking on Sundays are free so walking is not an issue especially when street/metered parking is free.With that it's been years since I've been to Oahu Market and since favorite businesses has closed the choice dwindle down for me and decided to give Sing Hing Market a try as it's been awhile and the prices are quite reasonable.Basically a meat market they do dedicate a corner to the beloved meats we all love like roast pork, char siu, roast duck, and chicken. I decided to ask mom what she's craving and it was chicken...okay though they sell it whole at $12 which is a great deal and yes they can chop it up for you which is always a nice and handy service to have.The wonderful smell of chicken just filled my car and I couldn't wait to get home and get started...yup no pics lol! We all know basically what it looks like but we later realize it wasn't shoyu chicken but char siu as it was quite salty...after a few bites it was just too salty for us sadly. We still had a great dinner and enjoyed not cooking and just relaxing...cheers!Thank you!

Preparing for the Lunar New Year in Honolulu, Hawaii...My mom was planning our "Chinese New Year" dinner aloud and said that my brother-in-law doesn't eat duck. I replied, "What about your four daughters and your grandson?" (Implying that my brother-in-law is just one person)I was thinking, "Dinner is only two nights away... It's kind of late in the game... Come on, mom... Let's have duck!"So, using Jedi mind games, we went on the hunt for a roasted duck. (Hee hee! I let her decide to make duck for dinner!)Mom usually cooks the duck on a bed of barley, chopped chestnuts, ginko nuts, diced bamboo shoots, slices water chestnuts, etc. It's not really a stuffed duck, but that's what she calls it. She places everything in an electric wok and kind of steams it - which makes the duck meat fall off the bone! Mmm!By the time she decided to prepare this dish, most of the meat vendors in Honolulu Chinatown were sold out. It was a Sunday afternoon when street parking was free. She wanted to go after church, so it was a warm afternoon when we searched the various vendors up and down the streets.She had a great idea to go to Oahu Market where there are many small businesses. It's usually crowded, but Shing Hing Market wasn't that bad. It's the first stall that we approached on the corner of King and Kekaulike Streets. Thank goodness the lone duck hanging in the window looked healthy enough to pass mom's inspection. (If it was scrawny, we'd continue combing through the many vendors at the market... Uhg!)Mom went to the cashier and asked (in English) for the duck. They efficiently packed it in a container and a plastic bag and we were on our way! Thank goodness!I'm looking forward to dinner on Tuesday, 2-1-22! We were marketing in the O'ahu Market when we came across Sing Hing Market which sells Chinese roasted (BBQ) meats and poultry. They have a separate section that sells freshly butchered pork and chicken. Yes, they've been here for years but today was our first time to make a purchase from them. Just because they're located in Chinatown, don't let that intimidate you as the workers are bi-lingual (Chinese and English). The fresh and raw meat & poultry are properly stored in refrigerated cases and are separate from the ready-to-eat roasted products. During this health crisis, everyone who was standing in line did adhere to the 6' social distancing and wore face coverings. The workers behind the counter were also using P.P.E. but were crowded in this smallish shop in which social distancing is nearly impossible. We also appreciate the fact that they were open to the public and had fresh cut meat on hand. While in line, the female worker asked each person in line what they wanted to order as she managed to split the line between those who wanted fresh-cut meat or poultry from those who wanted the roasted, ready-to-eat products. That line management assured us that there wouldn't be cross-contamination between the uncooked and Chinese BBQ products. We waited in line for fresh island pork where we waited no longer than 5 minutes to place our order. The female worker who helped us with our order was friendly and efficient. She quickly weighed our order, packaged it, and removed her gloves when we handed her our cash payment. I'm looking forward to using the fresh pork this week to make a couple of my husband's favorite Chinese dishes that he's been bugging me to make.

Char siu house was closed and I needed some meat for my look Funn (see my review of Ying Leong). This place is in the Oahu market - from Ying Leong just head makai and cross king street. The market is your typical Chinatown market - strong smell of fish, puddles everywhere (seriously watch where you step). What the merchants don't spend in maintaining a nice area they give to you in low prices. The place was pretty busy - with glistening char siu medallions hanging in the window, along with a butcher case with all the pig parts you could imagine. There was also a wrapped up while roast pig just outside the shop. Char siu here is around 9 bucks a pound. The friendly butcher grabbed a piece and happily chopped it up. It was good - juicy with crunchy charred ends. While I still prefer char siu house this place is a decent alternative

I would recommend this place. I tired the pork belly it was very good and fatty. Yet very crispy! I took a picture so you can see what I saw, to bad you can't taste it because it was fantastic! Take a trip to China town next time your in town!

This is where I go for my fresh pork, especially pork belly to make homemade roast pork.All you need to do is:1) Tell them what you want.2) If you're not sure what you want, tell them what you're making.3) Tell them how much you want.It's a straight forward pork butcher so if you need specific cuts for something, this is the place. It might gross you out, but this is as Chinese butcher as you can get.People also buy pork skin here by the bags so if you want to make some homemade chicharon, this is your source. They also sell bones and scrap meat for your specific soup needs.

My first time shopping at a Chinese butcher shop because my mom wanted fresh meats to prepare home-cooked postpartum confinement meals after I give birth. The place is nothing to look at, but they have a nice selection of fresh meats at pretty decent prices. And they chop up the meat very nicely, just the way you ask. Their service, while it's not enthusiastic, is friendly and thorough. You can also get your standard roasted meats ~ char siu and roast pork.

Very tasty char siu maybe better than Fong's. I can't wait try the roast park. I wish they would use a container instead of wrapping paper for the meat. You can order a complete roast baby pig for special events.Went back to Fong's Meat Market and now I am convinced that Fong's is better for char siu and roast pork.
