Pizza in my opinion is something of a simple art and less of a fussy creation. Really good pizza doesn't need truffle oil or kobe beef, because it can lean on its simple quality of ingredients to pull in consumers, instead of wow them with trendy toppings. In my life, I have come across a handful of such standouts in crazy places such as France and Connecticut, and I can now confidently add to that list Hawaii. My husband and I found Fire Dance Pizza at our local farmers market on Sundays in Kailua, when the smell of sourdough wafted through the air around some fresh poi and produce. We bought a pizza, thinking nothing of it, and sat down to eat. Like the movie Ratatouille, each ingredient was like a musical instrument and the bites were like a song. This was not just pizza, this was something magical.The owners and operators start with a naturally fermented yeast dough, throw it into a super hot brick oven, and top its chewy goodness with freshly blistered cherry tomatoes, evoo, crushed garlic, and mozzarella, or goat cheese, and other simple but delicious items. Don't be thinking you're going to get stuffed crust, ranch dip, and canned olives, all these ingredients are fresh.After a few weekends of coming here every Sunday for what we have deemed our "breakfast pizza," we have made our decision that this is the perfect way to routinely celebrate the weekend. Prices are fair, between $12-16 per pizza, which is enough for the two of us to split, or one very hungry surfer. Talks of opening up a brick and mortar restaurant are in the works, and when that happens, you know we'll be there. With pizza like this available, you won't see me getting excited about pizza anywhere else on the island.

I found their stand while visiting the farmer's market at Waimea Valley. I got the Margherita Pizza and was really excited as I LOVE pizza. The taste was amazing and unlike any pizza I've had before. I'm not sure what it was (the seasoning, maybe?) but I loved it!The crust was a bit hard and burnt in some places, but didn't detract much from the overall quality of the pizza. It's definitely something you need to try at least once!

This pizza is amazing. It was about a 20 minute wait, but it was worth it. The sauce tasted so fresh, great mozzarella, and the crust...it was soft and chewy and delicious. They say the dough is "naturally fermented". Whatever it is, it's awesome.The girl taking orders was really nice also. Highly recommend.

We have been searching for authentic Neapolitan pizza on this island for years. Thank goodness for Firedance pizza! It is absolutely the best pizza on island and possibly the best I have ever had ( yes, including Italy). Shannon is a maestro with the pizza oven and his passion for this product shows in every bite! He uses organic yeast and starts preparing his dough at 1 AM, so it ferments to perfection by the time the market rolls around. His care and meticulousness as a previous baker shows in his dough, which is the perfect texture and fluffiness every time!This place is legit and prices are reasonable considering that they only use top quality ingredients. (~$12-$15).I would highly recommend this place. I really hope they open a restaurant soon so I can eat their pizza more frequently!

Delicious. I think we came on an off day because the pizza today was dripping in oil...but it still tasted great! Thin crust delicious and fresh. The best thing at Kailua Farmers' Market for sure! Very similar pizza to prima Kailua, if not better, on a better day. Under $15 for a margarita pizza. Yummy Sundays!

This is REAL pizza. This is LEGIT pizza. There is NOTHING like it. It's fresh. You want to inhale it. I have eaten a whole pizza by myself. It is that good. Kailua Sunday Farmer's Market is where it's at. Wash it down with a Wicked Slushie.
