When you think of a cradle, most of us will probably think of a baby cradle. But when you hear of "Chicken Cradle" what does one think of? Baby chickens? Eggs? I gave this some thought and have come to this conclusion: Don't put too much thought into this Yeeps...I recall Chicken Cradle back in the 70's. I'm no spring chicken folks - - you can do the math. I recall my paternal grandmother and father coming here to purchase whole chickens whenever we had BAI SUN (拝神 literal Chinese meaning of offering to the Gods) ceremony - - ancestors' birthday, Chinese holiday and anniversary. As a small kid I was dragged along for Chinatown shopping so I could help carry and perhaps teach me rituals. It's odd that I don't recall my father or grandmother taking any of my sisters though. Located in Oahu Market (corner of King Street and Kekaulike Street), Chicken Cradle offers chickens (no surprise here folks) in several forms but can be classified as either farm raised plump chickens or free-range chickens. I personally want to chow down on meat but in the Chinese community many prefer free-range chickens (走地雞), which can be determined by its much smaller size. How else can one tell the difference? When cooked free range chicken has a yellow skin and the cartilage and bones are hard where it's difficult to chew on. I'll admit the meat on the free range chicken tastes better as it has a stronger and refined chicken flavor but it's like eating a chicken that has been dieting. :pRecently I had to purchase a whole chicken with its head and feet still attached for a business BAI SUN and we had a debate. The elderly staff wanted free-range because it tastes better and the business savvy younger ones objected because not only we wanted to eat chunks of meat, it'd be such a pity to offer Gods and ancestors a "skinny" chicken. We want the business to continue its success so I chose a bird over 5 pounds. I'll be darned offeringh the Gods a "skinny" chicken!!!At Chicken Cradle they also sell headless and legless chicken (is there such a word?), chicken parts as well as chicken hearts, liver and gizzards. In my younger days Chicken Cradle was owned by a Japanese couple and has now changed hands as the business is now run by Vietnamese.Out of convenience many of you buy your chickens at the supermarket but if you're looking for fresh chicken with all body parts attached come to Chicken Cradle. So fresh and the finished product was so tasty.FACTS: Today is Chinese New Year and it's the Year of the Rooster, which happens to be my year. Located inside Oahu market place, I have been shopping here for at least 35 years! Same guy, he has all the chickens you need. He just chop chop, remove the skin, boom, you get your chicken! He must have chop millions of chicken in his life! The quality of his chicken is always good, go early, if you go too late, they will sold out. The owner is always very nice and friendly to me. Recommended.

My go to place for liver and hearts. Air freight from California. Quality is always consistent pieces are always plump and vibrant in color. This fella specializes in poultry and Mascovy duck. I've tasted this type of duck prepared in a soup unlike the normal roast duck from Chinese restaurants and Chinatown vendors. It's tasty! Concering is that sanitation should be practiced. Raw product are handled with the same hand that touches everything including the outer part of the plastic bag that he hands to customers.
