Last visited before its most recent renovation, even then considered one of Sin City's most gorgeous Restaurants, PRIME Steakhouse at Bellagio has recently been under the guidance of Chef Sean Griffin whose work at Jean Georges Steakhouse proved reason enough to make reservations at the venerable institution for date night.Now with added mirrors, chandeliers and new serviceware it was at prime windowside two-top that guests were seated, the Bellagio fountains dancing at intervals while a mix of Rat Pack and old Hip Hop chimed quietly overhead.Served by a team of at least four, Sommelier John Burke still present, it was in four courses that two-hours were spent indulging; the Ingredient sourcing, portions, and preparations certainly justifying prices that seem high even by Vegas standards.Far more classic than SW or Ramsay and certainly more elegant than Delmonico or CUT, the evening began with bubbles alongside a basket of Bread preceding a trio of Appetizers from which sugar-crusted Duck Liver stood out thanks to Mangoes while thinly-sliced Beef and a vibrant Fruit Salad were also very good.No doubt a place with more than just Beef to offer, though the options for Steaks are plentiful from domestic Ribeye to Japanese A5, it was on the lady's request that a Seafood Tower crowned by Sashimi and Caviar also proceeded Medium-rare Beef sliced tableside and delicate Sea Bass in Citrus with fresh Herbs.Also a Cheese Souffle, simultaneously light yet decadent, Sides are simple yet perfectly executed whether it be gooey Mac n' Cheese, tempura Squash or Crucifers including Broccoli and Cauliflower each dressed to impress.Upping the ante for Dessert, almost entirely new, PRIME's Ice Cream Pie remains alongside slices including Black Forest Cake and Lemon Pie with Meringue piled high that still have trouble keeping pace with baked-to-order Cookies.

I came here in July to celebrate my nephew's 21st birthday. We were all looking forward to a good meal.First, shorts are not allowed for men. We were not aware of this and they provided pants. I take exception to this rule when a man behind us was seated in Capri joggers. Seems ridiculous to me in 125 degree weather.After pants were corrected we were seated quickly in a beautiful dining room. Our server was attentive, knowledgeable and just enough snark to make him an asset to dinner. I asked him about gluten free and he told me he would guide me through the menu.I will note they brought me a separate basket of gf bread. This was a nice gesture, but if you have ever had un toasted gluten free bread, you know it was gross. I don't hold that against them though.For my main I had the ribeye Medium and the au gratin potatoes. I originally didn't think I could have the potatoes but the waiter assured me they were fine. I'm glad they were, they were delicious. The ribeye on the other hand was not. To me, you get a ribeye for the taste and the marbled fat. Otherwise, why bother? This steak was void of any season and not marbled....at all. Over 1/3 of the steak was inedible fat. Disappointing for this caliber of a steak restaurant. No one else noted that their food was phenominal and I didn't say anything because my brother was treating everyone and I didn't want to disappoint him. His bill was around $800 for 4 people.The server comped a dessert and a tequila shot for my nephew. Said nephew took the shot like a baby and the waiter ribbed him appropriately. He is the reason for the second star.The Spanish speaking bus boys enjoyed a conversation about me within ear shot, clearly not knowing I understood what they were saying. Although I'm not fluent, I know it was something they wouldn't want said about their wife or daughters and wildly inappropriate to have on a dining room floor if anywhere. To me, a four dollar sign restaurant should provide an exceptional experience and product. Unfortunately, Prime fell extremely short for me and I don't anticipate visiting again.

I had called ahead of time to see if I could order for takeout. The guy who answered told me I couldn't because it was s fancy restaurant. Good thing I went there when they opened anyway. This place is so elegant and fancy looking upon entering. I'm sure I was super under dressed to be ordering from here, but I placed my order at the bar for take-out. . The gentleman who took my order was super nice and told me he's been working here since day 1 when they opened in 1998. He told me this is one of 2 restaurants at the Bellagio that are downstairs. The view if you were dining here had breathtaking views.I ordered: 1. Bacon wrapped shrimp - Perfect appetizer and had a kick. Nice way to start a meal. 2. Bone- in ribeye (medium) - Maybe since I got it to go, I didn't get the bone? Either way, it was perfectly seasoned and cooked. The steak was tender and juicy. You didn't need a knife. The steak itself wasn't too fatty either. 3. Cold water lobster tail - MP, they don't lie, lol. The lobster itself was a decent size and tasted delicious. 4. Potatoes au gratin - The bartender recommended this, and it doesn't disappoint. It was cheesy, and the crust on top was deeelicious. 5. Bread - I recommend requesting this when ordering take-out. I liked the ciabatta the best. Everything we tried here was delicious. I highly recommend it. I can't wait to come back soon.

This beautiful steak house located inside the Bellagio hotel. Our reservation is at 8:45pm we show up 10 mins early and didn't got seated till 9pm. First off we walked up to the hostesses and all four ladies grouping together without acknowledging. I should minus a star but instead this is a feedback so the restaurant management team looking to it and improving in the near future. The food we ordered tasted really good. Our server and his team awesome and attentive on us most of the time. The view of the Bellagio fountain spectacular with the perfect music sound in the background.

BRING BACK THE BREAD ROLLS from 2023 please! The new assorted bread is underwhelming. The pretzel one is too salty, the plain is very hard, & the cheese bread is - cheesy. I may sound ridiculous but the old bread was life changing. The filet is soooo tender & good. I barely have to chew. The mashed potatoes is a good amount - can be shared with 2-3 people and it's delicious. The brussel sprouts are so soft and flavorful.No free soft drink refills, they will charge you for each one. If it's your birthday or anniversary, they'll give you a complimentary dessert but it's super tiny, a sampler size. Overall, I'd come back from the steak & sides. Make a reservation, it'll make your life easier.

Prime has probably the best view in Vegas. We came really early so were able to get a table right by the fountains. That view alone is worth the price. Which is considerable. The bacon wrapped shrimp app wasn't necessary and wasn't our favorite. I'd skip this next time. The table bread is delicious. And you simply must get a glass of Champagne while enjoying that view. This is starting to feel very special indeed!We had the filet with crab legs - a special offering that evening I believe. The steak was absolutely melt in your mouth - and the sauce alongside was incredible. Crab legs sublime. Potato gratin was amazing. You are feeling like royalty by this point in the meal. It helps that the service is so professional and on point.This was one of the most expensive meals we've ever had in Las Vegas. But also one of the best. So that tracks.

My girlfriends and me had dinner last night, celebrating Friendsgiving. One good thing I can say is that the front desk/host was accommodating since we were caught in hockey traffic on the way over. Everything else was horrible and subpar - ESPECIALLY the service from John. I only know his name because of the host.He handed us menus, walked away, didn't make any small talk, seemed like he hated his job and his life. Through out the evening we were met with a cold, stoic, unfriendly server. If you hate your job, find a new one. The food: we ordered the ribeye to share. Asked for medium and received medium rare. We didn't want to send it back, but when mentioned to John that it wasn't prepared correctly and underdone, he just stared at me blankly. No apology, nothing. The truffle mashed potatoes and pistachio crusted broccoli were really good. The stars of the evening though - all their sauces. This saved the underdone steak for my friends (I actually prefer it medium rare!)Bread service was good. I had the onion soup as an appetizer and it wasn't bad or spectacular. It's a classic and I enjoyed it. The chocolate cake dessert was delicious, albeit it outrageously small for a $24 "cake."The bottle of wine we ordered cost more than our steak, luckily it was also delicious. If you're expecting the service that Vegas is known for, do NOT come here. There are plenty of other steak houses with similar price ranges that are farrrrrrrrr better in service and food than Prime.

I visited 2 years ago and didn't have a pleasant experience. However, I went back because my husband wanted to try for himself. It was his birthday. The service was top tier this time. Be prepared to use your flashlight via phone because of the dim lights. The food was a little pricier than before. Some things were not on menu, we were advised that they change menu 4x per year. We had Ceaser Salad, Filet Steak, Broccoli, glass of Resiling and lemon & honey tea. The manager came out and greeted us and apologized from prior encounter and paid for our drinks & desserts. The steak absolutely delicious and it melted in mouth while chewing. My husband said best steak he has had, and he's a steak guy. He's eating at plenty of high end restaurants and he said the best steak was at Prime. He's been bragging about it. The desserts were delicious also.

My wife and I had a 4 hour delay and had to modify our original reservation. We called Prime and asked if they minded that we would be coming with suitcases in tow. They were more than willing to accommodate our disheveled selves, but I digress. We both ordered the Japanese A-5 filet medium rare and they were cooked to perfection. Each bite was more succulent than the last and the meat truly was tender enough to be cut with a butter knife. My only regret is that now when I go back home to West Texas I will sadly have to live off of gross American Wagyu steaks instead of my fancy Japanese steak.
