So I'm usually skeptical when I see a newer place with nothing but 5 star reviews. The last time I came here, it was a different restaurant, and I was turned away because I didn't have a reservation on a Tuesday night. That unfairly put this restaurant, that had nothing to do with that encounter, in a negative light before I even walked through the door. I made sure to place a reservation just in case, but when I arrived, the difference was clear. The staff was welcoming and sat us right away. We didn't even mention the reservation and they made it obvious they were happy to have us as their customers. This was on a Friday night, mind you, so a rush was probably coming. The waiter was very kind and easy going, and explained the menu thoroughly. The restaurant is small but perfect for dates. For starters we got the sake flight and beef tataki. They brought extra sauces to let us try with the tataki and it definitely makes us want to return to try them with the traditional hot pot. The sake was a good blend of 3 different types, tataki was cooked perfect. Each sauce was good and the one it came with was nice as well.We were in the mood for sukiyaki, and luckily they serve it here. It is exceptional. The broth is a perfect blend of sweet and savory, it comes with vegetables, noodles, and thinly sliced ribeye. They assist in heating up the broth and advise what to cook and when. It is a perfect dish to share for two people.During our meal our waiter brought another sake to sample, it paired well with our sukiyaki. We were sad to pass on dessert as my wife had some work done on her teeth so we were limited to certain textures. This is a wonderful restaurant that we will be returning to regularly. Hope to bring my mom here as she loves sukiyaki and it is the best here.

Sadly, I'm not as caught up on my review queue as I should be, but this place is cutting the line, and getting the VIP treatment. If I could rate it 6, 7, or 8 stars out of 5, I would.I don't even know where to start. The beautiful interior that's not overdone, just classy with an excellent, slower Japanese pop-jazz playlist? That's a great start. Service staff were also very attentive, but not overbearing. And a wonderful gentleman who I'm assuming is the owner was personally checking on tables and even saw customers out and thanked them. You just don't see that anymore.Ah yes, the food. My god, the food. The best meats I've had since I've been in Vegas for the last couple weeks, bar none. It's not even close, and this is after steak houses, hot pot, and sushi joints. The crab is actually crab, not krab. It was perfectly fresh and sweet, as were the scallops. The yellowtail also left me floored. Absolutely ruined any other form of cooked tuna for me.And the beef was so good. Similarly fresh, excellent beefy taste, and paired amazingly with the selection of sauces. This place is not just a place to eat, it's an entire experience. And only $60~ a person for this experience just feels like highway robbery, as you can pay much more for steakhouses and have worse food and a subpar time.Everything was perfect. I cannot think of a single thing that could have been better.I keep a personal list of best places to eat just to remember, and this found its way to the top instantly. Please go give it a try guys, gals and non-binary pals. You won't regret it.(Edited to fix wording regarding pricing, as initial draft came off negate.)

It's a new-ish restaurant (replacing a shabu shabu that used to be in the same spot), and the food is amazingly delicious. This was our first time having shabu shabu and the host was so sweet, helpful, & kind. We ordered the Ichi Ban and San Ban with some yellowtail on the side. We got udon noodles and rice, but would probably do just rice in the future. The house-made ponzu was so fresh and flavorful and the sesame sauce is so so tasty! It is small and the atmosphere is intimate and friendly. As we were seated another group was finishing up and the sweetest elderly man couldn't help himself and rave about the food to us. When he heard that this was our first time there he told us that we were in for a treat! Everything was delicious including the mango dessert!

Intimate interior and great hospitality. It felt a lot like Japan where you'd walk into a restaurant off the street and be greeted by the most welcoming staff while Japanese hip hop played on the speakersWe ordered the San Ban shabu shabu which came with highly marbled American wagyu, a side of vegetables, and an assortment of seasonings and dips. The made from scratch ponzu (the yuzu was a really nice touch) and sesame sauce were both amazingThe owner has two Izakaya restaurants located in Japan and Hawaii going by the same name while this third edition is their take on shabu.Such a delicious and wonderful meal. Riki was great to chat with.

I've been to Fujiyama twice now and both times were fantastic! The A5 has beautiful marbling and is so soft. My favorite menu item by far is the cold tofu with spicy pork miso. However, this time I tried the ahi poke hand roll and the beef tataki. Both were fresh and made well! When it comes to shabu shabu, I always opt for the さんばん. This, for me, fits my palette and balances well with the house made sesame and ponzu. The dessert platter is SO GOOD! Please do yourself a favor and try out their desert. The matcha cheesecake is the best I've had in the city. Riki and Bella provided absolutely amazing service! They were kind, prompt, and brought out my food at a comfortable pace. I enjoy their humor and dedication to their craft. Thank you so much for everything, Riki and Bella. I appreciate you both so much!

Just a few words: Superb restaurant. This restaurant is in the Green Valley Ranch district and probably one of the only hot pot type of place in the area. Considering it was cold I had a hankering for some hot pot. I'm from SoCal so hot pot and Shabu Shabu is everywhere so my expectation is something akin to what I've experienced. The food high is high quality, but the portions are smaller. The meat portion for lunch is 4oz and dinner is 6oz, but I reckon the transportation cost is a bit much to ship to Vegas. I'm used to a lot of veggies too, like tons of Napa cabbage. However, there was refill on rice when some SoCal shops have started charging for an extra bowl. Regardless, I got the Ribeye and it was, as aforementioned, high quality. While I am comparing portions, the lunch menu was a good amount still to eat and delicious.Service is absolutely top notch. There were five people on a Sunday afternoon when it opened and the one server was all over it. You could tell he cared about the service for everyone in the store. He took time to talk to people, but then rushed in the back to procure the food. He kept checking if everyone was good. Ambiance is relaxed and cool. Example - they were playing Japanese R&B and jazz hip hop. Think Maliya's Dancing in the Rain, which did play while I dined. This is the one aesthetic - a soulful urban Japanese feel, I do appreciate a lot and tend to gravitate towards. I will be back to dine here. One of my new favorite spots in Henderson.

Amazing! 10 stars!!We live local and often go out Friday night for dinner. The usual places around the neighborhood. This time we decided to try Fujiyama. Wow! The service from start to end was the best I've ever had! And I travel full time for work! They even held the door open for us when we left and thanked us for the business. Who does this anymore?!!The food: Very fresh, tasty, all sauces and spices made right there!Clean: Everything spotless and clean....met my very high standards!Another observation......we really love the "hot pot" way of cooking dinner at your table. Instead of having plates of dumped in front of you and shoveling food nonstop this method has you interacting with the process and really enjoying the flavors. Our new "go to" for sure. You will not be disappointed!

The food is absolutely incredible and the staff is so nice! We had Bella as our server and Ricki also stopped by our table several times to make sure everything was to our liking. The restaurant itself is small but we came early enough and got seated right away. We ordered 1 ichi ban and 1 san ban, and the meat quality is OUT of this world! My husband and I also loved the sesame sauce. The Musubi was unique and really good too! We are definitely coming back for more!

This review is based on a single visit on 10/20/24.This restaurant is located in a non-descript strip mall. It seemed pretty dead when my party of 3 arrived, but we were warmly greeted by two employees and promptly seated. We asked why the restaurant had "Texas" in the name, and if there was any special significance to it... no, it was simply because the owner liked the idea of Texas being super American. We ordered two plates of Wagyu - one A5 and another American, along with an assortment of starters. The following are some of the highlights:- Kakuni: this was described as a simmered pork, which it was, but specifically, it was a super-tender and flavorful piece of pork belly. This was by far our favorite appetizer - so much so, we ordered another!- Rolled Japanese Omelette: I really loved this one. It was also flavorful and perfectly executed.- the Beef: Both were great. Each order came with a side of veggies, as well as a choice of rice or udon. We did one of each, but in retrospect, I would do the rice only, because we found it a better vehicle of sopping up the sauces. Both orders of Wagyu were fantastic, but I actually preferred the American cut, which was less fatty and decadent but absolutely delicious.Things were still pretty quiet when we left; I think there were only 3 other parties there in addition to ours. I hope this place gets the business it deserves, because it is honestly really great. I'm already looking forward to a repeat visit.

Great service!Great food! Authentic Ambiance!10/10 Experience. Our waiter was extremely nice. We came during lunch time and the menu was thoroughly explained to us, each item was explained from where it came from and how to cook it. Also, there were tapas only available at dinner time, but the chef made an exception to make it for us during lunch. Like I said, great customer service.
