Molecular gastronomy tends to prioritize technique over flavor. And this is very much a restaurant that specializes in technique. It doesn't quite reach the highs of Alinea (the preeminent molecular gastronomy restaurant in Chicago) but it absolutely is a credit to its craft.Every dish surprises, and while not every dish necessarily impresses (I could have done with the pizza, which probably was lacking because of my lactose intolerance). But when the chef is inspired, he creates some outstanding work, like a foie gras toast (I'd pay quite a bit for another taste), a crab (with a lot more going on than it appears), and my favorite dish, a foie gras empanada (but instead of flour, cotton candy).It's a surprise to eat here, and for someone with as much food experience as me, a surprise is worth the price tag.Some tips: Don't arrive early, because someone is always going to be "right on time" and they won't start until everyone arrives. Pee before, because part of the meal is the spectacle of watching it prepared in front of you. And leave your expectations at the door.

Make sure you book several months ahead as they are very much in demand. Only 8 seats & 2 dinner seatings 5xs a week. Sommelier was fantastic & so are the chefs. Can't recommend this place enough.

é by José Andrés has such a long waitlist but we were so lucky to spot when several guests had an emergency cancellation. We are fans of molecular gastronomy after visiting Alinea in Chicago about 10 years ago due to all of the surprising flavors and textures. We didn't know what kind of dishes to expect but é serves 21 items that come at a steady pace with impeccable service. You can watch the chefs prepare every dish in front of you in a very hospitable environment where they welcome questions and curiosity. The entire staff will answer anything from preparation method, decorations, or even thoughts on their head chef. The area only seats 9 customers a seating so you'll have time getting to know the other customers too which gives a more intimate feeling.With regard to the food, we generally liked all of them with a few items being incredible. It's such a nice change of pace from texture and flavor with each dish that it is easy to keep a hungry appetite for more.The main knocks on the restaurant are that we thought the desserts were just okay but this could be due to visiting high tea at the Waldorf Astoria the day before. We also left not feeling hungry but not full either. Secret pizza is right next door though and boy did that pizza taste great! Overall we had a good impression of the restaurant but with regard to fine dining we still feel that Alinea was better due to having more surprises and magic.

Love this place! We first heard about this "speakeasy" restaurant last year from a friend and finally got a chance to try it for a special occasion. Had so much fun interacting with all the staff, every single dish from the menu u was incredible, not only was it delicious but the best part was how creative each dish was! It's very intimate in there with a space for just 8 people.Highly recommend for a special occasion!

E by José Andrés is a fine dining that exceeds any expectations you could possibly have. I've been wanting to try this place for a while, and I was ecstatic when I was able to secure a reservation! From the moment you step through the unmarked door into this intimate, exclusive space, you're transported into a world of culinary artistry unlike any other. This is not just a meal - it's an immersive, multi-sensory experience that plays with flavors, textures, and presentations in the most innovative ways imaginable.The tasting menu was a masterclass in creativity, showcasing José Andrés' signature flair for combining traditional Spanish ingredients with unexpected twists and techniques. The deconstructed pizza to the crab, foie served in various forms, and mains like the carne y patata were all absolutely divine, making this 20+ course meal one of the best dining experiences I have ever had. Personally, standout dishes were José's taco using Iberico ham as the shell with caviar as the filling - the best taco I've ever had. The Wonderbread was incredible, and the black truffles paired with persimmon melted in my mouth. Simply incredible, and I will totally order extra of this dish next time.The ambiance is a small, intimate setting only for 8 diners, which adds to the exclusivity and excitement. While the space was a little louder than expected and might benefit from some soundproofing, it didn't detract from the overall magic of the night. The service was impeccable with more servers than guests, each dedicated to providing excellent service, paying attention to the smallest details of each dish, and engaging with each diner to make the experience memorable.I initially thought that I was going to leave completely stuffed, but I was pleasantly surprised that I didn't have to be wheelbarrowed out of there! E by José Andrés is a place where food becomes theater, and every bite is a revelation. It's worth every penny and then some. This isn't just dining; it's an unforgettable journey for any food lover. I absolutely recommend this place for a once-in-a-lifetime dining experience and look forward to my next visit. If I could give it more than 10 stars, I would. Dined here with three of my employees when we were in LV for a conference in October 2024. It was an incredible experience and I hope to return one day. The food was delicious, every course tasted very good or amazing. It was fascinating to watch the chefs do their magic and hear the explanations about the food sourcing, or them answering questions.I didn't do the wine pairing but had a few of the gin and tonics which were excellent.The service was fantastic between the sommelier, informative and friendly chefs, to the little details synchronized actions by the team (pouring all at once) and pre dining communication about food allergies.The ambiance was whimsical, quiet enough, and comfortable.Certainly a pricey dinner but overall it was well worth it!

I am finally getting around to posting this. I know I waited two months to do it and its mostly because I really WANT to give five stars, but I just can't. First, everything about this experience is first class and elegant. LOVE IT. The food tasted AMAZING. The service was outstanding. So why not five stars? I know. I do tasting menus, not all the time, but a minimum of once a year and sometimes several times a year or a week even. So, I feel pretty knowledgeable of the what to expect of the experience.The experience itself was simply phenomenal. I had the tasting and the standard pairing and chatted quite a bit with the sommelier. The team was introduced to us and getting able to watch them put the dishes together was very fun and exciting. Connecting with the other guests was fun and sharing this with a great friend for her birthday made it even more special. She has allergies and they completely accommodated that. EVERY dish was beautiful, playful, and yes, tasty. It was a wonderful evening that I won't forget.The reason I knocked off a star is because I was hungry when I left.I know, I always question people when they say that because I have never left a tasting menu NOT full before. EVER. But, I was not satisfied with what I had to eat as far as hunger goes. NOt like I left starving, but I should have been satisfied. I actually met my husband who was having dinner at Outback and ate a salad and a baked potato! And, I eat really small meals in general. I just think that if the food is SO small, you don't leave satisfied with the amount of food, something is disconnected.So FOUR stars! Really wonderful, but maybe just a small bump in the size of the "main" courses would have made it a five star experience. Regardless, I do not regret the experience, the cost or ANYTHING. I really enjoyed the evening.

Ok let me preface this by saying I've had many many fine dining and tasting menu experiences and this was easily top 3 maybe even number 1 in terms of just how amazing the experience was. The presentation and creativity was off the charts. Everything was delicious and even the cocktails were so creative. The cost was $290 which is on the higher spectrum of things but I wouldn't hesitate to recommend just cause of how special it was. Overall, I'm not sure how often I'll get to come back due to price point but this is one of the very few fine dining experiences I would want to come back to someday

This place is definitely a dinner worth trying. It is molecular gastronomy at its finest. However, would I return anytime soon? Probably not unless their menu has significantly changed. However, this place, in my opinion, is one that you do just for the overall experience and interactions, versus just for the food.The service is wonderful and they work like a well oiled machine.You get to watch the chefs create beautiful works of art and see the science that goes into their creations. The food is delicious, yes, but most wasn't anything I could crave over and over again. The one dish I loved was the wagyu beef cheek with black truffle in gnocchi. You know a piece of meat is going to be absolutely melt in your mouth when they give you only a spoon to eat with for that course, haha! Most of the other courses are a surprise and absolutely impressive in the moment, but nothing satisfying to feed your hunger or warrant another trip.This really was such a great "dinner and a show" and 10000000% worth it if you're a foodie and are fascinated by food, science, and how chefs put together the most creative dishes! If you're a bit indifferent towards those things, then I would say this experience isn't for you and you can probably get a more satisfying meal for the price point at other restaurants in Vegas. (Heck, I was hungry less than an hour later and could have gone for a slice of pizza from Secret Pizza if really wanted to) That is the reason i gave 4 stars......I have done other tasting menus and i have always been absolutely full, content, and gratified with the meal. Yes, they say it's 21 courses, but the amount of food doesn't even equal 2 or 3 courses in a normal place. I wasn't quite satisfied with the actual food, even though i left absolutely mesmerized by the event as a whole.
