In short, outstanding food without a hint of pretense. It's become popular for restaurants to start your evening by asking you "would you like bottled water - sparkling or still?" The intention is obvious - sell you a $12 bottle of water that's no better than what comes out of the tap. They won't ask you that here. Nor will you find white tablecloths. What you will find is some of the most delicious and creative shared dish dining in Las Vegas. The restaurant is tucked into an eccentric building at the corner of 6th and Carson, just a block or so off of Fremont Street in the arts district. About half of the tables are outside in largely unadorned courtyard that is more the space between two buildings than anything else. But then the food arrives. There is so much creativity on this menu. Where else are you going to find "hot dog burnt ends?!" I had to order these just to find out what they were. They were absolutely delicious segmented hot dog style sausages, charred (or maybe smoked) tossed in a delicious BBQ sauce. They are served with sliced pickles and a piece of white bread. I'd go back for this dish alone. We were a party of three so we tried lots of shared dishes. We started with one (or was it two) of their specialty cocktails, all of which were wonderful. Stand out dishes included crispy skin trout in curry. Absolutely delicious!! Black (forbidden) rice and oxtail "risotto." A perfect accompaniment to other dishes, or eat it alone - no one will judge you! Killer Shrimp rocoto & aji amarillo pepper cream - these were deep fried to crispy perfection and we fought over the last few bites. For dessert: Bourbon Fudge Brownie with brown butter bacon and ice cream. Ridiculously good.T-shirt wearing servers were friendly and attentive. I can't wait to go back and try some more of their dishes. Jerk Turkey Burger with mango chutney slaw? Yes, please!

I had came here previously a few times and loved it. It has been awhile, but thought I'd come by to have my boyfriend try the place out. Had a reservation in the afternoon on a Saturday and had a great time. Our server Bianca was awesome. I know she was swamped with tables but she did a decent job taking care of us.With food, we had first got the bacon jam which has always been a must get at. It has such a unique flavor to it, but this time around was a little disappointing as it seems the cheese wasn't melted all the way which made it a little difficult to cut. The grilled oysters in gochujang butter had a really good flavor but a little pricey for only 3 pieces. Then we had the French onion fingerlings. The potatoes were still a bit hard and I wished there was more of the sauce on it, since it mostly just tasted like potato. Although, those were a bit disappointing, the short rib was cooked perfectly and we loved the sauce on top of it. The pep on pep flatbread was also great. Probably my favorite out of everything. We also had gotten the bourbon brownie bacon. It was decent, loved the bourbon ice cream but wasn't a big fan of the bacon. However, if you like bacon, I'd definitely say give it a try. Overall, had a decent experience this time around. The first few times I've gone definitely tasted better, but maybe it was just an off day.

Finally got the chance to try Carson Kitchen after it's been bookmarked for so long and it did not disappoint! Excellent service from Ava right off the bat! Love the eclectic rotating menu they offer. Consistently Exceptional Experience at Carson Kitchen During Super Bowl weekend, we decided to introduce our friends to Carson Kitchen for an early Friday night dinner, and as always, the experience was remarkable. (We highly recommend making reservations to ensure a smooth visit.)Our group shared an assortment of social plates, each offering a unique flavor profile. The Devil Eggs elevated with crispy pancetta and caviar were a delightful start. The Crispy Chicken Skins paired perfectly with the honey BBQ dipping sauce, and the Tempura Green Beans with pepper jelly cream cheese were a crispy, tangy treat. Although the Pork Belly with buffalo blue beurre blanc was slightly overcooked, its flavor still stood out.The highlight, however, was the Flatbread with Short Rib and red pepper béchamel, which was cooked to perfection, leaving us craving more. Since our initial visit in 2022, we've come back to Carson Kitchen a few times. It never disappoints. The ever changing menu keeps thinks interesting, but for the better. This afternoon, we went around 2:30 pm on a Sunday. We made reservations, but it actually wasn't really necessary. The restaurant was half way full, but still buzzing with activity. (Perhaps due to our dining hour.) After a shared plate of my personal favorite the 'Crispy Chicken Skin w/ Smoker Honey', I dined on a JUICY Bacon Burger which was DELICIOUS! It's cooked "smashed-style", with 2 layers of brilliantly seasoned beef, accompanied with CRISPY-CRISPY tator tots. My date had the 'Rabbit Farfalle' which was unbelievably delicious and very rich! Fantastic, although it may have been better dinner fare. Our other guest had a 'Brussel Sprouts Caesar' salad and had said it too was very tasty! All in all, another extremely successful dinner at Carson Kitchen!

Previously went to this restaurant as part of a food tour and the experience was great so went back this weekend. Was greeted ok by the host and although the restaurant was not that busy, was told the only seating was at a bar in back by the restrooms. The bartender was cool, food was ok, we ordered a short rib flatbread but the toppings were not consistent and food lacked flavor. Probably not a place I will go back to, there's a cool patio to eat in and that would be a better option to dine

3/5 Stars. Blonde female host didn't want to honor birthday reservation even though I had reserved a 5:15 table for only two people and reserved outside online through Open Table. Host stated "We had a private party buy out the tables and outdoor area because they originally had the rooftop but it is now too windy for them. So we're seating you at the bar counter." So, you sold my reserved table to a bigger group and now we have to sit at the crowded walk-in noisy bar? No thanks. They also said all of their indoor tables are booked so the bar is the only option. They eventually allowed us to sit at an extra/flimsy high-top table outside but said "you'll have to be done by 7:00" which is crazy considering we had the reservation first but whatever. Other than the bad host and not honoring reservations, the food was pricey (about $50-100 per person) but good and our male waiter was great and knowledgeable of the menu. They need to better manage their online reservations or at least honor them. Note you have to pay for parking - $5 first hour and $4 per hour beyond first with a couple of paid lots down the road and more limited paid street parking options with a meter maid walking around.
