"You know how it goes when they can't get a reservation up in Carbone"Sorry Drake, the girls getting mad when you can't take them to Carbone are justified. It's just that good. The service is attentive and fast, and the interior is beautiful. Sitting in a small circular booth gives the feel of being in a private room at the restaurant. The pizza bread to start is served with caution to not spoil your appetite for what is sure to be a great meal. We ordered the shrimp cocktail, which broke my assumption that all shrimp cocktail is pretty average and the same. This was delicious and the shrimp were huge. The carpaccio will make you wonder why we cook any of our meat. Nothing like a seasoned gabagool to warm up the appetite. The table made Caesar salad felt like the Italian version of table side guacamole, and somehow even more delicious. Big shout out to Caesar, he'd be proud. Even if you're no longer hungry after all that, the spicy rigatoni is so good you'll eat it anyway. Maybe my favorite pasta ever. The lime cheesecake is so delicately soft that I can't stop eating it even though I don't enjoy lime/lemon desserts. Start getting more reservations Drake, the girls need it!

Am the only one who doesn't understand the big deal about this place?I will say that the service is amazing.Angel hair AOP was oddly spicy. Fettuccine al funghi was bland. Honestly can't even rmr the rest of the dishes because they were forgetful.

Me and my family actually came here and by accident because I had mistakenly made reservations here instead of Bardot. But it all turned out well. Carbone is located on the second floor of the area next to Bardot and near where the buffet used to be.It was a great dining experience. The restaurant isn't necessarily huge or at least in the section that we sat in. Once we were seated we were promptly greeted one of the servers brought over some cheese. They were warming up the bread and it was worth the wait because there were tons of different types of bread. They are all fantastic and amazing.We had no idea how to order we know how big the portions were going to be. So the waiter walked us through it the best way to do it. We got two types of pasta. The pasta was actually fairly big. Then we ordered the scallops and veal Parmesan. We were all very full at the end. Thank you for the great service and taking care of us.At the end of dinner they brought limoncello and some cookies over.

I heard many things about this restaurant particularly the one in NYC. We were able to get last minute reservations on a Friday night. Even though it was after 9pm, the restaurant was quite crowded. The only negative was that we ordered the vodka rigatoni to share. The waiter split the dish for us which we thought was nice, but when I got the check, it turns out that they charged us for two orders which was costly and without our permission. That was a bit disappointing. I was going to bring it up to the server but it was already late and did not want to bother.

I had the most incredible dining experience at Carbone! From start to finish, everything was flawless. Our captain, Deon, was exceptional--professional, knowledgeable, and incredibly detailed in explaining the menu. His recommendations were spot on, making our meal even more memorable.Every dish that came out was outstanding, but the carpaccio was easily one of my favorites, along with the perfectly cooked fish and crispy, flavorful potatoes. The flavors, presentation, and attention to detail in every plate were truly impressive.The service was top-notch. Iam and Modesto were incredibly friendly and attentive, always ensuring our drinks were never empty and that we had everything we needed. The entire experience felt seamless and elevated.The ambiance at Carbone is just as remarkable as the food--beautiful, romantic, and perfect for a date night. We had the best time and cannot wait to return! I'll definitely be requesting Deon again for his impeccable service. So, my honest opinion. If you're in town, or local and need a great fancy night out. I 10/10 recommend this place for a great date night. We were finally able to land reservations, which I think are required, but nonetheless a good idea. The restaurant gives a swanky New York restaurant vibe with an amazing giant chandelier in the center of the dining room. The front desk staff are a bit cold and I wouldn't say rude, but certainly not welcoming. Once we were seated the service was absolutely impeccable. You'll have a main server and a secondary that runs drinks and clears the table. They start you off with some some absolutely delectable hunks of Parmesan reg guano cheese to get your palate dancing. We both ordered a dirty martini that was delicious. Bread service with pickled cauliflower and spicy suppressata is served.It's family style and they encourage you to order an appetizer, pasta and main which we happily obliged. We are both big eaters and the portions were perfect amount. We deciding on the calamari Marco, the vodka rigatoni ( which came highly recommended) and the veal Parmesan. We were in food heaven, they tikes the courses our perfectly and did not feel rushed in the least. Calamari Marco: the breading in the squid was crunchy light and refreshing. We did the sauce in the side which is a redux of white wine, Calabrian peppers and cheese. Best way in my opinion.Vodka rigatoni: just wow, packed full of flavors and just the right amount of kick for the spice lovers. Pasta was served perfectly aldente. Veal Parmesan: would order this again and again, they have veal Marsala ( personal favorite) but player 2 isn't as accustomed to it so went it a lighter introduction. Still absolutely delicious. We didn't have room for dessert but saw quite a few absolutely tongue tantalizing slices of tiramisu walking past our table. All in all, a great night out, delicious dinner and about 200$ each, which for fine dining on the strip is more than you can ask for most places. I would definitely visit again.

Good yes, but social hype made even crazier by FOMO created by the difficult to secure reservations sets an expectation that to most will disappoint.First, reservations from least to absolutely guaranteed:1. Casual Vegas visitor, call the restaurant directly during normal dinner hours. Do not bother with online reservations. 2. Guests of MGM SkySuites and SkyLofts use your concierge.3. Guests with an MGM casino host, use their services.4. MGM Noir guests, use VIP services.Once in, get ready to feel like part of the club in a classic NYC I-talian eatery? Comp bread, pickles, and aged parm kick things off and comp cookies end it all. In-between...Skip all starters. Instead have the, heavily dressed, anchovy forward, doused in a ton of shaved parm and delicious giant croutons of the tableside Caesar. The leaves of romaine are a vehicle for everything else. Sharable but not really that large.Skip the pastas unless that's what you want for a main. The heavily hyped spicy rigatoni al vodka is nothing special. Adding their very flavorful and tender meatballs helps but it is still just ordinary.Mains are the stars. The Dover sole piccata is easily the best dish on the menu. Such a luxurious, white flesh fish that just devours the flavor of the butter and capers and blending them with its natural sweetness. Deboned tableside. It is definitely sharable but why? Tell everyone to get their own.Meat lovers, either the veal Marsala or the veal parmesan are excellent. Beefy and milky in flavor. This veal is obviously humanely raised in a pasture, not penned up based on the depth of flavor. Either preparation has the veal at medium. Plenty tender. It soaks up the buttery marsala or tomato base.The dark horse, the porkchop. Double cut, cooked mid rare on the bone. All kinds of good. Very friendly service that really make you feel like you belong.Solid wine list. Typical high Vegas resort markup.Finally, the price. For on Strip dining at a top property, Carbone offers solid value. Huge portions at reasonable prices. Starters, sub $30. Pastas, average $40. Mains $50-$100 with MP items between $150-$200.A solid, agreeable, but not mind blowing choice for those sufficiently connected however, those NOT, there are seriously other MUCH better Italian eateries in Vegas.

Came here as part of a private dinner event and had a bunch of the items on the menu. Good: - Very fancy ambiance, I liked how the place felt very upscale fancy in the middle of the Aria - The bread was amazing - I liked how there were bits of sundried tomato in it- The cheesy dumplings were really unique - I liked the side of cheese - nice and crisp - Servers were nice and professional about dietary restrictions. Bad: - The time between food being served was way too long, was there for quite a while before we got our food - The salads were just ok - lots of sauce and felt like they weren't super healthy thanks to that Overall enjoyed this experience! Probably can't afford to go too much though.

Carbone has been on my bucket list, and so glad that I got to finally try it! It was amazing and surpassed my expectations with flying colors. It was elevated Italian cuisine and packed with unexpected flavors. I wish we could have ordered more dishes. I missed out on the table side Caesar salad and the veal parmigiana! The food was definitely filling. We had the spicy rigatoni, baked clams, lobster ravioli. I also wish we could have had dessert. They had an amazing assortment on their dessert cart. The star of the show was the complimentary bread/appetizers- the most amazing focaccia, salami and pickled cauliflower! Another stand out dish was the octopus. So delectable and I savored every bite. The mood was a vibe too. Loved the ambiance and decor. Service was great as well. This is a restaurant that I'll be returning to the next time I'm in town!

Carbone was all it was hyped up to be and more! I was thoroughly impressed with the food and wait staff. Everything was full of flavor and perfectly cooked. Our waiter was phenomenal and extremely attentive, ensuring we were pleased the entire meal. The spicy rigatoni with vodka sauce is a MUST. The ambiance is also very romantic and I felt they captured the essence of Italy quite well. Will 100% be back.
