First hot pot experience - outstanding! Gentle and attentive service. The robot delivery assistant is cute; the waiter removes the food items and places on the table, explaining the dish and optimal cooking time for each ingredient. The interior is spacious, incredibly clean, quiet. with a centrally located sauce bar (more later). One begins by selecting a liquid in which to cook the food. We selected miso, mushroom, and Tom young goong. We went a little crazy ordering the proteins and vegetables but managed to finish just about everything. We had steak, lamb, tofu presented three different ways and a variety of veggies.Tip - pay the few extra dollars for the sauce bar. Not only were there a large array of different sauces, (sesame, peanut, soy, chili, etc) and toppings, there was fruit, a variety of chips and snacks, and jellied treats.On the way out, one could take individually wrapped snacks, and the most adorable ice cream shaped like bamboo. The flavor was almost like a creamy matcha. Delish!Can't post this with a special mention of the restroom, which really deserves 6 stars on its own. Easily the cleanest and best smelling bathroom in town. Heated seats?! A multitude of buttons to clean one's posterior, should one so choose. Next to the sink, you will find a small dispenser with tiny cups and mouthwash. Again, first time visiting (and not the last), but it was evident that this team really wanted to ensure one had the best hot pot experience. Mission accomplished!

I can't get enough of Haidilao when they're offering their special deals. The Angus beef for $1.99 and the Lamb shoulder for $2.99 were such good deals for the quality of meat you get. It's perfectly paired with their classic spicy broth.I always order the vegetable platter, mushrooms platter, and tofu platter to mix things up. And the fish roe lucky bag is a must-order for me every single time. The explosion of flavors inside that tofu bag filled with fish roe is delicious.The restaurant is very huge with some window seats that offer a view of Seattle downtown street. The highlight here is their sauce bar. With lots of options for appetizers, fruits, snacks, and desserts, there's something for everyone. And it's nice of them to provide instructions for each sauce style--it's a thoughtful touch.But I had some disappointing experiences. I have visited twice during non-busy hours, around 1-4pm, and the service can be a bit lacking. There were times when I couldn't find a server for 40 minutes, which was disappointing. However, my recent dinner visit was a different story--the service was prompt and attentive.Overall, Haidilao is a great spot for delicious hot pot. Based on my experience, I suggest going during dinner time for a better experience.

Haidilao is crazy good!Went to Haidilao for Valentine's with my boyfriend and I enjoyed the atmosphere and the snack bar that came along with it. My boyfriend and I got the half and half for the broths. One side was the tomato broth and the other side was the tom yum broth.During the time that we went they also had a lunar new year deal, which was $2 each for an order of angus beef short plate and Australian lamb shoulder. We also ordered the meat platter too, which came with a variety of meat. Along with that, we ordered the vegetable platter and sliced bamboo shoots. For noodles, we got the vegetable noodles and vermicelli noodles. Our dessert was the rice cake with sugar and to drink we got the matcha coconut, which was sweet but more coconut flavor than matcha. Overall, we were very satisfied with what we ordered at Haidilao and ended up finishing a majority of it. Since it was Valentine's Day the server ended up also giving us two Ferrero Roches with matcha powder surrounding them. This was very sweet of them and I loved the gesture!We also found out during our time that Haidilao doesn't offer their special dance on Wednesdays, which we were looking forward to. I hope when I come back, I can experience it in person!

Haidilao is one of the most hyped up hot pot chains in the US, and for good reason. The service is great, they give you free snacks while you're waiting and also at the sauce bar. The food is fresh and comes out quickly on cute robots. The soups are extremely flavorful and they have the 4 split pot which gives you a lot of variety. The one downside is that this place is also quite expensive. If you come here, make sure to come for lunch or at late hours because they have a daily happy hour with $2 plates of beef which is an unbeatable deal. Also, there's no shame in eating alone here because they give you a giant plush to sit across from and it's pretty funny. My favorite soups here are the spicy beef tallow and the tomato. Be warned, the spice here is truly spicy. The spicy beef tallow broth had a deep rich beefy flavor which was cut through with the intense heat of the chilies. The tomato broth is on the other end of the spectrum. Mild and lightly acidic with a delicate flavor that complements whatever you cook in it.

If I could afford it, I'd have Haidilao for every single one of my meals. It's definitely one of the pricier options for hot pot in the Seattle area, but well worth it every time. The broths are so flavorful, the veggies are so fresh, and the meats are always high quality. I also love their sauce bar, with a diverse selection for you to build your own sauce. It also has some appetizers, like egg rolls, and fresh fruit as well. My vegetarian boyfriend loves Haidilao as well! Oftentimes hot pot places that offer a vegetarian broth won't have a lot of flavor since they use a water base, but the broths at Haidilao never disappoint. The true star of the show is their great service. The staff is always kind and patient in explaining menu items to you if you have any questions. They offer aprons so you don't splatter on your clothes and plastic bags to put your phone in. The food even gets delivered on robot carts! And apparently if you dine alone, they'll give you a big plushy to sit next to you LOL. Overall, it's no secret why Haidilao is so popular all across the country. I'm lucky that in Seattle, the wait is never as long as it can get for other locations, as I come back every chance I get.

So many sauce options + informational posters of recommend combos; snacks on your way in and out; and if you get the sauce bar for $2.99 (you definitely should!!) you get unlimited sides, sauces, and some desserts. They have tea and bracelet making for the waiting area, if you're not on top of your reservation game. The quality and options of a la carte stuff pretty standard for hotpot (good quality meat + good veggie selection -- nothing bad to say!). The side dishes are the fun part! I especially loved their kimchi, durian dessert things, and red bean porridge dessert. It would be impossible to fully capture the experience with just a review, especially if you haven't done hot pot before, so come try it for yourself!
