We started worked with Marcus for our wedding celebration in 2019 and were immediately impressed with his professionalism, variety of appetizer & meal options, high quality food, rave reviews and all at a great value!Dealing with a year delay because of COVID in 2020, Marcus was very responsive to our inquiries, flexible in the schedule changes and quickly became a trusted partner in the reception planning process. His recommendations along the way on things we would not have thought of made the dining experience one of a kind for our reception.The food was AMAZING and was the talk of our entire wedding weekend! Every guest had great things to say about both the appetizers and main meals.We will be calling Marcus for our next event, and highly recommend Gibson's Smokehouse to all of our friends and family!

The food was delicious everything was flavorful and delicious. The service was on point. The entire experience was worth every dime and I definitely will visit again.

Everything we tried from the Gibson's Smokehouse BBQ Food Truck could have been better. The brisket did have good flavors but was served all dried out with HARD FAT on it....The pulled pork was also served all dried out. The Macaroni and cheese was over cooked and dried out. I didn't like the taste of the rest. Everything could have been better!Off day tonight.

Happened to stop by today while they were visiting my apartment complex and I am so so so happy I did. I ordered 1pound of brisket. Wow so good. Mouth watering. Smoked BrisketI couldn't even wait until I got home to eat some. Their BBQ sauce is to die for ! When they say Spicy BBQ sauce they mean it. It was full of flavor and spicy enough to get your sinuses going but not so much that it overpowers the Smokey flavor of the meat. They are super friendly and quick with service as well. I loved their food truck set up and payment processing checkout flow was fast and efficient. The photo does the brisket no justice. It looks, smells, and tastes better than any photo can convey. Pictured is 1 pound of brisket minus a lot because I couldn't stop eating it

A big "Thank You" to Gibson's Smokehouse for catering our second quarter event at PAC Worldwide. The food was delicious and the staff loved it. Thanks for also being accommodating and for providing different meal options for our vegan/vegetarian personnel. Your staff was very welcoming and efficient in having all our staff served in a timely manner. We'll definitely be reaching out for more catering from Gibson's Smokehouse in the future.

Gibson Smokehouse catered our wedding on June 6th, 2023 and the food was AMAZING. Marcus was easy to communicate and plan with and gave us everything we wanted. We had a taco bar with green chili pork and barbacoa, grilled vegetables, beans, chips and salsa. For cocktail hour we had the mini chimichangas which we are still drooling over! Marcus ensured that we had fresh ones when we got back from taking pictures during cocktail hour. Oh and the S'mores bar was a hit!! No problems at all and we couldn't have asked for a better experience. Thank you so much!

I highly recommend Gibsons! I hired them to cater my daughters wedding and have a family that are BBQ snobs...they loved it! Great selection of entrees and sides. The good is a crowd pleaser!

We hired Gibson's Smokehouse Food Truck to cater our wedding and WOW! What a hit! Our guest said it was the best wedding food they have ever had. Our only regret was that we didn't grab more plates for ourselves. Marcus and his crew provided fast, excellent service at very reasonable prices. His truck really added to the fun of our event and we will definitely be using him to cater our next big event.

Tonight Gibson's Smokehouse food truck came to the community of Pueblo El Mirage and they did not disappoint. My husband and I each had The Plate which consisted of smokey brisket, pulled pork, creamy-cheesy Mac & cheese, flavorful coleslaw, the yummiest potato salad and some of the best jalapeño cornbread I've ever had. There was also a side of barbecue sauce that was not too spicy, vinegary or smoky but absolutely perfect. At $18 this was an exceptional meal and one that I look forward to having again in the future. One last thing-it was served to us in less than 5 minutes from ordering. This truck rocks!
