I've visited Bao To Food truck twice. I tried their beef brisket bowl, lemongrass chicken bowl, pork belly noodles, and egg rolls. Their food is tasty, fresh, and has good flavor. My only complaints are: 1) price and 2) they give too much lettuce. At $16 for a bowl/noodle dish, there's too much lettuce and not enough protein/ daikon/ carrots/etc. I think of lettuce as a filler, and I want more substance lol. I'd come here again if I was in the mood for a lighter meal.

They were at my sons school event.I was really hoping to have tacos but did what I -thought- was settling for something else. The food was PHENOMENAL, you know the feeling you get after you eat something you didn't really want and you just kinda feel unsatisfied? Not fuckin here! Lol it was so good! I can not say that enough, even if you're not in the mood, this delicious food will get you in the mood! You can't go wrong with anything on the menu. 100% recommend

I hadn't been down to the trucks at Enzo's Table for awhile and ventured over at the weekend.I felt like trying something new (well, something other than tacos) and there were an abundance to choose from. Ohana Shack caught my eye but they were sold out of everything. Ba To had a pretty wide menu so I decided to give it a try. The lady who served me was really friendly, asked how I was doing and made small talk. Ordering into a high window can feel a little awkward but she made it seamless and was very easy to talk to.I'm intrigued by their pork belly options but pork belly has a high floor AND a high ceiling so I decided to keep it simple for this first visit. I ordered the chicken bowl, a Thai iced tea, and a Batonana dessert. The chicken bowl has grilled lemongrass chicken, over rice with a little bit of salad and topped with pickled daikon and carrots. It was delicious. The rice was perfect, the salad was fresh with just a little touch of dressing. The chicken was cooked beautifully, nice and tender and well marinated. I definitely trust that they'll do a nice job with with pork belly now that I've tried that. I always wanted to try Thai iced tea but the opportunity always seems to arise at night. I've had boba teas but not a simple Thai tea with half and half like they serve here. I asked if they could make it semi-sweet and they said it's already made, but I needn't have worried. They told me it's freshly brewed, no powder. It was tasty, very earthy and not too sweet. The colour is magnificent too. The dessert was also delicious. It's essentially two egg rolls filled with banana, deep fried and covered with a coconut sesame sauce. It was kinda similar to a fried banana dessert I used to get a Chinese restaurants growing up in the UK. It wasn't messy and the sauce on top was divine, syrupy but not super sweet, really nicely balanced. I guess I didn't take in the ingredients at the time because I would've described it as a light chocolate-caramel. It's not too big and didn't make me crash afterwards. All in, a really nice experience and I can't wait to try their pork belly and maybe the noodles next time.

Amazing food & amazing service.Bf and I stopped by River park today, a little too late to catch the rest of the food trucks and this was the last food truck willing to take an order for us. Glad they did because we absolutely loved the food. They were super sweet and accommodating given they were preparing to leave as well. We got pot stickers and a chicken bowl. The food was fresh and the chicken a really nice aroma. Meat was tender, rice was perfect, and the daikon and carrots added a nice sweetness/freshness. The pot sticks were hot and delicious. Most remarkably, as we were eating at a bench nearby, the chef's wife stopped by as we were leaving and asked if we were enjoying the food. We let her know we thought it was great and she suggested we try the pork belly next time, as it's his specialty and he marinated it for 24hrs! I shared my bf had never tried pork belly before so I would definitely have him come back to try. As we finished up and were walking away, the chef came out to the food truck and called us over-- he shared his wife had called him and told him we loved the food and would like to try the pork belly. He came out with a sample and it was super tender, perfect mix of savory, sweet, salty. Most of all, stunned by the absolutely kind owners and the pride they take in their food, and over the top service!

I had the pork belly bahn mi today and was disappointed. The flavor was OK but the pork to bread ratio was terrible. The roll was not the greatest either. Definitely not worth $18 - maybe $12, maybe ...

Had the pleasure of trying out this Vietnamese food truck last night. As people familiar with Vietnamese cuisine know, there are options in Fresno, but perhaps not as good as what you might find in Orange County or Bay Area. In my opinion, that changes with Ba To Food Truck. This is a food truck that is opening during coronavirus, in triple digit heat - despite these challenges, we were extremely happy with what we got.I'll highlight some of the things we had:1) Shrimp in a Blanket - basically, it's fried shrimp with spicy mayo. It's. So. Good. This was my favorite thing on menu!!! I don't know how they get the shrimp so perfectly cooked with the egg roll like shell. Crispy on the outside, moist shrimp on inside. And the spicy mayo dipping sauce is so good, we use the leftover sauce for other things like the bao. It's the kind of food item at a party where, you mindlessly eat one, then another, and then another, and then another, and before you know it, you've eaten the whole platter. To me, it's a must get. My mouth is watering thinking about it right now. 2) Adios El Certo Bao (Bao pork belly) - for those unfamiliar, these are like Asian tacos. And there are other places you can get bao in Fresno. But the difference is the bun itself is so moist, and the meat is cooked well, not dry at all. Add in the garnishes and it's perfect. My wife had the chicken bao, also moist and very good.3) Piggly Wiggly Noodle - vermicelli with pork belly, mint, salad, pickled carrots/daikon and fish sauce known as nuoc cham. They don't skimp on anything - we had plenty of sauce, veggies were all fresh, the vermicelli was good and the meat was again cooked perfectly. The texture and taste differences between the sauce, the meat, the vermicelli noodle, the greens, and the garnishes (mint, peanut), reminds me of how it's supposed to be done. My wife also liked the beef brisket bowl but I did not get to try it since she ate it all without sharing. 4) Batonana (fried banana dessert) - I'll defer to my wife, who is a dessert specialist, on this. But she says loved it - it's fried banana with this coconut sesame dressing that we've never had before. It was so good, and very much in line with a typical Vietnamese dessert - that classic sesame hint, refreshing and not too sweet because it's coconut. I don't even like coconut, and I liked this sauce. We frequent the Vietnamese places here in Fresno, I can't think of any place else nearby that you can get this.As a native of SoCal, this place is up there with the classic Vietnamese places you would find elsewhere in Bay Area, LA or Orange County. You can tell this place values quality and quantity, and that's not something you see in the current Vietnamese options in Fresno/Clovis. There's the feeling that someone could have made this for you, and just for you, at home. We will be back, and see ourselves as frequent visitors. Very excited to see what the future holds for this food truck!
