The Drunken Taco and Mexican Street Corn

I had an hour after work to kill before a meeting, so I decided to show my co-worker the food trucks in the Northeast. Since it was still early, only one was ready to serve... The Organic Taco Machine. This is one of those rare trucks that has as much to offer meat eaters as to vegetarians. My co-worker got the Cheech taco, which had a grilled ring of cheese and flank steak. She said it was an awesome taco. I on the other hand had a jerk fish taco and a "Karrot" taco. The jerk fish had a nice sweet and spicy flavor, like real jerk does. The carrot taco was superb as well, with shredded carrots, a cardamom yoghurt and plump raisins. After trying it, I almost ordered the other three veggie options... But I was broke and needed to get back to work. We also both order yucca fries. They were expertly prepared, evidenced by the fact that they weren't too thick and starchy as they could be. My co-worker liked the tomato jam that came with it, but I found it way to sweet.. However, they were great enough to give me wasabi mayo, which was perfect for those! I would say the only downside is, at $3-4 a pop for corn tortillas tacos and sides, it can really add up! If price was slightly lower, I think it should be a great value.

Went to food truck Friday's at Sky park in Scotts valley just as the event was ending. The truck was closed and the woman working reopened the truck, gave me two tacos and two drinks and told me it was free of charge. She was the sweetest woman who made my night, I'm vegan and she put together special tacos for me and wouldn't even charge me for them. The food was phenomal I can't wait to got back!

Tried it for the first time tonight. The Ay Thai tacos with yucca fries. AMAZING!! Can't believe I hadn't come across this gem before. Officially stalking this food truck.
