The best green chile and bacon sandwich. Fresh cut fries are thick and tasty. You can find them at the downtown markets every Saturday or in summer Wednesday markets. I've also heard the burgers are good.

This food truck is on my top five to visit in las cruces. The brisket is to die for. I got the sandwich with Mac and cheese,bacon and green chili. The Mac and cheese had the little shells and the French fries are so good. My favorite place to get fries. They are cooked fresh every order and crunchy in the outside and soft on the inside. Comes with ketchup. I didn't even get a photo because it smelled so good.

Stopped in for a breakfast burrito while walking the farmers market. The food truck looked cool and the service was friendly. However the food itself was really disappointing. We had a relatively long wait for only a couple of customers ahead of us. I ordered a breakfast burrito and when I finally got it the hard fried egg was hot but the green chile meat filling was cold. Overall greasy and so bad I did not want to waste my calories on it.

Since we had a non profit booth today at the Farmers and Crafts Market, our options for eating lunch were more limited. Since are booth was close to yhe Green Chile Paddy Wagon, we decided to give them a try. We have had very little experience with food truck food, so I must say we were pleasantly surprised. We shared a delicious Paddy Melt (burger with green chile, cheese, and bacon bits) served with very good fries.

Delicious food with great customer service. I tried them at the ACES Welcome Back Street Fest yesterday. The food is good, the people were really nice and everything was fairly priced. Please support local vendors like these guys :)

Tasty, tasty, tasty. I had the Brisket Melt (on toasted marbled rye, provolone cheese, green chile and bacon and a really well prepared brisket). Hot and oozy, just the right size, zippy chiles with great flavor, 7 bucks. My wife had the special, which was a toasted grilled cheese (a couple of cheeses) bacon and green chiles, 6 bucks. Wowser. A nice change from burritos and machacas. Service was pretty quick. They move around all over Las Cruces, so check their Facebook page (Green Chile Paddy Wagon) for current locations.
