Some would call us aff our heads, but I suppose you've got to try something really different now and again, explains Mashman Brian Websters. The Balvenie is always thinking of new ideas, and I'm proud to be a part of that. everyone mucks in. At only 25, Apprentice Malt Master Kelsey Mckechnie had earned her place at The Balvenie table. Valued for her fearless approach to experimentation that she marries with genuine respect for the craft. I love trying to understand the changes to the Balvenie whisky that happen during the making process, she explains. It helps me appreciate how much the craft has evolved over time and how specific flavors are created. At a get-together with the team, the seed of an idea took root in her mind for an experiment to produce an event fruitier, sweeter-tasting Balvenie. We're constantly looking to try different things, this was an experiment to see what could happen, she says. The idea was to pull out as much of the flavor if the wood as possible. The seed quickly developed into an ambitious plan. Supported by the expertise of Malt master David C Stewart, Kelsey sourced Kentucky Virgin Oak barrels from Kelvin Cooperage in Louisville, Kentucky. A family-run business since 1963, Kelvin uses the finest quality oak for their casks, toasting each one uniquely in the open fires. Paul McLaughlin, of Kelvin Cooperage, explains: The only wood we burn in the fire is white oak. And the smell, you're really activating all the vanillins within the American Oak, it's kind of a nutty, marzipanny smell, like freshly baked bread. Once the barrel safely arrives on Scottish soil, The pre-toasted casks are given an extra deep toast in The Balvenie Cooperage to drive the heat further into the wood and bring out as much flavor as possible. As Head Copper, Ian McDonald asserts. We're adding extra life and flavor into the wood. After it's spent 6 weeks in transit from Kentucky to Dufftown, our signature Balvenie burn refreshes the wood, bringing out all the flavor, color, and vanilla. And then the wait begins. The toasted cask is filled with whisky aged primarily in ex-Bourbon casks, before being laid down to mature for a few more months, a process known as cask finishing and pioneered by Kelsey's mentor, David C Stewart. A store is a store is a store right? Not in this case. The owners/operators of the Famous Market on M-59 are two great guys who truly care about their customers. The prices are always excellent, and the selection is unbeatable! It's been awhile, but I got to stop in last month and was surprised to see a more open and upgraded layout of the wine display. I like it! Also, saw that you can buy a crapload of mini liquor bottles in sealed 'value' packs. Always nice to experience the same friendly service. Although I still don't understand why they seem to be totally off the map in terms of a website, social media, etc. Weird in this day and age.

I've been driving by this place of late and stopped in because I noticed the "Microbrews" signage. I was hoping to find Jolly Pumpkin Bam (out of stock but a delivery every week) and was pleasantly surprised to find Bear Republic's Racer 5 IPA, Bam's twin culprit in sending me on this new dragon-chase of a microbrew journey I'm now engaged in. Mind you, I tried Racer 5 a few weeks ago in a fancy Korean place in NY, choosing it solely because in their sea of beer offerings I'd never heard of, Racer 5 was from Healdsburg, CA where a friend of a friend lives so I ordered that one and on first taste, I found it to be the most bitter, strange, hateful beer I'd never expected to fall in love with. But I did and when I saw it here on M-59, I realized I'd hit pay dirt. At any rate, I was minding my own business with all of this historical culinary drama going on in my head when the owner on duty asked if I was finding what I was looking for, I gave him the quick and dirty and seconds later, we were on the same page. I found instant trust in him because he's a great combination of humility, passion and knowing his stuff all at once, so I figured I might as well try some new beers and lo and behold, here I am with some great recommendations and plans to head back next time I want something special.
