I caught this truck at Klyde Warren park on a weekend, and decided to stop by for the first time. I could have gone to any of the other seven or so food trucks lined up next to it, but my belly was telling me it was a Cajun food/fried seafood sort of day. Best decision ever, belly!The shrimp basket was out of this world: eight jumbo fried shrimp served with texas toast, french fries, and pickle slices. I got some ketchup packets for dipping purposes, but they were ultimately useless because the spicy tartar sauce (?) that was included just owned everything. And the shrimp... likely the best I've had in my life. Those plump crustaceans were enrobed in the lightest coat of batter and fried to crispy perfection. The only downside to my meal was that the pickles were buried under the fries, causing some loss of crispiness to two fries. But I don't think this will prevent me from coming back, as all of the other fried goods I saw people getting looked equally amazing. Maybe some fried mac and cheese next time... And as a side note, props to the service. Before placing my order, I was warned that it would be a fifteen minute wait. Although this, plus ~10 min, is expected of the Klyde Warren food trucks (in my experience), I think that forewarning your customers is one of those small but considerate gestures, and completely necessary. So I took a seat at one of the nearby park tables, while customers of less considerate food trucks paced deliriously back and forth before me, checking on their orders every five minutes and totally exacerbating their hunger pains.

So I'm at Klyde Warren on Sunday posted up by the stage so I sitting where the food trucks start. I was starving but decided to walk all the way to the end and work my way back, you know not just get something at the first truck with the shortest line. I'm so glad I walked all the way down to the end because there sat the Lab Food Truck, the name kinda of threw me off because I saw flames but had no clue what goodness was on that truck. First thing that caught my eye was poboy I love a good poboy and my decision was made, plus I had the option of spicy or regular? Well give me spicy. The portion was really a nice size for a food truck. The serving was comparable to any sit down restaurant and the flavor exceed many sit down restaurants as well. When they handed me my sandwich I hurried and walked back to my table protecting my sandwich from all the canine sniffing noses. That poboy was wonderful it was fresh shrimp and oh so spicy. The bread was buttery and toasty. The remoulade sauce was tasty but not even necessary. The fries were standard but it was all about the poboy. I cannot wait to try other offerings from the Lab Food Truck, one of my friends arrived late and she went and got the same thing and neither one of use were disappointed. This is a must try again.

This Lab is on fiyahhhhhh! And just like their truck design too! (I hope you also sang that first line in your head like I did.)My friend and I weren't feeling particularly hungry for lunch that day, and sharing the $9 fried oysters basket gave us the perfect amount. The oysters were perfectly crisped on the outside yet still suuuper juicy on the inside, and dipped in their special tangy sauce that's just spicy enough? Hubba hubbbbba. It also comes with toast and a pretty good amount of fries (the sides were pretty average but it's all good because the main entree was yum yum), and yep, those all received their fair share of dunkin' too. Artery-clogging? Perhaps. Yummies and totally worth it? Yesssssirr.

Gave this a try while I was at Klyde Warren park - it had the shortest line btw. I tried the shrimp basket ($9) - unlike the reviews mentioned here, it came with 6 pieces of big shrimp, not 8 as some had alluded to.Decent batter, a blend of spicy and sweet with the cornmeal mix. Fries were way too greasy (it sat on the bottom so maybe the grease off the shrimp dripped off) with some seasoning but was very meh. The Shrimp was good, crunchy to the bite and a good batter with the tangy spicy sauce. Not the best I've had, but pretty good for food truck standards...

This is not about the food, I personally have not ate here. However, with it being a food truck, you see it on the road sometimes. Well, I was behind a Jeep who was directly behind this truck. The truck moved to the middle lane so the Jeep and I go to pass it. As I was right next to it, it started to drive in my lane. Did not even care I was there. Thankfully there was no oncoming traffic because I had to swerve in to oncoming lane as minimally as possible and slam on my brakes. Like seen as this is how they handle their driving and have a lack of common courtesy - I would never eat here. Either slow down because you were in the wrong lane and get over behind me or stay in the lane if you knew where you need to be.

I cannot say enough good things about The Lab! They're parked down the street from myoffic eevery Thursday so I finally decided to check em out. They have loads of options, from catfish and shrimp to oysters and even alligator and oysters! I've had the oyster poboy and the fired calamari and man, the portions they give you are HUGE! Most food trucks you pay quite a bit for a small portion of food, but not at the Lab. They're meals come with fries, pickles and peppers and a side of sauce that fills the entire doggy bag. Of course I got mine spicy, and I was definitely glad I did. The oyster seasoning was super flavorful and the sauce they give you is to die for. They also top the poboys with a delicious slaw that contrasts with the spices. The calamari were fried perfectly and they give you a side of sauce to go with it. On top of the good food, they are very reasonable (plus they don't charge tax like some others lol)Definitely looking forward to trying more menu items! Hands down one of the best food trucks I have experienced!

Mmmmmm a basket of fried oysters, remoulade sauce with a nice kick, a couple pickle slices, fries with old bay seasoning, and buttery toast for $9. Not a bad deal! You could do a makeshift po' boy using the bread or (as I did) you could just dip those oysters straight into the remoulade and eat them like they're chicken nuggets. Either way, you can't go wrong. There were other delicious-sounding fried options on the menu, but I couldn't pass up the oysters. I only wish they offered the option of a cole slaw or something not super carby on the side for people who don't need/want the toast. That would make this place even better. I would definitely buy food from this truck again.

I had the shrimp basket. It was AMAZING. Spicy, good sized shrimp. It came with fries, TX toast, pickles & a jalapeno. From what I gather they took 2 restaurants from Oak Cliff and slapped them on a food truck. It is Cajun food. I can't wait to try some of their other dishes, but that'll be hard after having the shrimp. If you see them, try them! Caught the food truck on a busy day and before the food came out, I was not impressed. Slow service, generally unpleasant women taking orders, and did I mention slow service? It took me 40 plus minutes to get my food (not to mention waiting in line)Once I got my food (the fish basket and corn fritters) it was pretty tasty. I enjoyed the corn fritters, and the fish was good (just not much of it). All in all, it wasn't worth the price. If they could better handle a busy day (better managing the line and people's expectations) and lower the prices, this place would be closer to 5 stars.
