Went on 1/13/23. The location was slightly different; it was a food-truck circle with a Japanese Hibachi truck. Talked to Kenneth; very friendly. Let me sample the brisket. Mmm! I opted for pork ribs and coleslaw since that's what someone else ordered. =) The ribs were really great except the rub/crust made it a little saltier than I like. But I never use salt at a restaurant, and I order my In-N-Out fries cooked light, no salt. =) I should've just rubbed a little of the salt off the ribs and/or used a little water. So I would order that again. The coleslaw had a really good spicy kick. I think I like mine a little more chopped up, but I could've just thrown it in a food processor. Anyway, definitely worth trying the coleslaw. They have an unusual pizza, but this was the first weekend they didn't have the dough. They cater. And I think they know a good cajun cook. I love cajun, so I should've asked more about whether he was catering only, or if you could pick up at the food truck. Overall, good food. Friendly owners. Innovating, but not cutting corners. I've tried a lot of BBQ including Memphis and Lockhart, but this place by far beats most of them if not very close to it. Unlike most places, you don't see real fatty meat. Perfectly balanced to make it juicy and mouthwatering. It's a food truck so there isn't any indoor dining, but it doesn't take away the enjoyment of the food. Everything Kenneth and his staff serves is always great and perfectly grilled. Love the balance of spices. It's difficult not to be tempted to start eating the moment your order is handed to you. I make a stop here whenever I have cravings for some awesome BBQ. Recently added breakfast items with seafood to be added to the menu shortly. If you're ever able to make the drive to McKinney, TX, I highly recommend giving this place a try. You will not be disappointed at the southern hospitality or the BBQ.

this is a food truck near intersection of Hwy 380 and Bridgefarmer road near Princeton, TX. It is in a trailer and will close when there is the least hint of rain or other bad weather in the area. Also often closed on Monday and Tuesday - (i think they work other jobs). If they are closed, there is usually something else (another food trailer) you can eat in the same empty field.

Stopped by this afternoon for some great BBQ. Had some brisket point, stuffed jalapeños and ribs. All three were great and the turkey which they just gave a sample of was great and very juicy as was the brisket. Great smoke flavor and no sauce needed even though the spicy BBQ sauce was really good which I put on the last bite of rib. Also gave a 10% discount for being part of the North Texas BBQ addicts Facebook group.

I have to say that Hickory Heat BBQ is absolutely fantastic! I ordered ribs, brisket, and garlic and jalapeño sausages. All of the food was great. The guys were so nice and very generous with their portions. They will be getting more of my business and I highly recommend them to anyone looking for some good bbq!
