I caught the cart on the far north side in the Crosswoods using Street Food Finder online. I got there late and the chef had sold out of most of the proteins but he gave me a discounted bowl of the ramen version of bacon and eggs. After giving my bowl a lashing of rooster sauce I scuttled back to my vehicle to dig into this steaming goodness.Popped the top to an ample share of cellophane noodles topped with homemade pickled radishes and cucumber plus two perfectly soft boiled eggs then covered in a rich salty porky bacon broth made this a perfect lunchable. As a fan of asian soups and noodle houses I wasn't disappointed by my visit and look forward to catching this cart around Cbus!

The food gods taketh away, and the food gods giveth back.Fresh on the heels of Freshstreet's departure & indefinite hiatus, Mashita Noodles has arrived. And while they don't quite match Freshstreet's ramen awesomeness (not that I think that's really their intent), they're a nice reminder that the food scene in this town is really taking off. When young people start hand making their own alkaline noodles, you know something pretty good is going on.The day I went, two choices of noodles (regular and spicy), three choices of broth (house, vegan, and chilled spicy), and three choices of protein (pulled pork, chicken, squash & mushroom), plus bean sprouts, herbs, and if you ask, homemade kimchi.Don't come looking for traditional ramen, that's not what Mashita is serving. But that's okay, because what they're producing is a pretty nice bowl of Asian-inspired noodle soup. The broths are distinctive and complex; the vegan broth (made with konbu and shiitake mushroom) was particularly good. The alkaline noodles could have been just a tad more chewy, but I'm not going to criticize too much anyone who goes through the trouble of making their own noodles by hand, no less.Now if only I can convince them to make a traditional tonkotsu ramen broth...

We were hitting up some various food and beverage spots in downtown Delaware on a Friday night when our friends mentioned a noodle cart nearby that was good. A noodle cart? In Delaware? Curious and hungry, we dipped out the back of the bar and around the corner to find the Mashita cart alone in the corner of the adjacent parking lot.I got the daily special, a burrito with rice, miso aioli, pork, black beans, and kimchi. It was superb... spicy and complex and delicious, and went perfectly with the beers next door. Very hard to beat for $7. I didn't get a chance to try the noodles this time, but I look forward to trying them. I'll be looking hard for this cart now any time I'm in Delaware...

Mashita Noodles was bringing their truck to Staas Brewing Co. in Delaware on a regular basis this summer and fall. They're now done for the season, but BOY were they yummy when they were around. So pop ups make me nervous. I'm nervous I'm going to love them and then they'll go away. Happy to find out this is a food truck also.They recently took over the Meat Bar space as a pop up downtown. Downtown is a odd market. Most of the places are only open for lunch down there so I feel they don't really get the foodie crowd.I understand the double edged sword of being open for dinner as well and not having customers because everyone leaves after work. But then no one goes downtown after 5 because everything's closed. I had an opportunity to finally try this spot (I missed Meat Bar because of their changing, depleting hours)First off the space is awesome. On the outside it doesn't look like it's much. But the space is grand and really makes a mark. I had read about Mashita's burritos but really am a fan of Bi Bim Bop. I got it with chicken. They also have broth bases dishes which would be awesome on a cold night but this particular afternoon was in the 60's.The Bi Bim Bop was really good. Not the best I've had (Jims Grill in Chicago!) but still really tasty.As an appetizer I got the hot buns with pork cheek. Outstanding. I could have had these for the meal. So tender, fresh and flavorful. My only regret is the hours. I would go there often if it had longer hours and give the ramen a try,

Maybe this truck is normally good, and catching them at the independents day just wasn't a good one. But as a fan of Asian food I was pretty disappointed. Not enough flavor, everything was cold and slimy, and the egg was borderline raw ish. For me, wasn't worth the 9 bucks

I tried the traditional noodle at the Independents festival, and it tasted so horrible that I couldn't eat more than two bites. The broth was luke warm and tasted like pure msg, the pork tasted like it was two weeks old and the pickles were bad too. It is absurd to me that they could charge money for such bad food. Maybe the festival was not a good place to try them, but it was a huge disappointment to a noodle lover like me.
