My daughter suggested this place & she told us you gotta get there early & they are only open from 12-3 & once they sell out the day is done . We love our TX bbq & this place is absolutely phenomenal. We tried this place the first week we were in the Springs & again the day we left Colorado going back to California. Chuckwagon 719 there team members here are very friendly, fast, and efficient! This place is very clean , small area , Tx motif which is just super cute. Everything on the menu is a must try & if you like brisket definitely try the wagu it's worth the price . It's so tender & moist . My daughter loves the Tx Twinkies , side items are very good & whatever you pick you won't go wrong! We will definitely be back b/c I need to try the bbq beans & sandwiches . We left on Thursday & took our leftovers on our trip back to CA. Holy Cow the best leftover dinner ever when we were sitting in the car charging. The quantity of food is more than plenty & definitely enough to share .

I've been wanting to try this spot but they are usually only open while I'm working, was off today & craving bbq so I thought I'd go try it out.There was already a line at a quarter to noon (open from 12-3 or until sold out) The line moved quickly & when I went up to order I ordered:1) 3-meat platter for my hubby with bread, beans & Mac n cheese2) pork ribs, bread, elote & beans for my mom3) brisket elote (brisket on the side) & a Texas Twinkie for me.Plus 2 sweet teas.Total was a little over $70 incl tip not bad for good bbq - so let's get to the taste. All of the meat was smoked, juicy & perfectly seasoned. My favorite was the brisket I loved the cook in it and they serve thick slices of it which to me is perfect. The beans were good, jalapeños and some seasonings in there so that's a plus, the Texas Twinkie was delicious - my favorite item just the perfect amount of brisket in the filling, the bacon was perfectly cooked (no raw pieces) and it maintained its integrity when I cut it up into slices to eat- I loved it. The elote wasn't for me personally. I like my corn fresh (I could tell this was canned) and I don't like cilantro in a Mexican street corn, the limes (IMO) should not be in the corn because it dries them out and you get no juice (my moms was the same) and I would be loved some acid to cut thru the creaminess of the sauce. It was tasty but not something I would order again. The service was great & I loved how everyone worked in such a rhythm and had a great vibe going between them all.

The best bbq in Colorado Springs hands down. Pulled pork that is juicy and flavorful and brisket that melts in your mouth. Not to forget their peach cobbler that will make you cry it's so good. Only problem is they are so good they sell out each day so go early!

From the moment we rolled up, we could smell the authentic Texas barbecue in the air. This Colorado Springs restaurant is currently serving out of a food truck but is moving into their permanent location on May 17. They serve an operate family style. The menu is everything you would hope for from an authentic Texas barbecue restaurant.We ordered the Texas Trinity plate and two Texas Twinkies. Later, we got the brisket mac & cheese. All of it was de-stinkin-licious. The ribs were so juicy and they pulled off the bone. The brisket was smoky, melt-in-your-mouth tender, seasoned perfectly, and the fat was beautifully caramelized. But the garlic pepper jack sausage was truly a treat. Needless to say, there was no leftover sausage. The Texas Twinkies were stuffed with brisket and cream cheese and wrapped in bacon and smoked to where the jalapeño pepper was tender, and the bacon was crispy and the structure was impeccable.The coleslaw was sweet and crisp and creamy. I loved this side dish. But the baked beans are a must try. They are flavored so well. I even heard a man say while we were eating that the beans were the best that he has had in years. I'd have to agree. They were pretty epic. The brisket mac & cheese comes in a full bowl. It's super cheesy and the macaroni is perfectly cooked. The brisket is an amazing compliment to this dish. It's a bowl full of comfort food.They have a side table with pickled jalapeño peppers, pickled red onions, and hamburger pickle slices. All of their breads that come with their sandwiches or their plates are made from scratch from the bakery next-door. There were several other menu items that we have not had a chance to try, but we will absolutely go back. We also bought several loaves of homemade bread from the bakery next-door.This restaurant is open on Thursdays, Fridays, Saturdays, and Sundays. There's more things I want to try that they dish up. So I know we will be going back to Colorado Springs soon. Also, if you're driving in from out of town, give them a call and let them know your order in advance and they will have it packed up for you ready to go . Customer service was amazing. This is the sweetest family ever. I highly recommend giving them a try. And you can attend their ribbon-cutting on May 17 for their new brick and mortar restaurant.

This place is GREAT!!! We got there about 30 min before closing, and they were out of some things. This is a good sign IMO. We did have pork ribs, brisket, Mac, beans, coleslaw, and potato salad. All were excellent...another good sign. Staff was so nice, and offered several "extras" to make up for what wasn't available. Next time we'll get there earlier, and if you haven't tried this place, pretty sure you'll love it. And, call early to order ahead. Thanks for the outstanding meal and time with family.

This is truly my favorite spot to eat in Colorado springs, the staff are all extremely friendly, it might be the only place I can listen to classic country music and enjoy a meal and finally, the food is absolutely phenomenal. Place is pretty amazing, and you can tell from the crowds, its a favorite in town. Its located in an off the beaten path little strip mall, which you would think might affect the business and traffic flow. Absolutely not. The line regularly reaches the door. On this last trip, i tried the brisket burger. It was heavenly. you cant really go wrong here. if you are going for lunch, plan for the line, but also plan to go early. they regularly sell out.

I've long been a fan of Chuckwagon. We moved to Colorado from Texas during Covid and let me tell you, we missed being able to go have great bbq for lunch. When I heard there was a new Texas bbq trailer in town, we quickly hit them up and damn, we were so happy! It was legit! In the last year I have gotten to be great friends with the owners. It feels great to support to true family owned and operated business. The great bbq is just a bonus. If you have never been to Chuckwagon, you owe it to yourself to get there soon! Got "the holy trinity" for my family tonight, and we were NOT disappointed! The brisket was unbelievable. Soooo tender & juicy. Their sweet and spicy bbq sauce was top tier and the elote was gone in a flash! They also offer military and first responder discounts! 10/10 recommend.
