Romero's is one of the many Mexican/Southwestern style restaurants in Pueblo we haven't visited. So, we figured we should give it a try. We came early (we're old). There were only another couple in the place. Our server, a young woman, was pleasant and efficient. In the otherwise empty place, our order came almost instantly. It's clean and cheerful inside. A Mexican telenovella was playing muted on a TV screen. We ordered a specialty, the 'Rancho Grande'. It was a flat sopaipilla with meat, beans, cheese, tomatoes and onions. smothered in green chili. Lettuce topped it. The 'medium' chili was tasty, just the right hot. The serving was adequate, but not generous. My wife felt the meat was a bit sparse. In all, it was a competent dish. Romero's is, apparently famous for its burritos, particularly it's Monster Burrito. (I don't know if one gets a T-shirt for eating it) So, if one is looking for a decent local place, a bit out of the way, one should give Romero's a try.

I ordered a slopper just out of curiosity, not bad. Looked like a deconstructed hamburger with chili on it. I have NEVER had such poor service, anywhere EVER. The food was slow in coming. It took 15 minutes just to get a menu. The people at the table next to us got up and walked out. There seemed to be a lot of waitstaff but lacked organization. I will never go back ! When my wife went to pay the bill, our waitress was on her cell phone on a personal call, swiped the credit card, handed my wife the receipt to sign and never bothered to even look up. Horrible restaurant!

Foodies. Great customer service. The restaurant is known for its chili sauces. We ordered the Grande Platter to split and the lunch special with 2 tacos, rice, and beans. While there is a LOT of food, both plates were very short on flavor. The chicken was bland and salt made it better. The tamales were the best out of both dishes we ordered. The Green chili soup was good too so try that! Again, our server was great and made the experience good.

Man this hurts to have to write this not so good review for Romero's. Food isn't terrible from point but some in my breakfast club don't like the chili. The staff is friendly and they seem to have a big to go orders fir the burritos. It's the building itself. The women's restroom was a mess the toilets and sink still aren't repaired the running water was like this the last we were there and only gotten worse. The restaurant feels like it's yelling fir repairs and a modern look the dining is super dark lighting is awful. Fresh paint job with a brightness and rearranging the trophy case etc would be a huge plus.

I travel a few times a year to Pueblo to visit family. We've passed this joint several times before so we decided to eat here. Everyone ordered what they wanted and they LOVED their food. Monster burrito, dip, tostada, tacos, enchiladas. I ordered the beef stuffed sopapilla. It was truly bland, raw dough and barely there ground beef. Since everyone one loved their meal, I didn't say a word. Their mixed chili is REALLY good and their HOT Pueblo chili is a must have. We will try again this place but will not be ordering a stuffed sopapilla.You're welcome,Marilyn

My wife and I tried this place for breakfast. The fare is Mexican. They do a unique thing with the stuffed breakfast sopapilla, or at least I've never seen it done elsewhere. They basically stuff a sopapilla with eggs, potatoes, ham, etc... and smother it in green chili and cheese - very good. My wife had the breakfast burrito and was also quite pleased. I will say that the sopapilla gets soggy quickly so eat fast and don't try to save it for tomorrow unless you're an aficionado of soggy bread. The service was good. We were greeted and seated promptly despite the parking lot being full to overflowwing. If I were to nit pick, they were VERY busy and our waiter was also running that particular shift and was a bit distracted but very nice. The place was very clean including the bathrooms and the decor was lovely. I'd been in the building a few years back when it was Chevy's and they really chanced the look and feel of the place. The atmosphere definitely fits the food!

Smelled like sewer the minute you walked in. Went to the bathroom and almost barfed it smelled so bad! Chicken tacos on white were so dry you couldn't swallow a bite! Never going back!

We love supporting local businesses, especially during these hard times but this last experience has been one of the worst. We called in an order and everything we ordered on the menu was unavailable. We ended up getting chicken tacos, which were more like lettuce tacos with extremely stale taco shells. We also ordered a Mr Chile burrito, which turned out to be a dry chicken and chile burrito. This was not our usual experience. Very disappointed
