We've been here several times and have always enjoyed it but we dined for our first time for dinner service and it was fantastic. Mary was our server and she was kind, made great recommendations and gave us the perfect timely service.All of the food we tried was delicious. We tried so many things but our favorites were the spinach and artichoke dip, Arctic Char and the desserts oh my goodness. You have to try the chocolate cherry ganache. We had plenty of leftovers to enjoy as we finished our stay at the hot springs. It is a pricey meal but well worth it for the quality of food, service and location of course.

We stayed at the resort to enjoy the Hot Springs and Spa. I'm sad to report that the negative reviews are entirely true and accurate. We decided to stay at the resort and eat dinner and breakfast at the restaurant. Our reservation was at 2030 hrs. We waited 5 minutes to be seated but 15 or more for the server to come to our table. I had a good drink with Vodka, Chamomile, ginger, and honey. For starters, I had a Caesar salad, which I liked very much, and clam chowder soup was delicious. However, the clam chowder was entirely cold, so I had to return it to get it heated, and it was still not heated enough the second time. The bread service for $11 was a letdown. Our dinner reservation was at 8:30 PM. I enjoyed a Caesar salad, and the clam chowder soup was delicious. However, the clam chowder was served completely cold, so I had to send it back to get it heated. Unfortunately, it was still not heated enough the second time. The bread service, which cost $11, was disappointing as it consisted of a cold loaf of bread.Now, onto the steaks: Three of the five main courses we ordered were returned. My Elk, the 14er, and the ribeye (cowboy) were all raw. I appreciate a good medium-rare steak, but this was undercooked. Naturally, we sent them back, and it took almost 15 minutes to get them back. However, the Wagyu Burger with sweet potato fries was great! We asked for sweet potato fries, and the plate came with regular Fries.Additionally, our server neglected us for most of the evening, and we had to ask other staff members for assistance.The following day, we returned for breakfast, which was also incredibly disappointing in terms of service. My chilaquiles were delicious, but the French toast was not. We arrived around 9:00 AM, and once again, it took over 15 minutes for a server to greet us after we were seated. The breakfast server was slightly better than the dinner server, but she still lacked friendliness and warmth. She appeared to be in her late 60s, so perhaps she was just worn out.Overall, the restaurant experience was a disappointing aspect of an otherwise lovely resort. The restaurant's quality is subpar, and the staff seem overworked and tired, which indicates they are likely understaffed. For the prices we paid, we expected a top-tier experience and quality food; for instance, the Elk was $65. My total bill was close to 125 dollars including tip, for one person. **Negative Points:**- Credit cards are charged an additional 3.99%.- Finding parking can be difficult.- The atmosphere is lacking positive energy.- The dinner menu is overpriced for the quality and quantity of food.- Staff appear overwhelmed, in poor moods, tired, and understaffed.- Expect slow or overlooked service.**Positive Points:**- The view of the mountains from the restaurant is absolutely amazing.- There is a free parking lot available.

Nice dinner and the food was very good. Prices are quite high, but I understand, especially being up in the mountains. Service was good and they surprised us with a birthday treat which was beyond appreciated. Also dessert is a must. Definitely recommend making a reservation and coming here for a nice occasion.

Let me preface the 5 stars by saying your options are very limited in this area. With that said, you can have a delightful meal at the Mary Murphy Steak House.My wife and I recently visited while staying at the resort, which we do quite often. At the recommendation of some good friends, we gave it a try as I typically try to avoid hotel restaurants, long story.We were promptly seated upon our arrival and greeted by our waitress, who got our drinks going and recommended a nice wine for my wife. We started with the focaccia and quickly got our orders in.I ordered the pork chops, and my wife the duck breast. Our waitress recommended how the chef suggests the proteins be cooked, and my wife asked that the duck fat be well rendered.When the meal arrived, we were impressed as everything was cooked as requested. The pork chops were perfect, moist, and tender. The brussel sprouts were nicely caramelized and very tasty. The duck was also about perfect, fat rendered nicely but still medium rare at the center. Neither of us was overly full, so we decided to split a piece of carrot cake, which wasn't too special, but it wasn't bad either. It's just an average piece of cake with a few blackberries.Inside, the restaurant is dimly lit and a little dated, but with the fire burning, it was warm and cozy. Overall, it exceeded my expectations, and I look forward to returning to try their rack of lamb or the 14'r steak.

We had the amazing good fortune to be at Mt Princeton Hot Springs when chef Evan Anderson featured a 5 course tasting menu with wine pairing. The sommelier was also excellent, describing the wines and regions in a very relatable manner. Every dish hit the mark - expertly prepared and creative. The chef pulled off a very bold palette cleanser- lime coconut sorbet with ghost pepper. Extraordinary!

Service was great. Place is beautiful. But the food did not live up to the 320$ we spent unfortunately. We were really excited to eat here after looking at the menu. We got the 14er, the bison burger and the special for the night which was a steak pasta. We tried swapping dishes with one another to try to make it work :( The steak was wayyy undercooked. The mashed potatoes were SO SALTY. The bison burger was extremely dry. Bison dries out really easily when you don't know how to cook it so I get that it happens. But we expected different at a place like this. The steak pasta was odd. The pasta noodles were very nice. Fresh made egg noodles. The steak and peppers were good. But the thing that threw me off the most was the pasta sauce. It tasted like a brown gravy. It was just so strange with the pastaWe thought dessert could save us but it was all the basic stuff so we skipped. Nothing special.

My mom, my best friend, and I stayed at Mt. Princeton for the night, for my birthday. We had dinner reservations at 8:15pm. We ordered 2 Aperol sprits and they were okay, but could have used more Aperol for sure, however we could have asked for that. Then onto the salads. My friend got a Caesar salad and extra anchovies, but the salad was dry and there were only 3 anchovies. I'm not sure if there was just supposed to be 1 total, but that's not extra in my book. I got the wedge salad, which was probably the best thing off the whole menu. My mom got this awful beat salad that was unseasoned, frozen beats with a round block of goat cheese... I'm a chef at a restaurant in the Gunnison Valley, CO, so I'm positive I know what should be plated and how. This beat salad was horrible and should be removed from the menu, unless the beats are pickled and shredded into a nice, few strips and on top of fresh arugula. Then just sprinkle some loose goat cheese or strips of goat cheese as well. I understand if it was in the walk in, however that's not fresh and should not be served at a "high-end" restaurant as the staff claimed, as well as the prices insinuated. Onto the entrees: we ordered two entrees to share. The wagyu burger with truffle fries and a fish fillet with asparagus and some wack ass purple, unseasoned couscous. The fish tasted fishy and if you know about how fish should taste, it should not taste like it just came out of the water, or in this case, old and expired. The asparagus was stumpy and seemed like a scrawny stalk. The purple stuff was squishy and seemed like it was just for presentation, however it was not even presented well at all. We had to send the frozen beat salad and the fishy fish back. The wagyu burger was the safest option and I believe the one of the best dishes on the menu. Finally, our waitress' attitude was unprofessional and seemed like she was openly irritated with serving us. It's not our fault that the food was inedible, or her fault for that matter. If the chef was getting mad at her, maybe he/she should produce better and fresher plates. We also felt rushed to get out of there. If the kitchen closes at 8:45pm then they should relay that information when accepting a 8:15pm reservation, instead of pushing us out. The only nice thing she did was give me a free birthday dessert, which the blackberries on it tasted old as well. Overall, please order better products, I wouldn't serve these plates, even if that meant I had to say it was 86'd off the menu.
