My boyfriend and I were staying in an eco-tiny house outside of the town Florissant, CO where there are a total of 3-4 restaurants. The people from the grocery store suggested getting dinner at the food truck in the museum parking lot rather than the other establishments in town. We enjoyed our dinner so much we decided that we would get breakfast there on the way out of town. I was surprised I didn't find any reviews, so I thought I should write one. I did find this page for Margaret's Munchies, where you might otherwise have no idea that you can get breakfast and lunch, sandwiches and burritos. While other meats are offered, yak is their specialty.I'm not sure I've tried yak before but per Google, here are some of the benefits: "Yak meat is a healthy, lean protein that is lower in cholesterol and saturated fat than beef. It is also a more environmentally friendly option, since yaks require significantly less land and water than cattle. Ground yak meat is a versatile ingredient, and perfect for making burgers, tacos, meatballs, and more!"We each had the Yak steak sandwich with peppers and onions. Me being a former New Mexican, couldn't say no to a cup of the fresh green chile stew after asking about putting some on my sandwich. I'm very particular about French fries when I eat them; these were steak cut and had an amazing flavor. The next day, boyfriend got a breakfast sandwich on a hoagie roll and I got the breakfast burrito. I really appreciated the organic ingredients and that we could decide how much salt is appropriate.Margaret and the other folks operating the food truck were very gracious and nice to chat with. I learned that they've been around for about five years, and that Margaret is a baker by trade and later broke into the food-truck and catering business.Except when they are busy with catering and events, they said they are the only establishment in the are that has a fixed schedule. Soon, they will be expanding their operation into a building with full kitchen/dining area. This is amazing food made by amazing people, and I wish them all the best as their business expands!

I haven't had the opportunity to try any of Margaret's offerings yet because the hours posted online are incorrect- she' NOT open 7 days a week. I'm just posting this "review" to set the current hours: Thursday thru Sunday, 8-5. I will be back and will update this with a "real" review after I fill my belly.

If you are looking for great Homemade Foods.You Must try Margaret's Munchies! I was so happy when she has gotten a food Truck. She has a wide selection from Homemade soups, Biscuits & Gravy, Sandwiches (made with her homemade Bread), and a yummy variety of Baked Goods. I haven't been disappointed with anything she has made for me. My personal fav is her Monte Cristo Sandwich. YUM!!!
