Pretty solid burrito and taco place. They really load it up and it's perfect for post ski.

Fish tacos were amazing! Highly recommend the corn salsa with the fish tacos & white sauce. Fantastic combo!

Chimayo Grill is my go to spot for food every time I'm in the area. You usually can't go wrong with burritos/tacos, and Chimayo Grill serves perhaps the best Baja fish burritos you can find in the state.When you go to order, they will freshly deep fry your fish as you're building your burrito. While this means you have to wait for your food to cook, it is counterbalanced by the breakneck burrito building speed of the staff behind the counter! Moreover, they don't give you a scanty amount of fish either; they usually give 2-3 fillets per burrito.My only minor complaint is that they charge extra for sour cream, which is not usually something that is up-charged at most Mexican restaurants.

Yum! Stopped here for the first time the other day, and definitely will be back. Love that they have so many seafood options/styles (especially during the Lenten season); you can get fish or shrimp, prepared fried, grilled cajun or garlic. They also have Chile Rellenos as an add on item. Tacos come with corn tortillas, and there's an upgrade charge for flour. I opted to do that for only one of my tacos, but given my fondness for all of the fresh salad like toppings, I would probably go all flour next time (greater structural integrity. Ha.). Get the Chimayo sauce for a nice flavor punch!

We stopped in here last night and it was so delicious! I got the chicken burrito and it was fire They have a wide variety of options for everyone, no matter what you like! It was a bit of a wait, but that was just because the line was outside the door! The workers were super nice to everyone even though they were super busy. The only thing that wasn't great was that it was kind of a mess, trashcan were overflowing and there were some spills on the ground. But otherwise it was amazing and I would definitely recommend it!

This place is my favorite go to for fish tacos. Simply delicious! The white sauce brings all the flavors together into a perfect taco. Just amazing. They also offer burritos and a variety of meats and toppings. The chips and guacamole are average - nothing to write home about, but it's the burritos and tacos that exceeded expectations.The setting is fast casual-create your own. Staff have always been friendly. Highly recommended to try if passing through.

Coming back here to say this is still an excellent choice! We ordered a Baja Fish Burrito, Grilled Cajun Shrimp Tacos, and Grilled Cajun Shrimp Burrito. Absolutely delicious! What is truly fantastic about this spot is the freshness of their seafood and that everything is cooked to order. The shrimp were so flavorful and there were generous servings of fish and shrimp in all dishes! The additional toppings were also all full of flavor and incredibly fresh - thank goodness for fresh and spicy jalapeños!

Nestled in the wonderful town of Dillon, never would you have guessed Chimayo has the best fish tacos and shrimp burritos in Summit County! The shrimp is always crispy made fresh to order, same for the fish. I love that they have so many options of tortillas, meats, veggies, sauces--- this place got OPTIONS! Love the workers, theyre so nice and you can tell the cooks made the food with LOVE. My absolute favorite thing are the aerial maps of the nearby ski resorts hanging on the wall! Super cute.

The best burrito I've had in a long time! Line was long when we walked in but went by quickly. Service very friendly and quick to make my burrito. Got a cajun shrimp burrito and chips with queso&salsa. Everything was fresh and delicious. Chimayo sauce is a must!!!!!!

CLEAN, FRESH, & DELICIOUS! As someone with a Gluten allergy I felt very safe eating here due to their conscious cleanliness. Watched the people preparing the food change gloves between allergens. Did I mention delicious? I got shrimp tacos with a side of rice and beans and it was wonderful! The employees were also so kind! 10/10
