This is my second time trying this restaurant. I remember when this lunch place was packed on weekdays noon with customers. No more. The owners have spent a lot of money decorating the inside, and did a good job. On the day we came at lunchtime, we were the only customers, and I know why. First, the floors are painted glossy black. The floor was all tracked up with footprints in the common area and under every table. The outside temp was 12 degrees with snow yesterday. The inside temperature was 55 degrees and I'm glad I was dressed for the outside. Even the waitress was wearing an extra sweater. Both times here, there was an off putting smell to the premise akin to that of rotting meat. Otherwise the place was clean and bright. We ordered chips and salsa ($4), and Patron Cadillac margaritas ($15 ea). The margaritas were great, even tho served in a bourbon rocks glass. We ordered our food, and waited. We had to remind the waitress to bring the chips, and she said she forgot. The chips she did bring were excellent, large and homemade and a lot of them. The salsa was homemade and good.The foreground music was a mix of old Mexican music, interspersed curiously with music from the rock band Haim. I don't get the Mexican correlation, and the volume was way loud for background music. Our Carne Adovado fried burritos came out on too small a plate (see photo). It was impossible to eat the food without spilling out on the table. This restaurant serves fideo (thin spaghetti soaked in tomato sauce) rather than rice. The fideo could have been taken out of a can, as the noodles didn't taste fried. The refried beans were homemade, but, because it was so cold in the restaurant, all the food chilled rapidly, making it gloppy, and was then inedible. We had to remind our waitress to bring the sour cream we ordered, because she said she "forgot". The carne adovado was very spicy, but there was a good amount of pork chunks inside. The avocado/tomatillo sauce inside wasokay. The "Christmas" sauce over the burrito was okay, but a little heavy on the cumin. A second identical margarita was ordered, but it was quite different from the first. I would expect that it would be identical, being made by the same person and all. Side waters were served in Mason jars with handles, just like in the sticks. As we were leaving, the waitress was sitting down behind the bar. Time to lean/clean must be a fantasy here.

I think someone from the restaurant creates fake profiles on Yelp to create the good reviews which led me to the place after I read them. The atmosphere is cool with a really neat mural as soon as you walk in on the left-hand side and the staff was very friendly. I tried this place and went with their recommended dish which was the carne adobado (the chef's or lead bartender's brother's specialty). Very greasy and rich and extremely salty. The chips are good, but the salsa tastes like they pour in seasonings which also makes it very very salty, and in my experience with a good authentic salsa, all you taste is fresh ingredients.

Torn on my rating. Wish Yelp would add a way to do a half star rating. Chile Colorado would get a 2.5 from me. Not great but not a bust either. The restaurant looks really cool. I really dug the graffiti mural. I kept checking it out during our visit. Brightly lit and colorful space. Service was slooow. We had 4 people in our party, one of which we were waiting for. Our server basically waited until our 4th person came to get the ball rolling. Would have liked to get drinks and apps started. When we asked for "a minute" server tended to come back 10 minutes later each time. While I appreciate not being hounded, the slow pace was a little too slow. Food. Rather "eh". Everyone liked the chips and salsa, and sadly that was our highlight. I had the slopper, the pork green chile was crazy salty, like off-puttingly so. The fries could have been excellent but were not fully cooked. The rice - took one bite and was like "nope". Everyone liked their margs and the price was right.I think Chile Colorado has potential. Killer spot near the Pikes Peak Center. I won't likely be back unless I have a friend who can vouch for a better experience.

This place is a vibe! The customer service and the music was A1. They had the old school music playing I needed the playlist bad lol. The chips and trip dip came out. I was pleased to see that the chips were homemade and very crunchy. The dips were pretty tasty and the combination of the three together were even better lol. They didn't have a burrito that didn't have any meat since they beans are made with meat I had to opt for the Cheese Enchiladas and rice. It was good but I have a feeling the burrito would've been a lot better. We were too full for dessert but it's a place that is now added to the list so we'll be back for sure!

Food on New Years day is really tough to find, GOOD FOOD on New Years day, almost impossible! Big shout out to Chile Colorado for being open and nice on 1/1/2024! We ordered 3 carne asada tacos, a carne asada burrito smothered christmas style (green and red chile sauce) and chips salsa/guac/queso. All was delish! I loved that they made it all fresh to order. Our waitress was really chill and the music was popping. They played Bad Bunny and Marc Anthony while we were eating and I couldn't have been happier. Would totally recommend this place and come back myself!

I love this restaurant!! I have eaten here twice and it has been nothing. Short of amazing. Their Chile Relleno are so unbelievably good. We also had their fruity pebbles fried ice cream and the cinnamon honey one and it was amazing! Wasn't over powering. Perfectly balanced. The service was amazing. I love how authentic the food is here. It's family owned and operated. The ambiance is very friendly and inviting. I highly recommend this restaurant
