Carlos Bistro

Best customer service I've ever had at a restaurant. The owner met us outside in the parking lot and knew our names just from our reservation. Food and staff were amazing, very expensive, but worth it for a special occasion!

Immediately after being seated, the owner has already come up to us to ask our names, which I knew was a great sign. Although it is a smaller space, it was a very comfortable and romantic setting for dinner. We ordered the chicken wings, mussels and clams, and chicken carbonara to start, which were all delicious. For our mains, we had the shrimp creole and the Peruvian ribeye. Everything was good, but the shrimp creole was more mustard than creole seasonings. My only complaint would have to be their signature plating of microgreens and veggies on every dish was not necessary on the pastas. Overall, a great experience in the Springs.

We really liked Carlos Bistro. After some less successful dining in the Colorado Springs area, we happened upon Carlos after hiking in Garden of the Gods. We were early (4 PM) and Carlo greeted us at the door and enthusiastically told us about his global adventures as well as the finer points of the menu.Olga got the foie gras appetizer and the lamb chops and I ordered the lobster salad and the lomo saltado (a South American steak). We were both very impressed with our meals. The wine list was extensive and reasonably priced.Carlos Bistro is a high-end restaurant with excellent food, service, and ambience. We recommend it to anyone with a sufficient budget.

Highly recommended! I would put this in our top five all time meals and we have been to many great places. Carlos is so inviting and loves to stop by and educate you on his delicious dishes. The staff is incredible!!!! They worked so hard and were so attentive to not only the ten of us but the entire restaurant. We loved it so much we can't wait to go back to try it again. Beautiful restaurant, beautiful staff, beautiful food and drinks!

The customer service and friendly atmosphere that we experienced at Carlos is rare to find in today's restaurant experience. We were greeted none other than Carlo himself and were treated to a fantastic fine dining experience during our time in Colorado Springs. The menu was unique, wine list solid and food was delicious and we had a wonderful time. We had the recommend this restaurant to anybody in the Colorado Springs area.

I get so excited to come here and leave glowing and joyous. I feel so welcome, they always make an effort to know our names and remember that we've come before. I feel like family. Food is amazing. I get my steak well done and it's so tender! It's never too loud and is always clean. I can't wait to come again! Spent my anniversary with my boyfriend here and will probably go here for the next!

Very nice - we had read reviews of items overly priced but management has redone the menu price structure. The owner is super attentive. The staff very friendly. The food we ordered was nice. We would go back again

The best dining experience and food! From atmosphere, friendly staff, the owner and exquisite presentation of food.....hands down one of the most amazing hidden gems of Colorado Springs! The lobster bisque is the best I have ever had!
