Wonderful experience! We had the salad (great dressing, fresh lettuce. I would have waved more avocado and tomatoes), the scallops (replacing seabass. Very good dish, though small), and the famous short ribs (wow!).Cocktails were met, but did the job ;)

Our favorite spot in Summit County. It is pricey but if you are on a budget then hit the Happy Hour! (2-for-1!!!). Everything we've ordered here is top notch. The drinks are always well made and we LOVE their non-alcohol options too (Ginger Spice : ). Appetizers are varied and tasty (Shumai, Bao, Flatbreads). Service is always 5 Stars. The bar/lounge is super casual (i.e.ski pants and hats) while the dining room is a touch on the posh side which was perfect for celebrating a family birthday.

Food (5/5): Everything was delicious. I loved the vinaigrette for the salad, very light and vibrant. Sea bass was very tender and the squash puree compliments it perfectly. I believe the star of the night was definitely the pork chop. This was their special pork chop for the night, not the sakura pork chop that you would see on the menu. But the pork itself was cooked to perfection. Juicy, tender, delicious. It was topped with a berry reduction which helped lighten the dish. They fried a whole batch of oyster mushrooms which was PACKED with flavor. Definitely get it if they still serve it. Ambience (5/5): Nice upscale environment. Interior decor was nice. Perfect place to go on a date. Service (5/5): Standard great service that you would expect from a high end restaurant. They offer to take your coat upon entry. Also very attentive - my water cup was constantly full. Overall, I would highly recommend!

Absolutely LOVED this restaurant! It was clean and decorated for Christmas. We tried their flatbread which had delicious pork belly on it! The balsamic dressing was a nice touch! The Heluka baby back ribs had tasty meat that fell off the bone! They were cooked to perfection. Bartender was attentive to us and made excellent cocktails. I wished I lived closer because I would love to go back and try other things on their menu!

This place is very cute and classy, definitely great for a date night or birthday celebration. We ordered the sea bass and the pork chop special off the menu. The sea bass was very buttery soft and came with delicious sides. My pork chop was cooked perfectly and pair really well with the berry reduction sauce. My dish also came with a giant crispy oyster mushroom tempura and fried sushi rice. The sushi rice was pretty addicting, chewy and vinegary, so good. Our servers were also really nice. Glad we walked into this restaurant on a weekday night.

What a beautiful restaurant with a relaxing bar, lounge and patio. The dining room is huge, but has these cozy little booths and there are windows with views all over. Bistro North is located in the shopping area near the highway in Dillon, but you don't notice that at all once you walk inside. It feels light and airy and modern- yet relaxed. Great service from David. We had escargot with blue cheese for our starter, plus bison short ribs and salmon for our mains and crème brulè for dessert. The entrees are pricey, but the quality is excellent and it is totally worth it. We had a lovely memorable night with our friends.

For appetizer, we tried the wagyu shumai which was good but more like a wonton. The cheese was a little too overpowering for me. For the mains, if you like pork chop, I highly recommend you get it! The apple bacon jam really made the dish. Even the mashed potatoes and spinach was good. Otherwise, I recommend the bison ribs. They didn't taste gamey at all, and really just fell right off the bone! They cook it for 8 hours which is why you get the rich flavor. The drinks were great, highly recommend you try a few cocktails! They also offer mocktails. Love the relaxed upscale ambiance.

Incredible service and ambience for the upscale spot and Dillon. Mocktails and cocktails are on point and everything is as homemade as possible, yup food, infused liquors, and craft cocktails. Lovely guitar is playing on a Wednesday night. Atmosphere was mountain, casual, and lively, but not too loud. The food. Not many options for vegetarians, but we could make do so. I tapped into my pescatarian self and had the sweet and spicy shrimp as an entrée and really enjoyed its preparation and presentation. The sauce is served on the side almost like a consommé and it was absolutely delicious. Just got too rich because I didn't realize shrimp was fried. I thought they were gonna be grilled so still very nice. My husband had the fillet shumai and finished four of the wontons. We shared the brie plate and it was very tasty. We ended up adding one more piece of focaccia. It was delicious. The husband had the ribs he really loved the polenta that it was served on and you can definitely tell they cooked it for 20 hours. We had the tiramisu dessert but took it to go but really enjoyed it when we got home. They have it in-house pastry chef, and it is definitely demonstrated pastry art! Would definitely come back!

By far the best restaurant in the Dillon/Silerthorne/Keystone area of Summit County. The food is top notch and the restaurant offers fantastic service with a great atmosphere (especially in the bar area). The menu reads like a fine dining experience and the quality and flavor of the food backs up the expectations built by reading the menu. However true to the name, it does have a bistro atmosphere so it is more laid back than a fine dining restaurant, which is great in our opinion. It is an out building in a strip mall, which does detract from the experience as you walk into the restaurant, but once inside that piece is quickly forgotten. In terms of food specifics, the filet mignon shumai was one of the best share plate / appetizers we have eaten. Very interesting explosion of flavor as the bite comes together with filet, Gorgonzola cheese and Thai chili butter. Very tasty and a must order. The bao buns and ribs are also fantastic, as well as the steak salad. Great choices throughout the menu. This is a must visit for anyone visiting Summit County looking for an u expected dining experience while in the mountains.
