Adorable large coffee shop with what looks like lots of neat places to sit and sip. I got one of their seasonal lattes, GOB, to go. It was lovely! they were pretty busy when I arrived and the batista were handling the crowd very well. Took my order and made my drink all in a reasonable time period. I did not see their breakfast and lunch menu until after I ordered as it isn't posted. Looks like they switch up the offerings which is always a sign of a place I'd want to eat at. I will be back when I have more time to eat and enjoy the vibe.

I made a pit stop here on the way to Bent's Fort. I LOVE the look and feel of this place. This is the type of coffee shop I love visiting and spending time in. I ordered a 12 ounce dark coffee. I passed on food. There is a nice display case with various pastries at the ordering area. This hits you immediately when entering the coffee shop.I noticed they had a favorite, bear claws. They also offer other food items from their menu. Coffee was great! Nice and earthy. Staff was friendly and service was good. It didn't take long to get my coffee shortly after I ordered it. I spent some time in this wonderful nook, at the rear of the coffee shop. You ascend a small flight of stairs where there is a nice lounge area with plenty of seating. This is a nice area to socialize with family or friends. Personally, I enjoyed that it was quiet during my visit.The building itself has a nice old school feel to it. I loved the gypsy memorabilia and art work. I would love to spend more time here. When I'm passing through or by Pueblo, I will definitely stop by for a visit. Brilliant job making great use of an older building.If you're passing through or spending time in Pueblo, I recommend checking out Gypsy Java. Especially if you have a gypsy type spirit!

They were under construction when we visited which meant less seating. Staff were apologetic about the construction. The coffee and tea were good, but the food was a little disappointing. Had a good time hanging out there with some friends and family, though.

The best little coffee place off I-25 with a river nearby and cute small town ambiance in the neighborhood. Awesome menu of coffee and eats with vegan options. So charming, service is so friendly, the pastries are bakes in house and so beautiful! Thank you to the crew at Gypsy Javas!

I was disappointed. Love the atmosphere & maybe the issues are due to this being a holiday weekend, so will give it another try. I ordered the avacado toast, and it was great that they had both bread & gluten free, but it was not toasted at all & the smear of avacado had no salt, pepper or dash of lemon & I didn't see any condiments on the tables. I'm sure they have them somewhere. The water, where you fill your own was empty & they were busy, so was prepared to go without, but they filled it right away. My friend ordered the Breakfast burrito & picked all the potatoes out because they were cold. The menu looks great, the staff was busy yet still very nice, the building has so much character & I'm hoping the non-toasted toast & cold potatoes was just a one-off.

Great coffee excellent ambience location and fabulous staff. Absolutely worst attempt at avocado toast I've ever seen. Big chunk of white bread Not fully toasted with a little avocado smeared in. One bite and threw it in the trash.

We stopped for some coffee beans. The house blend was wonderful. The staff seemed a bit inexperienced but they were all very friendly. A little more knowledge about various ways to make coffee (aeropress?) would be helpful. And disorganization behind the counter made for a longer wait. Still, I highly recommend stopping by for a drink or some beans.
