I am not a religious man, but I firmly believe that as fish live, they dream of becoming sushi at Omakase by Primefish. It is their mecca, their nirvana. Primefish represents the pinnacle of a life well lived.Primefish honors this life, giving it meaning, purpose, and recognition.I have dined at Primefish at least 27 times, beginning with their pop-ups and attending quarterly, as well as frequently enjoying their lunches when time permits.I have been beyond impressed and moved--not only by their sushi but by the audacity of introducing a wine pairing with such perfect execution, further cementing their Michelin-star-worthy experience.Their Ultimate Wine Pairing is a pitch-perfect crescendo to each bite, unveiling an additional layer of flavor.As you can tell, I am beyond impressed with Chef Robin. Good food, but not worth the price. The dishes were well crafted, but overall it didn't provide the unique/high end experience I was expecting. My favorites were the bluefin tuna and king salmon. The musk melon for dessert was AMAZING. One of the best dining experiences in CLT. We came for lunch which is ten courses and lasts 1-1.5 hours. Our menu had fish from all around the world and included two starters, eight nigiri (one of which was A5 wagyu), and a complimentary piece of the world's most expensive melon aka musk melon. Watching Chef prepare each dish at the intimate six seater bar was part of the fun. His passion comes through in the food and every single thing we ate was delicious. We love Prime in Ballantyne so this was no surprise. Next up - the yakitori omakase at Nusa.

I have not yet visited, but they were at the Charlotte StreEats event yesterday. And in case anyone was wondering how Omakase can charge what they do for the Sushi Dining Experience... that scallop dish provided the answer. My taste buds felt like they had gone deep sea diving (NUDE) the minute it hit my tongue!It was amazing

This was one of the best meals I've ever had and probably top 1-3 omakases and I've tried about 30 or more across various cities. I was just stunned by the quality of the fish, the rice was perfection and it comes with alcohol too. It was just insane. Also great value for what it is!!!!

Phenomenal! My husband treated me to this amazing experience for our anniversary, it was worth every penny! Our standards are high especially when it comes to sushi and this hit every mark! I was a little nervous not being in control of what I was going to eat, but I tried things just probably would never had ordered on my own and now I can say I would eat these items with no hesitation. It was very hard to decide which was my favorite course, I'm torn between the scallop with caviar, soft shell crab or Wagyu with truffles. The entire experience was pleasurable, Chef Robin, his wife and the sommelier, were all attentive, had wonderful conversations with us, very knowledgeable, recommended other places for us to try. All in all this was probably the best dining experience I have ever encountered. Well done Chef!

The team behind Prime Fish opened a new location for their omakase experience in Charlotte, which is the first Edomae style omakase in North Carolina. I've been to several omakase by the Prime Fish team but I'm proud to say the new experience is one of the best omakases I've experienced globally. It's definitely in my top 3. (It's so good I went twice this month - oops).This experience is not for everyone though. It is tailored to sushi connoisseurs, who would really appreciate the quality. Itamae Robin flies most of the fish in from Japan, along with other key ingredients, like the rice, vinegar, and wasabi root. Even the hand painted dishware comes from Japan. Of course, this quality comes at a cost. The experience starts at $300 per person.The space itself is very traditional. Filled with natural wood, the design is clean, simple, and intimate. The restaurant will offer two seatings a night, where up to 8 people can enjoy 16 blissful courses.The menu changes seasonally to showcase the best fish available, so depending on when you go, the menu may feature anything from Rosemary Smoked Otoro to Black Sea Pearch on Uni Rice to braised Giant Pacific Octopus to A5 Wagyu topped with Uni, Black Truffle and Caviar. (The A5 Wagyu even has a certificate of authenticity, complete with serial number).Reservations are made through Tock - making it super easy to book. You prepay in full, which is nice, so you don't have to think about anything during the meal. If you can manage a reservation though, you'll be treated to an incredible show of culinary genius, with some of the best quality fish you've ever eaten.It's also important to note that itamae Robin is a certified Sake adviser, which is like a sommelier for sake. While alcohol is an additional cost (selections made while dining), chef Robin has curated the perfect collection to pair with his creations.To make a long story short, for anyone as obsessed with sushi as I am, I highly recommend this experience!!

We made a reservation for lunch omakase and, by an honest mistake, went to the other PrimeFish location in Ballantyne. Despite calling multiple times to reschedule or arrange a later seating, the hostess eventually called back but refused to accommodate us. Her only suggestion was to try to make it to the correct location--45 minutes away--an impractical and dismissive solution.When we asked about rescheduling, she pointed to their rigid 72-hour cancellation policy. This policy is far stricter than what we've experienced at other high-end restaurants. For a restaurant branding itself as upscale, this lack of flexibility and unwillingness to work with customers is disappointing and unacceptable.Customer service should be a top priority in this tier of dining. If this is how they treat customers on the phone, I hesitate to imagine the service during the meal. With so many phenomenal sushi options in Charlotte that actually value their guests--like O-Ku, Pisces, Hestia, or even the other PrimeFish location--I strongly advise against making a reservation here. This experience in our case was non-existent and a complete letdown. Happy birthday to me, minus $300.
