Went to Chan awhile back for SRW to try out their menu. In my experience, SRW is always similar pricing to happy hour, but SRW menus have a bit more to choose from. I wasn't sure what I was expecting when I came to Chan, and still left without a clear idea of what flavors I tasted. Could see the Korean influence, but don't know where the other influences were coming from. Steak tartare - This was very flavorful, almost to the point it was salty. This was a big portion, enough to share between two. Crispy Jidori - Reminds me of high end bibimguksu, but with the texture of instant noodles instead. I enjoyed this the most, had good amount of sauce to noodle ratioFried Pork Collar - The pureed edamame at the bottom was not my favorite. The fried pork collar didn't taste like much either, felt like it wasn't seasoned. Braised black cod - Very salty, the daikon on the bottom soaked up much of the flavor and was like eating a salt brick. The cod was a bit bland, but paired with the daikon, it works. This would go well with rice.Honestly, the dessert was the best part of the meal. Very creamy and clear taste of matcha/caramel in both desserts.

I really loved the ambiance of this place - it was very classy, chill, and modern looking. It's a great date place! They divide their place into two sections; one for happy hour, and other just for regular dining. I forgot to tell the waiter that so he sat us in the regular dining area. But once we told him, he graciously allowed us to sit in the regular dining area, despite us telling him we were there for happy hour. After looking at some Yelp pictures, I realized that the portions for the happy hour were pretty small, so I decided to get food from the regular menu at the end. Ok, enough storytelling! I got two small dishes - Beef sliders and Deep Fried Rice Cakes. I was slightly surprised at the Beef sliders - I guess I expected more, based on people raving about it? It was only very warm when I got it, and I was expecting it to be super hot. The flavor, especially from the beef, didn't quite pop out as much as I was hoping. It just tasted like a pretty good slider, nothing too special. Don't get me wrong - it was good, but I guess I expected slightly more. The kimchi was a nice touch to it, though, and the bun was soft. I think the reason why I really wish the beef itself was really nice and hot was so the cucumber kimchi could really contrast from the heat of the beef. But the presentation was beautiful! The Deep Fried Rice Cake was good! I'm allergic to peanuts, so I didn't have them on mine, which I have a feeling would have given it an extra pop. But the service was really great - the chefs and waiters were super gracious and conversational. I think I'd like to come back here again sometime and try their larger dishes.

Chan was close to our hotel, so we went there one day for lunch and another day for dinner. Both experiences were good. The burger and fries were tasty that I had for lunch and I enjoyed the salmon and brussel sprouts for dinner. The service is good, the ambiance is cozy and the prices are standard.

I'm surprised I didn't have a previous review of Chan to update and this is the first one. Chan has been my favorite Korean food in Seattle for years when it was at the old location by the waterfront. The hangover soup was my absolute favorite, along with the chicken wings and bulgogi sliders. Chan has since moved into The Paramount Hotel and just celebrated its 1st anniversary in the new space. I hadn't been back in a while because I avoid gluten, soy, grains, and many other ingredients to manage autoimmune symptoms now, but decided to make an exception for the event and it was worth the cheat for me. We all have to decide where our thresholds and deficits are regarding health. The menu has changed since the move, but some old favorites are still on it and the new additions look appealing. I was not planning on going to Chan last night but saw an IG reel about the anniversary dinner buffet and impulsively made a reservation. The buffet dinner had the option of a wagyu coulotte or braised AK black cod, I chose the wagyu. It was tender, perfect temp throughout, and indulgent. It was being served with ssam (lettuce for wrapping, bean paste, chopped garlic and jalapenos), but I skipped it. There was kalbi, kimchi, a station to make your own bibimbap, desserts. I got some of the bulgogi, pork belly, and a bulgogi slider, all were so good. Also enjoyed the misugaru cannoli and black sesame cannoli with some tea. I was in Laine's (sorry if the spellings wrong) section and we chatted for a minute about the food and Chan's history, she was wonderful.

Alaskan sole was very good and love the crunchy rice Napa salad. Beautiful restaurant with comfortable seating. Great dinner spot for before a show at the paramount.

A solid 4 star restaurant! They're located inside a hotel, so it can be a little easy to miss from the outside. We came here with a reservation on restaurant week, where they offer a few options for a 3 course meal for $50. The menu I saw online for restaurant week was different than the one we were given once seated, however, so we opted to just order a la carte instead. We chose to sit at the chefs table, which we thought would mean a view of the kitchen, but it wasn't really the case - it was more just in the same room as them,We got the bone marrow, black cod, and king salmon solsot to share amongst the two of us, which was just the right amount of food. Without the solsot however, it would definitely have been too little. The bone marrow came out first and seemed large, but there wasn't that much stuff on the bone - to be fair though this was my first time trying bone marrow as a dish and I wasn't really sure what to expect. The brioche bread it was served with was nice and buttery, which did help absorb the richness in flavor of the marrow which was yummy. The black cod was also delicious - we got the smaller portion, and it was small but still great. The sauce was unbelievably good, as it was the perfect amount of savory and umami to coat the tender fish. It was served on top of tender radish which also soaked up the sauce really nicely. Finally, the salmon solsot was the real filler. They mix it in front of you and also give you small seaweed sheets and gochujang sauce to eat with it. The bowl they serve it in looks small but it's actually such a large portion. I loved the gochujang sauce and everything mixed together.Service was super attentive all night, and they really paid attention to what we needed, Overall, we had a great experience and would recommend if you're looking for some elevated korean inspired dishes!

Really great! This is a spot that I would absolutely recommend and revisit in the area. I wouldn't necessarily go out of my way or save this for a special occasion (which is why 4 vs 5 stars). But very impressed with the food and am excited to go back.We had the soy cured king salmon and it was bonkers good. Beautiful presentation, great contrast of ingredients, it felt like the perfect refreshing starter to the meal. We then shared the pork sliders. This wasn't as exciting for me - the pork wasn't spicy at all (as described) and the ratio of ingredients with the fluffy brioche bun was off. It worked better open face for me. I would have also doubled the pickled radish and spice for a bigger flavor experience. Overall it's very approachable and reminded me of an American style sloppy Joe so I expect this would be a crowd pleaser (just a bit tame for me).The drinks were delicious and I loved the incorporation of Soju in the cocktail list. Service was rushed but friendly and fun. We arrived without a reservation at 7pm in a Saturday so it was incredible that they could even squeeze us in!Overall this was a super fun surprise of a spot inside a hotel downtown and I recommend it. Give it a try!

I loved every minute of my meal and experience here!I stopped by with my partner around 7pm on a Thursday without reservations. We were seated promptly closer to the bar/hotel entrance to the restaurant though that didn't diminish our experience here. I ordered a glass of wine and we got down to business ordering. We got the spicy deep fried rice cakes as a starter and got so much more than I expected. The portions really do not miss here! We got the grilled black angus sot bap to split and it was the perfect size meal for the two of us. The meat was perfectly cooked and I loved that everything mixed together as well. It was ridiculously delicious and I could not get enough - especially when pairing with the gochujang and seaweed sheets. Everything else was so delicious we had to get a dessert and got the caramel custard. It was so fire I would come back to visit Seattle again just to have this dang dish. Highly highly recommend!! Side note: all of the stone ware pots really elevated this meal for me!

I visited to try out the Happy Hour offerings, which are only available in the lounge. Seating in the lounge is ... a bit awkward. There are a handful of small tables perched between the bar and the hotel's front desk. I didn't get to see the actual dining room, which is praised in other reviews. Service was slow and had a few glitches; one of my dishes was delivered to another table. Again, this could be a side-effect of sitting in the lounge. On to the food. The Happy Hour menu features a variety of small plates for $10 each. The bulgogi sliders on Hawaiian sweet rolls were tasty, but too small. I felt like I barely got a chance to enjoy the variety of flavors involved. I could get a full serving of equally delicious bulgogi with banchan and rice elsewhere in the city for $12-15, so it didn't seem worthwhile. The Cauliflower Steak, on the other hand, had a unique flavor and texture. It was satisfying and absolutely worth the money. I also tried the 'Chan-Gria', a pleasantly sour-tangy take on a sangria. Maybe there was yuzu involved?I'm certainly wasn't a bad meal, but I was a bit disappointed compared to the rave reviews

Not your average Korean food! We came here on Valentine's day so they had a prefix menu in addition to the regular menu. The prefix menu featured the same dishes as the regular one but at a smaller portion (for 1 person). The ambiance of the restaurant felt very high end even though the prices weren't too steep. Chan definitely makes for a good date spot :)Chan combines Korean dishes with a more western spin. Everything was super flavorful. But I highly recommend the sot bap. The rice was so buttery and had so much flavor. We got the steak one and it was super tender. The service was super attentive. We came early for our reservation but we're able to be seated right away.
