Canon has all the makings of a top tier cocktail bar. It actually was a world famous cocktail bar back in 2014 when it ranked in the top ten. However, after visiting, I understand their fall from worldly acclaim.Entering canon is like walking into the cocktail bar you wish you could always visit. The ambiance of the lighting, speakeasy wooden accents, and detailing ring perfect. You can only arrive with a group of four or less without a group reservation making the seating more intimate. Then come the drinks. As of June 2024, any classic cocktail is $16. That's fine, but their house creations start at $22 or higher. That's not fine. You aren't getting a cocktail with a $20+ value. It's almost like fun ingredients are added to seem edgy or different but nothing is added to the drink. This is true of some of the classics. A frozen pimm's cup is a good idea, just not in Seattle. A cocktail using Dimmi vermouth (banana stand) is a good idea, but I should taste the other ingredients. Their specialty cocktails are not only off balance, they're inaccesible by high price. You're likely paying extra money for their cute serving glasses (see my photos) and not for ingredients. See my other reviews from top cocktail bars around the world and you'll understand why this bar is filled with good ideas with draft execution. Having a good time here is easy, but it's not because of the drink quality - it's the atmosphere. There's tons of potential, but like JC Penny's, canon's time may have passed.

Came here on a Friday night around 10:30, to my surprise, we were able to secure a seat almost immediately.Staffs were friendly according to Seattle standard and the ambience is nice.However the quality of the cocktails seems to be taking a dip from what I remember. Two classic cocktails came out more diluted than we would normally prefer it, prolly will prioritize other venues if not looking for a cute place with fun vessels for drinks

Pros: Ambience/vibe was nice. Everyone seems happy to be here. Creative/innovated cocktails. Customer service was great despite how busy it was, that's what gives this place an extra star. Cons: Cocktails are pricey and taste is not great. I had the groot beer float which was very bitter. Was not impressed considering how pricey each cocktail is. Can get pretty crowded and have a wait time to geOverall it was a decent experience, but not mesmerizing to the point where I'll come back again.

This is probably one of my favorite new bars I've tried. The drinks were all really good and I had no complaints or critiques whatsoever. We would probably give the food a try next time and have some snacks. The drink menu is very unique too so there's something for everyone - including non-alcoholic/NA drinks. The servers were attentive and helpful. They had great recommendations as well. We walked up around 7ish on a Saturday for 2 and only had to wait about 20 minutes or so. We were at the standing bar table first until a table opened which was fine with us. It's a pretty cool space, though it's very small and cozy. The sheer number of bottles everywhere is kind of mind blowing. It's lively and fun as a date night spot or a group spot. That said, it is on the pricier end of drink spots ($22 average per cocktail) . I just felt the quality was good enough that I didn't mind the price tag. TLDR: would definitely go back for the unique drinks and snacks and be prepared for the price tag.

Canon has the best cocktails I've had in Seattle!! We got there on Friday evening around 5 pm and got seated at the bar after waiting for around 29 minutes. You can make a reservation in advance, they don't allow parties of more than 4. Our bartender was extremely knowledgeable about different spirits and we enjoyed talking to him about it. We ordered the phonatic, Mrs eales's receipt and campfire in Georgia. All the drinks were really impressive with layered flavors. Drinks are on the pricier side (~$24) but totally worth the price. They also have a huge selection of spirits (around 4000) including rare stuff.

Not often do you find bars that make creative cocktails that also taste amazing! Canon does just that and has easily become one of my favorites in Seattle. It's a great sit down bar with an impressive selection of drinks. We ordered the Lawn Boy and Whole Paycheck. I personally loved the Lawn Boy, which was on the more sweet/fruitier side and comes in a small bathtub with rose petals. The drinks are definitely on the pricier side, but are worth it for the experience. Will be visiting again!

Best bar in Seattle, hands down. You walk in and you feel like you are in a sacred sexy library of sorts. Everything we tasted here is amazing. My husband and I are on a quest to taste Old Fashioned Cocktails in bars wherever we go. Canon has the best OF drinks. They dont use ice in their Old Fashioned cocktails, which is how it is supposed to be (ice dilutes). Beyond the Old Fashion, they have amazing cocktails. From the classics, to the rare (vintage bottles pulled from their cellars), to the whimsical (a new Ken-inspired drink). The food is also amazing, a great acompanyment to their drinks. Lastly, the bartenders are amazing. So knowlegable and creative. Experts in their craft but still approachable (and not pretentious).

Loved the vibes!! The shelves of alcohol could literally be a liquor library. For a Monday evening, the place was packed but still super cozy. We ordered Lawn Boy and Groot Beer Float -- I personally enjoyed the sweet fruitiness of Lawn Boy, but my friend didn't particularly like her beer float. Lawn Boy was very visually appealing too: it came in a bathtub with rose petals and ice bits that looked like a bubble bath.

Parking is very easy on weekdays (except Friday), especially after 9 pm but it can get packed during weekends. Price came out to be around $100 for four drinks, it's on the pricier side but the presentation and concepts are good. We got the lawn boy, Shaballah, campfire in Georgia, and Snow White's bong. I'd recommend the first two for people who enjoy sweet drinks and the latter two for people who want something different. They have almost 5,000 labels in house so if you're a spirit enthusiast, this is the place for you. Great place to take a date after dinner but service can take a little long depending on how busy they are.
