I had a hankerin' for some "'Q" and thought I would check out Big Stick. I was really ready to like it. Unfortunately, my experience did not turn out as I had hoped. The space was comfortable, clean and made you feel like eating BBQ. Service was prompt and cheerful. Nice. I ordered the one-person Combo Plate. When it arrived, I was visually very pleased. The brisket looked great (nice smoke ring, bark, etc). Pulled pork was looked good, nice sides, etc. As I progressed through the stages of sampling each item I slowly, but consistently met with mildly disappointing foods. Everything was "slightly off". I couldn't taste the smoke, the ribs looked great but tasted like they were baked. Strange, I don't understand how that could be... they looked great. Dunno. Similar stories about the beans and Cole slaw. I like the restaurant ambience and would like to be fan of their food. I'll pass this occasion off as a combination of a "bad day" and my personal preferences. I'll wait awhile and try

I had the chance to try their food truck on a Friday evening at Stemma. Given that I've spent a disproportionate time in the Gulf Coast region, I was initially hesitant to venture into the world of PNW BBQ, but boy, am I glad I did! What initially drew me to this food cart as a frugal foodie was the excellent price point. $13 for x3 sliders of BBQ meat and varied toppings is hard to beat in this area. I was impressed with each of the slider flavors and thought that they were memorable in their own way, which I will wax on about below. The brisket blue came with some yummy blue cheese and the brisket was cooked wonderfully - I can honestly say I have never really thought of mixing blue cheese in with brisket like that, but they managed to pull it off. The "rissa" option was also fun and fresh, mixing pulled pork, brie, and jalapeno jelly. Once again, a unique cheese theme adored by turophiles everywhere such as myself! This slider, coupled with tasty jalapeno zing, was another winner. Lastly was the more classic pulled pork with coleslaw, which really hit the spot. Not to be forgotten is the bread, a subtle potato rosemary bun that elevated the sliders beyond your normal plain white bread slider. I look forward to returning whenever I need my local BBQ fix in town!

Big Stick: Food truck edition.Had the trio of sliders, brisket blue, the rissa, and the pork and slaw. Rosemary soft roll for all three. These are serious sliders. Brisket blue- brisket and homemade blue cheese sauce, my personal favorite. If you like brisket you'll like this slider, with or without the cheese. All three were really good, the pork was flavorful and moist, bbq sauce like it should be. Since the truck is at Stemma, the Czech beer pairs like it was meant to be.

Just before closing made it in the door. 6 months ago ai gave rave reviews. This time I say worst brisket I ever had. Dried and cut so uneven. The salad was good but I can do that myself blind folded. I was expensive for buying crap . I will not return a third time.shame on them not saying that they ran out of brisket and sold me scraps

Came in for a Sunday bite. Had the brisket sandwich, great smoke flavor, juicy and delicious. The sauce that accompanied the sandwich was either spicy or regular, I chose the spicy and it added a nice kick to the sandwich. Not too spicy just the tang and spice it needed.

Brisket, Brisket, Brisket! Loved it. Fork tender, nice crust, and excellent hint of smoke. Beans were very tasty, and the slaw was much loved by my partner. Could not quite figure out sauce. No matter, brisket was so good. Only issue, neither rolls or corn bread were gluten-free. No matter. The brisket was just that good. Add to that excellent service and the warehouse ambiance - we'll definitely be back next time in Bellingham.

Hit the food truck at Stemma. The weekend special was their version of the smash burger. I went for the double and a 6 piece serving of pork belly burnt ends for dessert. Kudos for chips on the side instead of fries, they went perfect with my meal. Pork was tasty and didn't need any extra sauce. The burger was amazing in its own special way. Perfectly formed patties that seemed to be shaped with crumbles. Rich, full beefy goodness that led me to believe butter was involved. I've had my share of burgers and this one was unique in the best possible way. I hope it makes its way to the full time menu roster. Thanks!

Heard about the brisket sandwich. I'm from Colorado where we get Texas barbecue. Nothing special here. Atmosphere is mediocre best. I wasn't impressed with the sandwich.

We each ordered combo plate and the Texas Reuben. The best bbq I have had to date. Tender pork, ribs delicious. Brisket tender and spicy. Cole slaw perfect sauce and awesome. The beans were sweet, spicy, vinegary, never tasted beans like that and have to say so yummy! Rosemary buns from owners own recipe. It's a bbq place so expect no waitresses, fancy ambiance, just American food at its best. Definitely returning!
