Don't miss out on this local gem! We are so blessed to have Tony and Ashley in our community. Not only do they provide wonderful service, staff, and amazing cuisine, they are beautiful people on the inside as well. Family First philosophy is prominent and welcomed.My mom was in town visiting and we decided to explore new places. I am kicking myself that I didn't get to Collision Course sooner! I had Mom's Dinner - complete with blackened fish topped with shrimp parmesan dip. I was able to choose two sides, so I went with collards and mac & cheese. The portion was healthy, especially for the price. My mom was adventurous and tried the Jack Fruit sandwich. Worth a try! She also enjoyed a side of mac & cheese.And, finally, our server, Isela, provided extra care. She informed us that she had only started the week before, but you would have never known it! She was very knowledgeable about all aspects of the menu and was very pleasant. I'll request her as my server the next time I go... Hopefully for brunch this Sunday!Follow them on social media - they have such fun, real content. And, support this sweet couple and their amazing staff as much as you can! You won't be disappointed!

Caroline and I found time to have a wonderful dinner at Collision Course, on Friday, October 25, 2024 - just days after its 'soft opening.'. The restaurant looks wonderful. Our server, Jahna, was super friendly, attentive, and it was fun to talk with her. Our dinners were superb. I had the grits with Cajun red peppers and onions, bacon crumbles, green onions, and blackened grilled fish. I am a serious grits aficionado, and I loved my dinner. Caroline had the 'soul bowl.' It was a dinner with creamy mac and cheese, topped with sweet potatoes, collard greens, and pulled pork. Caroline is a serious foodie, and she loved her dinner. (She watches all the cooking shows on TV.) It appears that our friends Ashley and Tony Gerald have hit a home run by bringing another great downtown destination to Westminster - a city that is already well known for great dining. Parking was easy to find. We parked in the Diffendal Parking Lot - across the street. The restaurant is family friendly, well-lit and well-appointed. It is wheelchair accessible. Locally owned by two wonderful owners that give back to the community. For a restaurant that is just getting off the ground, everything was perfect. The server was great. We did not have to wait long for our food to arrive, and it was delicious. THX Ashley and Tony for all your hard work. The pricing and items you see in this review may have changed by the time of the restaurant's opening***** TDLR Review **In Short, the food is typically in a Southern Fusion style. Taking classics like "Cheesy Grits" and making a whole menu item called "& Grits", with different proteins to choose from (vegetarian options available for some dishes as well, this one you can get Cajun Veggie or Jackfruit as the protein). They are always trying out new dishes and adding what works. For as small as the restaurant is, it has got a ton of personality, great staff, and their menu is huge considering how much food needs to be stored to even make half these dishes, yet they still find a way to give a diverse menu with options for most people. They are making things work with what they have and in my opinion, I feel like they have hit this out of the park. ** In Depth Review **Ever since my wife and I found out about Collision Course (when they were starting do brunch a couple years ago, while they waiting for the main restaurant to finish being built), we have been trying their food at all chances we have been able to. We have never been disappointed, and that goes for our time at the main restaurant off the main street this week during the preview event.The food is great. They love taking normal dishes and finding a way to put a spin on them, in the line of Southern Fusion cooking. My favorite example is the dish "& Grits" bowl. Instead of doing a traditional style Shrimp and Grits dish, instead they let you get the same loved grits with Silky Cheddar Grits Topped with Cajun Red Peppers & Onions, Bacon Crumbles, Green Onions and Light Broth with your choice of Protein (Grilled Shrimp, Grilled Chicken, Blackened Grilled Fish, Cajun Veggie, or Jackfruit. They are taking a single dish and making it accessible for all kinds of people to try out, which I love to see. My wife got the "& Grits" bowl, and I got the Fried Fish meal with Chessy Grits and Sweet Fries. Neither my wife and I or overly huge into fish, which is why we tried it. We figure if someone can make a dish we like, with a food item we aren't crazy about, then the rest of the menu is an easy win for our business for future trips. If you can make people like dishes they typically don't, then the rest of the menu will become favorites over time, or that is how I feel about it. We both were very impressed with the cooking and flavoring of the fish. The seasoning was heavy enough to bring a unique flavoring to the fish, without overpowering the dish or the rest of the fish. The cook was perfect as well, considering I had a thin piece of fish that was being fried, yet it came out flaky and moist with a nice crisp on the outside layer.Oh right, drinks. So, my wife and I got a few mixed drinks to try out tonight. We had the "The Blueprint", "It's a Vibe", and "Purple Rain". All three drinks were good, but our favorite was "It's A Vibe". They also have a small beer and wine list, so there are drinks for everyone. Wish the space to store everything, they do their best to provide options for all types of guests. Keeping in mind that we came on Preview night, and the restaurant staff is still in training, they still did a great job. They were always polite and accommodating to any requests we had. With the layout of the restaurant, it was easy for them to see which of their tables needed help and which were good. Anytime they ran into an issue they were unable to figure it out, they were very polite in explaining the situation and then quickly got a resolution to the problem.The atmosphere of the restaurant is very calming and nice during the day, and quite moody in a romantic, yet I can just chill and enjoy my food vibe with the way the lights dim to the red walls of the interior. They have an awesome custom metal art piece that is just waiting for lights to be installed, that is so cool. Personally, if you can't tell, I am a fan and will be a customer moving forward.My recommendation is to at least give them a try if any of the items on the menu look good to you. They still do Brunch on the weekends when they have time at River downs golf course, and they do lunch Mon-Fri over a tech court in Westminster, MD. Although there are some common items between the locations, they are each their own unique experience. This super cool restaurant is tucked away on Main Street in Westminster. We've been for brunch and dinner and both were excellent. The hush puppies are amazing, shrimp and grits did not disappoint, but the Mac bowl with Caribbean chicken is probably my favorite. The service was top notch- our waiters have been friendly and attentive and food came out at the perfect time. It's a relaxed place but has a great ambiance. Highly recommend!!

Got to eat at the Westminster Main Street Collision Course restaurant last night and it was excellent - tables ready and available and service was very attentive. The food was delicious! Had the BBQ egg rolls and the shrimp and grits which was delicious also. Got to talk to Ashley and she says "Come on down...we would love to serve you this holiday season!"

First time but def won't be the last time! Everything was really good. Staff was attentive, chef and owners casually checked in to see how things were going. Timing was perfect for apps and entrees. Shrimp and grits was amazing! Seriously good yall! Grilled fish was great--collared greens as a side was super good. It's surprisingly difficult to make a really bang'n greens but CC has done it. They have Pipe the Side Brewing Co. beers on tap. Great experience--can't wait to return!

Fantastic first experience at this new Westminster restaurant. The menu seems sized right and well thought out. My wife had the Caribbean style blackened fish with sweet potatoes and collard greens. I had a grits bowl with blackened fish. Both were over the top good. The blackening used was the perfect balance of heat and flavor, and the fish were cooked to perfection. I had the dark ale on tap which was very good. My wife enjoyed a tasty Raspberry Beret cocktail. The industrial look ambience works and they did not sacrifice comfort to get there. We enjoyed it so much that we bought a gift certificate while there to give as a Christmas present. Collision course is a welcome and much needed addition to the dining options in Westminster. We will be going back and we highly recommend it!

I would rate this lower, we got seated in a corner. The waitress ignored us, brought drinks and waited on others that were seated after us. Never even came to take our drink order. We got up and left. Very disappointed.

Great spot with a creative menu and a clever cocktail list of moonshine based drinks. Super friendly staff (ask for Jack) and a great alternative to the other new bar across the street!
