My husband and I were on our way to Costco and noticed this food truck on the way there with a sign that said handmade tortillas. We decided to check it out and got hooked! I got a chorizo taco and a lengua taco because you just have to try the tacos at any food truck. They were very good. The lengua had plenty of flavor and chorizo was cooked perfectly. But the secret gems here are Panchita's gorditas. My family's from Michoacán so the gorditas I'm familiar with are a different style. These are D.F style which is from the Federal District of Mexico's capital, Mexico City. They are deep fried, sliced in half and filled with chicharrón seco, cabbage and cilantro, light white onion, and queso fresco and sour cream. We had her add light beans to our and honestly she's like having mom at home in your kitchen. Ask and she'll do what she can to make it how you like. She has 2 salsas to choose from a mild green with plenty of flavor and a spicier red salsa also tasty. They're about the same circumference as a king size corn tortilla so for $5 a pop, that's a steal! Sadly for me, I decided to implement a keto lifestyle and my husband decided to torture me by getting gorditas so I asked if she could make me a salad as close to a gordita as possible minus the "gorda" lol. My salad had shredded chicken, cabbage and lettuce mix, light onion, cilantro, sour cream and queso fresco, tomato and I asked her to add chicharrón (pork cracklings) I topped it off with some delicious green salsa and limón as my dressing. I devoured it! This is a one lady show and she makes everything fresh so if you're in a hurry you may want to try calling ahead.
