I've been here twice within just the past month and the food is solid. I was surprised how authentic this place was since it looked like a chain, but there were many Vietnamese people dining there when we came. Being from Houston, I have a high bar for banh mi and pho, and I would say the pho is great. The first time I got the pho combo the first time and I felt the broth was a bit salty and there was a meat (probably fatty brisket) that was hard to chew. But the second time, I thought the broth was perfect and super fragrant. I personally don't get banh mi in Austin because I haven't found any that match the value and taste as the ones from Houston but this is the closest I've found in town. It's still more pricey and smaller but I'd recommend their banh mi if I were really craving one.

The One Pho in Austin is serving up a true Vietnamese gem that you absolutely need to try - their Baked Crunchy Skin Catfish (Cá Nướng Da Giòn). I had the pleasure of watching owner and chef Dao Nguyen carve table side. (Tip: It's preorder only!) I've only had peking duck carved tableside so this was awesome, it was definitely a showstopper. The catfish comes with all the fixings - fresh veggies, rice paper, nuoc mam (fish sauce), and mam nem (fermented anchovies). They even serve it on this genius rice paper tray that keeps everything from sticking. I'm Vietnamese and I've never seen this! We got the large size ($85) for our group of 4, and let me tell you, it was more than enough. We left stuffed with plenty of leftovers. They also offer a small size for $50. So happy to have more Vietnamese restaurants in Austin!

High quality spring rolls, inside out. You must try their spring rolls. Beef wrapped in betel leaves are super delicious. It's not too common in Vietnamese restaurants. Flat glass noodle is very well seasoned as well (I didn't take a photo). Overall a must try Vietnamese place in austin

Them being closed today (Thursday) is criminal!! lol this is by far top 3 Pho spots in Austin!! Well worth the prices. I've eaten here for the past 3-4 days lol safe to say I'm addicted. I wanna try more items; but you know once you find something you tend to stick with it. But I'll be back with reviews on more items.

Ordered it on door dash and maybe it's just me but Houston Vietnamese food is just way different. It's so flavorful and well done. My spring rolls were coming apart when we got them even though they were individually wrapped. They just weren't wrapped tightly enough and the pork pieces were a little dry. Pho broth was tasty but wish it tasted meatier. Got the kids size BoNe and it was good.

The only reason you would consider eating here is because there is such a lack of options in Austin for Pho. A TikTok brought us out here, but it was a disappointment. They are understaffed and lazy I believe. The soup gets thrown into a pot frozen and is very bland. I'm confident it's just watered down beef broth. No spices at all. They're very stingy with the herbs. They have good rice noodles if you order the $30 pho but the $15 comes with the plain old dried ones. The brisket and the rare steak are so chewy and full of gristle which some people might like, but it's not for me. The tripe and tendon balls were good, but you only get 2 very small pieces of tripe and zero tendon. The service is busy handling complaining customers and bowls being sent back. We received our meal in this order: bowls of pho, spring rolls, then finally our spoons and herbs. The spring rolls were short, stumpy, and with little tiny shrimp for $8, but the fish sauce was really tasty. With the quality of the beef and the soup, I'm nervous to come back and try the 5 beef dish or the stone pho.

It's a solid spot and gets the job done. Large portions, good pho. I got the p8 combination which is my usual go-to, and also tried the spring rolls. I'd say that the combination lacked tendon which most places include. I believe the price was also a smidge higher than most places. I'd also say that the fluorescent lighting was a bit harsh as an atmosphere critique. Overall, if I were nearby and happened to want pho I wouldn't be opposed to coming back -- but if I were choosing a pho place from scratch there would be a few off the top of my head that I would probably prefer more.

Reviewing their latest special, cá nướng - grilled catfish. This is a whole, head on, tail on fish, be advised if you're not used to seeing a whole cooked fish. This is a "roll your own spring roll" dish and then dipped in a fermented fish sauce (mam nem) or regular chili garlic fish sauce. The fish is not deep fried but baked for a few hours to get the skin extra crispy and the fat rendered. You have to call a day ahead for availability and pre-order. I got away with calling the same day but early in the day to have it ready for dinner arrival time. The price is quite reasonable for a whole fish like this compared to other restaurants that offer the same type of dish.
