This is the food truck at Guadalupe Brewing. We stopped by to enjoy some brews and got hungry during the visit, so decided to get some snacks from TX po boys. We had plans to get dinner elsewhere. The food was pretty good and fried to the right amount...but our order took over 30 minutes to make. We had to visit the gals at the truck a few times to ask them if our order was done, or if we were forgotten. The sweet gal taking the orders also said that they would bring it out when it was ready, but we waited a solid 30 minutes and decided to ask. I think they just forgot our order of chips and queso and fried pickles.Besides that, the experience was great. Their chips are great (I love the thicker tortilla chips!) and have a more solid crunch to them. The queso is on the lighter and thinner consistency side, which is always a refreshing texture. They definitely use a lighter cheese instead of a dark cheddar, as shown through the color of the queso. It's got a great flavor to it too without having any extra add-ins. A nice traditional queso! The fried pickles were average, but my bf is obsessed with pickles...so that was his impulse buy.Not sure if I would say this is a steady food truck that I would come back to outside of the brewery, but I'm glad it's at Guadalupe! Good choice for snacks and probably their po boys!

I found this awesome food truck parked outside of The Guadalupe Brewing Company last Sunday. I'm not sure if that is their usual hitchin' post or not, so you might have to hunt them down.I got my order to go and wolfed it down when I got home. I ordered the Cowboy Caviar ($5 with chips) and the Korean Fried Cauliflower ($8).The Cowboy Caviar was really flavorful. I consisted of pinto beans, corn, jalapenos, tomatoes and I'm sure some other spices thrown in for good measure. It was really good and I would order it again, the only complaint I have is each and every one of the tortilla chips was either stale or VERY chewy - I mean REALLY chewy. The Korean Fried Cauliflower was spectacular. The texture and flavor were surprisingly like eating Korean BBQ flavored hot wings. I was REALLY impressed with these little babies. If they can fix the chip situation I will give them a solid five stars.New Braunfels is my second favorite town - right next to #SA300 and this place is just one of the reasons why I love NB so much!

Yes, I'm giving a food truck 5 stars here's why:I have seen from other events around New Braunfels that this truck always has the longest lines. They serve unique sandwiches, tacos, burgers, and Texas Po Boys. Well, it is their own twist on the New Orleans favorite, but instead of using French bread, they use buttered grilled Texas toast.Believe me, being from New Orleans, I had my doubts but it works. What really makes a great poboy, even in NOLA is the combination of meat or seafood, great bread, lettuce tomato, pickles and onion optional--and a great sauce like remoulade, mayo, or roast beef gravy. The lettuce must be shredded, and the tomato must be sliced not diced. She (Ronda) the friendly owner with excellent customer care skills has created so many sandwiches to even name them. Go to their FB page. One sandwich I was going to try today was like a Nashville hot chicken on Texas Toast--too hot for me. I selected the regular chicken poboy, which came on perfectly grilled Texas toast, shredded lettuce and tomato, and maybe onion. It had a sriracha mayo they call "angry sauce."The three large whole filet tenders were real chicken battered and seasoned perfectly with Cajun seasoning. The chicken was moist and paired perfectly with that angry mayo. The lettuce and tomato was fresh. They make their own potato chips on the truck, and they went perfectly with that sandwich. I certainly couldn't eat fries with that Monster sandwich for $8. There are other Cajun type trucks in this area, but I want to work my way down this menu, which is ever changing. This owner is talented, humble, loves cooking and meeting new people.Look for this truck in the New Braunfels area.

Don't let the small kitchen fool you- there's some real chefs in there! To be honest I'm a bit of a brisket snob but the brisket Mac n cheese was amazing! The fries were also really delicious. I also loved their pretzel bites, nice and soft and they come with a cheese dipping sauce. My friends also had burgers which they said were good.

Came to the Guadalupe Brewing Company, which was amazing, and ordered some sides at this place. Best cheese sticks I've ever had, and it was unanimous across the table. We had the cauliflower and chips with cheese too. Too bad we don't live closer because I really want to try so many other things in the menu! Especially the Cowboy Grilled Cheese!! Thanks y'all!

We had our wedding catered by Texas PO' Boys Food Truck during the "2020 Pandemic." The service and flavor was OUTSTANDING. Friendly and professional. I would recommend them to ANYONE. We went with burgers, fish tacos, and grilled cheese. All of it was great, but the grilled cheese stole the show. Flavor and service as great as the state of Texas.
