We couldn't find the Wimberly locations Yelp site so writing on their sister site. We were recently there 4/11/2024 as our daughter got married in Dripping Springs that weekend and decided to give Wimberly BBQ a try. We absolutely love great Q and this definitely didn't disappoint!! Amazing comes to mind. We had the brisket, spicy sausage, pinto beans, potatoes, pork and iced tea. We all thoroughly enjoyed our meal, the atmosphere and friendly staff. We highly recommend.

I see a lot of reviews about how tasty the meats are. I'd have to say, I wasn't very impressed. I ordered ribs and brisket with double loaded potatoes. The ribs were so tough. I did it finish eating them. The taste wasn't appealing to my taste buds either. The brisket was dry and bland as well. I was hoping the bark would have some type of flavor but it didn't. I'm thankful for the barbecue sauce because it did give it some kind of moisture for me to be able to chew and swallow down without choking. The loaded mashed potatoes weren't good either. They kind of had an instant taste to them, kind of like an imitation taste. Supposedly, there is supposed to have been cheese and other stuff in them but I did not taste none of it. That was kind of my fault because I assumed they would be loaded like you would get in a restaurant with cheese and bacon and chives on top but their definition of loaded is different from the normal. The employees were very sweet and based on that, I give them three stars but as far as the taste of the food goes, I was not impressed at all.I attached a photo of my plate after I was done eating.

Easily the best bbq in san marcos, the hatch sausage is yum. The cabbage is unique and good, mashed potatoes are excellent.

Just went to an event that had bbq catered from here and it was amazing!!!! I'm not a big chicken fan but every piece of chicken was packed with so much flavor! Every bite of the chopped brisket was soooo good I had to force myself to stop eating. Sides were awesome as well, I had the macaroni and potato salad and nothing was left on my plate. Highly recommend San Marcos BBQ for catering.

I enjoy the BBQ and will continue to give them my support because during the 2021 freeze they were open and serving San Marcos while most others weren't; that's true service and care for their community. I can't give a perfect 5 stars only because their sides are not as delicious as their meat. The black pepper is just too overpowering for my liking; I LOVE spicy food but all I can taste is black pepper and my mouth is just on fire. My suggestion would be to scale back on the pepper for the sides. The taste and deliciousness is there it's just hidden with the pepper. Less pepper and they would have great sides.

This is the second location of San Marcos BBQ. For the long time residents of Central Texas, it's where the old Fuschak's BBQ was. And let me tell you, this is now the best BBQ option available in Hays County.A dear friend and I went last night and decided to sample a variety of the menu. I'll give you the play by play. Brisket. (Moist of course.) Cut to perfection. Plenty of bark with the classic Texas salt & pepper rub and seasoned with smoke. Unlike some of the other places, though, San Marcos BBQ's smoke flavor isn't overwhelming or overpowering. Definitely some of the better brisket out there. Pork loin. Possibly the most pleasant surprise I've had at a BBQ place in a while. While it was lean, it was still moist and unlike a lot of pork BBQ, it had a bark that gave it seasoning. The pork ribs were the least impressive part of the meal and would've benefitted from a bit more seasoning. Sides? The Mexican/Spanish rice was a great surprise and made a very nice accompaniment to the BBQ. The mac and cheese was the worst part of the meal as it was a huge serving of cheese sauce with a few elbows of macaroni underneath. Both sauces were good. The regular BBQ sauce was thick and slightly sweet. The spicy sauce is easily the spiciest sauce I've had -- and it's a new favorite of mine. I also appreciated how you can order tortillas for your BBQ. In other words, build your own BBQ tacos. I can't think of anything more Texan than that.Definitely the best BBQ in Hays County. Just skip the mac and cheese and go heavier on the brisket and pork loin as opposed to the ribs.

Not happy with the way chopped brisket served, it's been placed in the sauce- I would prefer to add my own- I was told it's barbecue that's leftover do it's placed in sauce. The spicy sausage is good.

I-35 location....Ordered 2/3 lb brisket, 2 pork ribs, and a side of braised cabbage. The pork ribs must of been 'qued a few days ago along with the brisket. Out of two pork ribs, I got 2 bites of meat. The rest was bone and overcooked skin(absolutely no exaggeration here). The brisket looked and tasted like it was from a crockpot. I have been here before, ya'll are better than this. $27 for lunch and I should have went to Jimmy John's.Edit....I would like to add I had a bad stomach bug for 24 hours after eating this.
