Consider this a placeholder for a proper review, since this truck just opened today and deserves another visit for a fair ruling. Their entire menu can be made vegan upon request, and that itself deserves 5-stars. It's so hard to find Creole or Cajun food without meat! Their Instagram feed is certainly tempting, though their initial launch, offerings were limited, as was service. It took over an hour for my order to be ready, after waiting in line for about 15 minutes. I had to grab my food and run before my car was towed, so the overall experience leaves a bit to be desired. I got the chicken and waffles, which were fine. The chicken was a thick slab of alt protein, breaded and crispy fried. The interior was a bit mushy, though there's not much that can be done about this since it's prefab mock meat. Apparently the delay was caused by waffle iron difficulties, were were clear even when it started producing something that could be served. My waffle was pretty darn pale, flabby, and bland. Luckily, the spiced maple syrup made up for many of those missteps. Lots of potential, just needs some work! Give it a month for them to get into their groove. I'll be back!

For the price I was hoping to get a bit more food. The jambalaya lacked some flavor but all in all a very average meal. I found myself still hungry after finishing the jambalaya and fries. The fried chicken sandwich looked awesome and I should have gone with that instead.

I got two things because I wasn't sure how their portion sizes are, and rest assured, one item is PLENTY. Their shrimp and grits were straight fire, perfectly seasoned, perfectly cooked with little grilled veggies ontop and they didn't skimp on the amount of shrimp. And I ate that the day after, I also ordered a po'boy which was more than enough for one meal.They're a new truck, so for the moment they have food until the ingredients run out, so show up early. I'm telling all my friends.

Wow! Shrimp and oyster mushroom Po'boy was so delicious. The batter was perfect and crisp. Also highly recommend the house lemonade, spicy with jalapeño and ginger. Super yummy.

They served my vegan friend real shrimp and didn't even apologize or seem to care. The employees were also not wearing masks.When I messaged them about it, they blocked us both. Real professional. Owner acts like he cares about vegans but is an avid hunter.

I was skeptical about trying Creole inspired cuisine outside of my hometown of New Orleans but Chef Tyrell assured me of it's authenticity. The Nashville Hot chicken was super tasty with a nice kick, though not exactly creole :) Even the pickles were specially sourced to add just the right amount of contrast. Now it was on to the Po'Boy...fingers crossed! Who knew shrimp and oyster mushrooms made for a delightful pairing. The spices and crispy texture wrapped in a French roll and topped off with a jalapeño sauce....hmmmnnn Delish!

Amazing food, large portions, and unbelievable taste! We tried many of the menu items and all were great! The owner was extremely nice and you can tell there is a lot of passion in the food he makes.
