Love the tender juice beef rib. The flavor profile is great and not too mushy. The beef brisket has a great blend of firmness and juiciness.

Had to update my review, since coming back after receiving their Michelin status! First, let's get the obvious out of the way, prices have sadly risen. And the line waiting for food hasn't gotten any shorter. We got there a little before they opened and still had to wait around an hour and a half to order. But once we got our food, everything was so delicious! If I was just rating the typical menu items like the brisket and beef rib (although the chimichurri was really good), my review might have stayed at 4 stars. While delicious, they weren't necessarily anything special. But where the 5 stars comes in is with their specials. Interstellar really knows how to stand out with their signature items. I don't care what anyone says, you have to get the peach tea pork belly! So tender, the perfect amount of sweet and salty, and such a strong and deep smoky peach flavor. I feel like I could have eaten only that and been so happy. The duck, which I believe is only available on Fridays, is so fall apart tender. When I read the menu saying duck legs, I was not originally convinced it would be worth it. Because how big is a ducks leg?? But you get a decent sized chunk with a good amount of meat. And they don't overload with too much sauce or anything, so you can really appreciate the flavor of the duck itself. However, something I wouldn't really get again is the south Texas pork hash. It comes with rice and it's super saucy, and kind of reminds me of a curry. (And I love curry) But it was so sour, I wasn't really a fan. And I love their mac n cheese bc of how cheesy it is, but I do wish it was a little less salty. On its own, it's already salty, and then amongst all the meat and strong flavors, it gets so heavy. Interstellar BBQ in Cedar Park is hands down one of the best barbecue joints in Texas. Their brisket is absolutely incredible--smoky, melt-in-your-mouth tender, and packed with deep, beefy flavor. You get that perfect balance of juicy meat and a beautifully rendered fat cap, with a bark that has just the right amount of crunch. It's the kind of brisket that makes you stop mid-bite just to appreciate how good it is.And then there's the lamb. If you've never had smoked lamb before, this is the place to try it. It's rich, smoky, and insanely tender, with just the right amount of seasoning to let the natural flavors shine. It's not something you find at every BBQ spot, and they absolutely nail it.The sides are just as amazing. The smoked scalloped potatoes are creamy with a crispy Parmesan crust, and the jalapeño slaw adds a fresh, slightly spicy kick that balances everything out. And don't even get me started on the peach tea-glazed pork belly--it's like candy for barbecue lovers.The staff is friendly, the atmosphere is laid-back, and yeah, there's usually a line--but trust me, it's 100% worth the wait. There were a few things I really appreciated about this place. I have a general thought that most BBQ tastes similar to other BBQ, although glazes and sauces can be different. This place def fell into the "different" category! I came on a Friday around noon between appointments because this place is only open 7-4p ish (no dinner hours), and it was still a 45 min wait including about 15 mins outside the building in bitter cold (it was windy and about 30F that day). Bear that in mind!! But the food is lovely -- we had their pork belly which is decadent, with a lovely honey house glaze. We also had the bbq duck leg which is pretty original, I've not seen that at other Texas bbq places before. The brisket was also delicious, as was the pork has which I had ordered to-go. Sides were also fabulous, I loved the Mac and cheese and beet salad!! Of note - I had heard this place had free beer; apparently that's no longer been a thing for several months because some high schoolers had started trying to go on "beer runs" and it had to go away. Shame, that -- free beer would've been dope but oh well! They do have lots of seating inside too, my friend and I had no trouble finding a place because there's lots of turnover.Adequate bathrooms, not fancy but more or less clean. And this is inside a little outdoor mall so there's tons of parking. Def would rec a visit! I don't crave bbq enough to come here often since it's very out of my way (I live south) but it is absolutely worth at least a visit once! And of note, you can also order your food ahead of time and just pick it up at the pick up area - that would save you a lot of time with lines etc.

Came here around 12:30pm and there was a line out the door. It ended up being a 2 hour wait but my friend and I were very determined to try it even though by the time we made it to the front they were out of the pork belly and scalloped potatoes(items we really wanted to try).I ended up getting the brisket taco along with their special - lamb picanha with a side of Gouda mac n cheese. My friend got the pulled lamb and sausage. Overall, I enjoyed the food but wouldn't say it's the best bbq I've had. The lamb was the start here and I felt like the brisket was too lean for me and the sausage casing I felt was a little too chewy. The Mac n cheese however was outstanding and would definitely recommend. I would say it's not worth the 2 hour wait but next time I would do the online ordering for sure.

Having tried Terry Black's and having a fantastic experience, I was excited to step up my Austin BBQ experience at Interstellar with its Michelin Star. We ordered a variety of items which came out to a hefty receipt, grabbed a table inside and went to town. Overall, I do think Interstellar is overhyped. I would only come back for the short rib and pork belly as everything else was an overpriced disappointment. - jalepeno cheddar sausage: nothing special, not juicy or flavorful. - beef short rib with chimichurri: extremely tender and fall off the bone with a delicious crust. - peach tea glazed pork belly: the star of the show. A must order. Extra tender, juicy, and sweet. - pork rib: a huge pass. Thin, dense, and dry. - brisket: the biggest surprise...we asked for a moist and fatty piece and got a dry piece of brisket. We left most of it. - coleslaw & scalloped potatoes: I didn't mind these, but nothing special

I drove 40 minutes north on a Saturday to get this BBQ and it didn't disappoint. I preordered about two weeks ahead because I knew I wanted it for playofffs. All preorders are to-go only. And you have to have at least four pounds of meat. Pretty easy for me. I ordered the brisket, turkey and peach tea glazed pork belly. Then I added jalapeno slaw, smoked Gouda Mac n cheese, and potato salad. All the fixings are complimentary and include housemade pickles, pickled red onions, red bbq sauce, yellow bbq sauce and bread. I used it all but really just enjoyed the meat by itself. So much flavor and moist.Everything was packed neatly, warm and ready when I arrived during my pickup time. The man at the to-go counter was friendly and passionate about bbq. There was a long line outside and lots of happy customers inside eating. You can also buy merch and sauce bottles and additional bread if needed. Highly recommend to all bbq enthusiasts!

I hit up Interstellar BBQ, and honestly, the name is kinda mysterious. Even the workers couldn't explain it.Expect long lines. They also sell merch, and they've got 1 Michelin areas from 2024! I couldn't believe a BBQ joint could have a Michelin star.Location: It's in a weird spot, kinda like a strip mall. But they have the smokers out in front and lots of seating and parking. Pro Tip: Make sure to order ahead, pick it up, and grab one of their outdoor tables. Just a heads up--you gotta order by the pound! Don't expect your order to be ready early. It'll be right on the dot. But better to order a few pounds for pickup rather than wait in an enormously long line, IMO. Let's move to the food! - Brisket: Absolutely delicious, especially the fatty side. - Pork Ribs: Sweet and savory.- Beef Ribs: Insanely good! Perfectly seasoned with a huge amount of meat and a nice texture on the outside. The best of all the meats for me.And now the sides:- Potato Salad: Pretty good. And more mayonnaise than mustardy which I like. - Mac and Cheese: Made with shells; smooth and creamy and not too cheesy--fills ya up but oh so good.- Potatoes au gratin : So delicious!- Pickles and Pickled Onions: They're ok, and come complimentary.All the staff were super nice. Fun to talk to. And in good moods.In a nutshell, Interstellar BBQ is worth the hype. Great food, unique vibe, and a solid one Michelin Star seal of approval.

THE BEST BBQ I'VE EVER HAD! And I've visited a lot of places now. This is also the first michelin star bbq place ever. I had high hopes visiting here. And it blew my mind. There was a line outside in 39 degrees weather. Once inside you could see the happy faces ready to try out the hype. I ordered the moist brisket, peach tea pork belly, turkey, pork rib, gouda mac and cheese, pork hash, and banana pudding. The brisket was the best I've ever experienced. A magic meat melting in your mouth. Perfectly salt and peppered. The fat just melted away as it entered my mouth. The peach tea pork belly had lots of flavor. A soft texture as well. I don't see pork belly on too many Texas bbq menus. The pork hash was also really delicious. Can you go wrong with meat and rice? Every thing we ate here just hit the spot. Sitting in a strip mall you would never believe that in such a humble setting there would be such a fantastic culinary experience. With an outdoor smoker sitting in the middle of the parking lot, Interstellar certainly feels out of place in a lowkey setting. However, in keeping true to its name, the food is absolutely out of this world. The pork and beef ribs were juicy and tender. The brisket was easily the best we have ever had, the texture and flavor perfectly cooked (the bark being the difference maker). The sides were well balanced and delicious, the highlight being the mac and cheese that compliments the rest of the meal so well. Every single item was absolutely exceptional. Knowing there was a long wait, we pre-ordered the food and was able to sit outside. We try to have the weight of our ratings mean something, we don't give 5 stars out for just good, or even great meals. So believe us when we say this is a 5 star restaurant well deserving of its Michelin star!

Determined to try this now Michelin-recognized BBQ, we showed up at 10am (1 hr. before opening) on a Saturday and were about 30th(ish) in line. By the time the restaurant opened its doors, there were probably another 50-75 people behind us! Service was quick and extremely welcoming/friendly. In short: everything we tried was insanely good, and 100% worth the wait and adventure. We were inside and had our food by 11:45am!You order your meats first - priced by the 1/2 LB. You can get anything in 1/4 LB. except for the sausage. Sides are available in single serving, pint, or quart. Homemade tortillas are available for $0.50 ea., and complimentary BBQ beans are served upon request (dine-in only). Drinks and desserts are last at the counter to pay, and then you're on your way to a table! They do have employees in the dining room assisting with any needs, refills, etc. Very casual and friendly service. QUICK FACTS:- Parking? Yes, located in a shopping center so there's ample parking.- Reservations? No, first come, first serve. Open until sold out!- Daily specials? Yes, posted on the front door and inside. Seasonal sides and desserts as well.- Order ahead/takeout? Yes, you can skip the wait and order ahead in advance (4 LB. meat minimum).FOOD RATINGS:- Meats (5/5): We tried a little of everything. The brisket (and burnt ends), peach tea glazed pork belly bites, turkey, and sausages were our favorite. But everything was so good!!! The chimichurri on the beef short rib was fantastic. The daily special when we visited was peri peri chicken (we did not try).- Sides: Mac & Gouda (5/5 - some of the best mac I've ever had at a BBQ joint!), smoked scallop potatoes (5/5 - incredible), new potato salad (4/5), BBQ beans (4/5), chorizo cheese grits (3.5/5), jalapeño slaw (3/5)- Homemade tortillas (4/5): Worth getting 1-2!
