Best grilled cheese ever. It was dumb and baffling how a simple sandwich can be so elevated. The VIA 206 came with cheddar cheese, jack cheese, and a balsamic apricot fig sauce on sourdough bread. YES, A BALSAMIC APRICOT FIG SAUCE so fucking good. I also added some habanero salsa for shits and gigs and it was so great. There were so many flavors and textures and it all made perfect sense.

The history behind the brand: The inspiration for Burro Cheese Kitchen struck when owner Justin Burrow, an Austin native, spent five years in Seattle. There, he discovered the joys of grilled cheese and got the idea of pairing various cheeses with various sauces and presenting a cheese plate dining experience as a grilled cheese sandwich. After trying out hundreds of combinations, Burro Grilled Cheese Kitchen opened its doors in 2013 and has been a solid favorite of the Austin food scene since then. This sandwich was the ideal combination of rich and savory and sweet! I shared my sandwich with Thing Two as this sandwich was a beast! The sandwich was a little tough in some aspects, but overall, it was a good showing for this food trailer!

Burro's grilled cheeses had been hyped up for a long time, so I was super excited to visit the food truck on Rainey Street! I got the waylon & willie which was aged cheddar, Gouda, caramelized onions and pepperoncinis all grilled between two pieces of sourdough bread. The sandwich was pretty solid. It was grilled to a perfect crisp and the onions and pepperoncinis complemented the gooey cheese. However my favorite part of the meal was dipping the grilled cheese into the habanero yellowbird sauce. The sauce was super spicy but still retained lots of flavors and really added to the salty/savory feel of these. It wasn't the best sandwich or grilled cheese I've had, but it's definitely up there. Overall the food truck had a dope vibe and long lines (def worth the wait)!

If you haven't had a grilled cheese sandwich made with brisket and served with a sweet sriracha sauce, baby you're missing out. I have never traveled to get to burro because I eat their foods at ACL Fest every year since I've been attending. And that's all. So get on the Yelp and get you some Sinfully tasty food.

I got the Long Tall Texan and it was so good! It has sourdough, aged cheddar, brisket, and a Serrano pineapple sauce. The sauce isn't spicy though, which I made sure to clarify before because I can't handle spice. It's all delicious and would eat here again!

Food truck located in the parking lot of Hi-Sign Brewing's new location on Shady Lane. Friendly staff. Order was completed in 10 minutes. The grilled cheese was very cheesy and tastes great! I really enjoyed the sourdough used for the sandwich; it was grilled perfectly. There is also a bottle of habanero sauce at the pickup window that you can spice up your sandwich if you'd like. It is pretty pricy for a grilled cheese sandwich, but I'd still recommend coming here for a quick snack or lunch if you're in the area. The one downside is the seating for the food truck is all outside and there's very little shade. You can grab a drink at Hi-Sign brewing and sit and the air conditioned taproom.

I had a grilled cheese with pepperoncini peppers. It fell on the sweet side and wasn't my cup of tea honestly. Staff was friendly but I just wouldn't go back based on the food.

Chefs kiss! I got the Waylon & Willie with a Mexican coke and it was perfect. Cooked perfectly well with crispy outsides, melted cheese, and not very greasy . The toppings didn't overpower the cheese, and while I never would have put these toppings together, it was fantastic. Quick and easy to order and receive my food, and the staff was very friendly!

Who doesn't love grilled cheese?We were lucky enough to have Burro stop in during work. I know this location may not be the exact food truck since they are pretty mobile but I'm sure it's similar. Burro Cheese Kitchen has awesome grilled cheese sandwiches. You can see the workers in the food truck grilling the cheese over a flame before they add any toppings so the cheese is extra melted. If you're in the mood for a hot, grilled cheese then I would recommend checking this out.

I went to the food truck on Rainey Street. I got the classic grilled cheese - it was good but not that great- pretty ordinary grilled cheese. The specialty ones looked better.
