Buddy's trailer is actually hidden behind the main building at the Fairlane bar and food truck court. Plus they need better social media visibility (e.g., no one's claimed them here on Yelp). It's a pity because their product is very credible.First, just the notion of combining crepes and bbq is compelling. Particularly if both can be brought off well. .??In pursuit of an answer to that sorta question, we sampled a couple of their entrees recently. I could not possibly resist the brisket crepe. I mean WTF. What self respecting smoker chef guy could?I digress for a moment. Service at the window is hyper friendly and cordial. Including a mea culpa that the message system is undependable. Appropriate because it did. But, to their credit, the young woman at the window realized that and brought our order to our table INSIDE the bar. That's customer service. To the food. Their portions are embarrassingly generous. My brisket crepe was the size of a Subaru. The crepe itself was authentic and delicate but not flimsy. I'll be back to try their more conventional crepes to test the cook's skill. Meanwhile, the brisket was highly acceptable, moist and tender, with enough rendered fat to lend good flavor but not so much to be, well, fatty. Buddy's is up against a horde of brisket competitors in this vicinity. They hold their own quite well. I tried a bite of my companion's brisket sandwich in a ciabatta like bun just to calibrate, and it was unsurprisingly the same. I'm not as fond of Buddys bbq sauce, but, at least, they don't slather it on and thereby allow the brisket to stand on its own. I'm hoping Buddys overcomes the hidden location and ups their media game and hangs around for a good long time.

Great bbq! They are a solid 4.5 stars but not quite a 5 today because (just my opinion) the pork ribs just fell off the bone when you tried to pick them up and had to be eaten with a fork. Some prefer it that way but when I order a rib I want to be able to hold the bone and bite the meat off with just a slight pull from the bone. That being said, the flavor was a very good, borderline amazing blend of caramelized sweetness and spices that melts in your mouth. The 4 ribs were served on top of some very fresh, buttery, creamy, cheesy, well seasoned garlic mashed potatoes that were so addictive I couldn't stop eating them. I also ordered something I've never heard of in my life: a brisket crepe. It was a garlic & herb crepe filled with some of the tastiest brisket in dripping springs. It was wrapped like a burrito and filled with the amazing brisket, bell pepper and onion, and their signature beer bbq sauce. After my first bite I immediately thought to myself that I will certainly be back soon to order this again. I am so stuffed but already can't wait to go back and check out the rest of the menu!
