Truly a great addition to the Lockhart bbq scene, and honestly has quickly become one of my favorite joints. First, the food. Absolutely amazing. The pork ribs are some of the best anywhere. Brisket super moist. Turkey ridiculously tender, though it lost a bit of the turkey flavor imo. Sausage has the perfect balance of spice and crunch. Nothing was too heavily seasoned, it was all just perfect. Even our two small kids loved it. They ran out of beef ribs and lamb by the time we ordered, around 12:40. Sides were great - highly recommend the pasta and potato salad. Service is great. Super nice folks. Albeit slightly slow. The line moves only as fast as they can serve you. Seating space is limited but good enough. Again, they basically pace it out where you shouldn't have to wait for a spot once you get your food. This isn't a sit down and chill for an hour sort of place. Not much of an ambiance. Eat and leave. Price is surprisingly reasonable. Their tray for two is an incredible deal and with a ton of meat. We can't wait to come back. Will try to either come close to open or else around 1pm though when the line dies down. Otherwise expect to wait 30-45.

Currently open Saturday and Sunday at starting at 11am.There will be a line. As of November 16, 2024, the line wraps just slightly around the corner. On that day, the beef ribs and lamb chops sold out within an hour of opening. However, they still have the rest of their items on the menu.We arrived in line at 11:30am, just around the corner. We obtained a Tray for Two plus a sausage at 12:44pm, so roughly a 1hr and 15 minute wait time from around the corner. Water is offered to patrons in line. Today, Pork Stew substituted the Slaw, and Smoked Pecan Cobbler replaced the Concha Pudding.Seating: 5 long rectangular tables. Each table seats about 8 people on metal stools. Make friends and rub elbows with others. A bit of seating also exists outside. Capacity within the restaurant is currently limited to 50 people.Bathroom: Pink lighting, a mirror that telling you that you're hot stuff, with an automated soap dispenser cozy with the paper towel trash can.Decor: Sonic the Hedgehog, black and white pets, hearts, framed articles and awards, pink and black Barbs B Q T-shirts, QR code menu. Sold out sign by the entrance indicates what is no longer available for the day.Ordering experience: a small welcoming piece of their amazing brisket. Order what you'd like. We opted for the Tray for Two. Engage in a friendly convo with owner and pitmaster Chuck while you watch her quickly prep the meat in your meal with care. She's dashingly fast, quick, and precise with the knife, and willing for a quick photo opt. Very smooth operation.Pork Stew: Pork, rice, corn, squash. Pretty yummy comfort food.Green Spaghetti: Yes, order it. Roasted poblanos, cilantro, jalapeño, cream cheese, sour cream, milk, blended. In and around spaghetti.Smoked Pecan Cobbler: Warm, nutty, slight chew. Comes with a light airy sweet whipped cream. Easy to finish up.Molotov Pork Ribs: I could eat more of these. Coated with a background spice sauce with a front of intense lime and lime zest. Great texture, flavorful meat, not just the sauce.Sausage: This was actually on the pretty salty side. Has green stuff and cheese? within. You get a pretty long sliced link.Brisket: Uniform, tender, flavorful. Consistent with the sample given to you at the counter. I haven't had much BBQ brisket before; this one definitely did not disappoint. No bland parts and not dry and not excessively fatty. It's definitely made with a lot of love and care.Turkey: Succulent, tender, with an amazing flavor from the herby stuff. Never really had turkey with this kind of flavor.Totally dig the Pork Ribs, Turkey, Green Spaghetti, and Brisket. Need to try the Beef Ribs and Lamb chops next time. Also want to try their Slaw.

Waited in line for 2 hours during the TM bbq world's fair, and it was worth it. Once we got inside, the walls were covered in nostalgia: Sonic, clippings from the papers, etc.Shared the tray for 1 with my husband, and I was stuffed. My favorite things were the brisket, the stew, , the ribs, and the pineapple upside down cobbler.Pitmaster Chuck was friendly amidst the unending line of people, as she sliced the brisket and all of the meats for us. After each cut, she dipped the meats in the jus, which reminded me of my uncle dipping the freshly carved meats at thanksgiving. I was curious about the stew and she and described the stew as the best side they served.The stew is yummy. Squash, corn, and pork in a luscious sauce served over rice is what I dream of, even over a week later. The rub on the pork ribs is special. It's very different than other ribs served around. The brisket is so tender.Can't wait to get back here for more stew, brisket, and pork ribs. Who's splitting the tray with me?

Visiting the barbecue capital of Texas, a new staple has really been catching my attention and with the testimony of my family friends, we just had to make the hour and half trip from San Antonio one Saturday morning to find out for ourselves. Nestled along Market Street in downtown Lockhart right across the Caldwell county courthouse, is a new barbecue eatery with a Latin twist take on Texas Barbecue, Barbs B-Q!! We arrived at 11am and the line was up to the corner, the line moves about as quick as they can take your order and serve your plate. We got to the front of the counter after about an hour waiting in line and the place is very small so don't expect to stick around for an hour, simply order, pay, eat and leave. The ambiance is minimal at best, interesting restrooms toward the back, and you can see the preserved historical building in which houses this barbecue delicacy! Upon ordering you have the option of ordering the meat by the quarter pound, for my wife and I about 1/2 lb of brisket and ribs did it, we added the fajita sausage, side of green spaghetti and for dessert upside down pinnapple cobbler. Let's talk about the ribs, so juicy fall off the bone hint of lime and perfect amount of seasoning it was my most favorite meat, the brisket was very juicy, minimal fat, perfectly seasoned complemented well with a spicy jalapeño cheese sausage link! Add green poblano spaghetti to spice it up and finish it all off with an upside down cobbler, warm and perfect amount of sweet pineapple taste! Overall, the place was worth the wait, it is one of the best bbq restaurants I've ever been too, my wife and I really enjoyed it, we can't wait to make another trip in the future to go for round 2!!!

I texted a friend to see what he was up to one morning and he sent me a pic of Barb's sign. I asked if he could bring some back to town and he brought back a mountain of BBQ. You can read everyone else fawning over how good the meat is (it is excellent). I'm going to tell you the only thing you need to know - green spaghetti. It didn't look good to me and I turned my nose up to it until my buddy finally goaded me into trying it. Let the kids think what they will while you inhale all of it. It's awesome. Barb's is awesome. If I stood in line for it after a 90 minute drive, it's unclear if I would feel the same. I'll have to go get some more of that green spaghetti to find out.

We waited in line starting at 10. Once the line started moving it was fairly quick. We were concerned about seating, but the tables were cleaned and people shared tables to accommodate the crowd. The bathroom was super clean and adorable.Everything was excellent. I could almost stop there. The lime zest finishing on the pork ribs was a nice flavor bonus. The green spaghetti was delicious with a slight hint of heat. The sausage and brisket was fabulous.Special shout out to the pecan cobbler. It was the best cobbler I've ever had. Full stop. I would go back just for that.

Barb's B Q had been recommended to me by quite a few people so I had to make the drive from Austin to try it out. I'm a little bit of a barbecue snob and have high expectations but Barb's B Q still managed to impress me with the flavor and texture of the meats, creativity with the sides, and fantastic service!I arrived at 9:05 am on a Saturday and was second line so I had my food and was seated within 10 minutes after they opened at 11:00.FAST FACTS:*Parking - nearby lots and street parking available*Online ordering - not available*Only open Saturdays and Sundays from 11:00 am until sold outSERVICE - All of the workers were extremely welcoming, pleasant, and conversational! Workers also stopped by the table to clear off our tray just as we finished.PRICING - The total was $100.67 after tax ($7.67) but before tip for the "Tray for Two" ($55), 2 sausages ($8 each), a lamb chopis ($10), and a pint of green spaghetti ($12). BBQ is going to be expensive, especially in Texas at popular joints, but overall I felt like it was worth the price!The "Tray for Two" included 1/2 lb of brisket (3 slices), 1/2 lb of molotov pork ribs (2 ribs), 1/4 lb of turkey (4 slices), two sides, and a dessert. If you're two normal people, this is more than enough food! But, if you're wanting to ball out (especially after waiting in line), you might want to order some additional items... I highly recommend the sausage!BRISKET (9/10) - This ranks in the top 5 of brisket I've had. One of the pieces was fatty and two of the pieces were lean... the fatty brisket was PHENOMENAL and the lean was okay (but that's to be expected). The bark had a good amount of seasoning but was more on the salty side than peppery side. It was incredibly juicy and flavorful! This is a must order!MOLOTOV PORK RIBS (8/10) - Ribs are never my favorite but these were some of the better ribs I've had. The seasoning was phenomenal and they zested fresh lime on top which really elevated the overall flavor. The meat was mostly tender but there were some bites on the outside that were a little tough. Still, I definitely recommend ordering these!TURKEY (10/10) - I think this is some of the best turkey I've ever had! Turkey is never going to be the star of the show but Barb's somehow made this turkey so moist, tender, and perfectly seasoned. I definitely recommend ordering some, even if you usually skip turkey at BBQ joints!FAJITA SAUSAGE (9/10) - The texture on the sausage was exceptional... it had a casing that snapped with each bite but it also was soft and falling apart on the inside (which I love). I didn't get a strong "fajita" flavor... more so just jalapeño and cheese but I definitely recommend ordering this!LAMB CHOPIS (6/10) - This is the one item that didn't blow me away and I don't think I'd order this again. I heard someone else in line raving about it so I gave it a try but it was just okay. The seasoning was delicious but the actual lamb was chewy and kind of dry (it looked moist at the beginning but quickly dried up). It just wasn't worth the stomach space.GREEN SPAGHETTI (10/10) - Not only is this a must-order, but I recommend ordering a larger size than you think you need because it's ADDICTING! This is such a unique side option but it works well with BBQ because it's easy to eat (barely any chewing required). It's super creamy and goes well with all the savory meats. I'd come back just for this!CHARRO BEANS (8/10) - Most bean side dishes are forgettable but I felt like these were more unique and held their own. The cheese, bacon pieces, and tiny sausage slices really elevate the black beans. It's a good side option!PORK STEW (8/10) - This replaced the slaw on the particular day I visited... it was another unique side option which I appreciated. The pork was tender and the sauce was flavorful. The corn and squash pieces make you feel somewhat less guilty about indulging on everything else.CHOCO PUDDING (9/10) - This isn't a dessert I'd normally order but this was the perfect end cap! The chocolate pudding has a slight cinnamon flavor which was delicious and the salty cookie crumbles on top with the pretzel pieces added a great texture. I'd order this again!I had heard great things about Barb's B Q so I had high expectations and was very excited to try it out... I'm happy to report that I was still blown away! I'll definitely be back the next time I'm in the area and I'll recommend it to others passing through Lockhart but also those willing to make the commute just for BBQ because it's absolutely worth it!

SOLID bbq that brings together classic tribute to Texan BBQ and unique flavor of Latinx and modern creation. Recently celebrating one year as a brick and mortar, Barbs is an exciting stop in the capital of Texas BBQ. Open only two days a week, and opening the doors at 11 AM, the all-woman owned establishment takes pride in, not only, work/life balance, but taking time to put all attention necessary into providing great flavors and quality food. Ordering by the half pound, I have to say this is one of the only BBQ spots (of many visited) that gives you a meat product that is...well, mostly (if not all) meat. That's right! There was barely any fat or nonsense included on the charging scale, and barely anything needed to be discarded because the quality of cuts were that good. You don't have to worry about paying for way too much fat on the brisket. And the brisket flavor? Fantastic. A little dry, but will not complain due to the flavor. The pork ribs were our favorite. Garnished with lime zest for a vibrant zing, pairing well with the succulent glaze. The green spaghetti? Do it. DO IT. Reminiscent of my Mama's recipe, so if you're Latinx, you'll be nostalgically satisfied; if you're new to this green sauce, you will be so thankful for the new flavor. There will be no craving for Mac and cheese needed to be filled...Tortillas instead of bread. YUM. The best brisket tacos you'll have, as a result. Fixings are pickles and pickled red onion. Too good!! Can't wait to come back! We thought about hopping over to another BBQ choice, but Barbs satisfied us SO well, we didn't want to change the experience. The line does pick up around 10:30 AM. We got there an hour before open, I'd say a solid 20-30 people in front of us and we waited another 45 min upon opening (1 hr 45 total). Unfortunately, by the time we got up there the lamb chops were sold out. Shame on the pair of people in front of us who literally ordered a whole rack to themselves...anyway...Only suggestion? The charro beans (uniquely made with black beans) were pretty salty, along with the sausage, so I'm glad we didn't get more than the single serving. The sauce was also unique, but pretty sweet. Hats off to the chefs, y'all rock it!!!

I arrived just before opening on a Saturday, and the line was already well around the corner. All in all, it took 3 hours to get to the counter to order.I ordered the tray for two, which includes brisket, ribs, and turkey. I added two sausage links. Everything was fantastic and the staff were efficient.

Want to start saying that the food is very good.I feel there are some intentional logistical issues though. There are 4 tables inside and one outside. They won't serve until seats open up and there's only person taking orders. I waited over 2 hours in a line that would have taken 15 minutes at Terry Blacks, Blacks, or Kruez. No reason to go back until that gets figured out.
