Union An American Bistro

Our cousin recommended this place for our date night. We arrived early for our reservation but were still seated quickly. We made it on time for happy hour so we ordered fish tacos, truffle tots and baked brie- all to share. The truffle tots were undercooked and tasteless. However, the fish tacos and baked brie were great. The baked brie is a MUST. So. Good. When we told the staff the tots were not good and we would like to order the Mac and cheese instead, they were on it. No issues at all. And the Mac and cheese was great. Drinks were great too. All in all, we enjoyed our meal and the staff.

What a wonderful, quaint bistro in downtown CastleRock. My husband and I were in town for the holidays and wanted to meet friends over lunch. Castle Rock was a great halfway point. Union An American Bistro had fabulous food and a cozy atmosphere that was quiet enough for us to visit and catch up. We started with some appetizers of marinated olives and Butternut Squash. Outstanding flavor, warm, and delightful. My husband had the Thai Chicken Flatbread. Perfect lunch portion. I shared it with him along with my order of Coconut Fried Chicken. Loved the shoestring fries that came with the sandwiches. Delicious. Our friends had the Brie Grilled Sandwich with salmon, a salad, and Adovado Spiced Shrimp. I didn't try their dishes but they raved over their offerings. Don't pass on dessert. The Coconut Cream Pie is heavenly. Add some coffee to round it out. Our server was pleasant and helpful and extremely patient while we visited and leisurely perused the menu. We will definitely keep this gem in the rotation for future visits and tell all our Colorado friends and family to stop in.

This is a Cunningham group restaurant and they always have impeccable service, excellent fare and great drinks!

Our first time coming earlier on a Saturday so we could enjoy happy hour, it was fun getting to try out some of the different $7 martinis. I enjoyed my Black Pearl more than the New Old Fashioned and will definitely get the Pearl again. My wife also enjoyed her Margaritatini a little better than the Key Lime she started with.The cheese curds are a staple whenever we come here. Even better on the happy hour menu. My wife had the Greek flatbread, also on the discount menu, and she liked it as well. The one downer was the new halibut entree. I didn't send it back but probably should've. The fish itself was very overcooked, dry, and tasteless. The sauce was uneven. Loose and milky tasting in parts...thicker with a strong lemon or garlic taste in other areas. It's almost like the sauce was mixed as it was poured on rather than actually stirred in advance. Green beans were nothing special either. At $38, this dish was a HUGE miss and won't be ordered again. The PB bites are still the best $2 deal in town. Quite full from everything else I consumed on my birthday, I forced myself to consume my luscious, little dessert. Service was attentive, prompt, and friendly throughout our stay.Food, other than the halibut gets a 5. The fish gets a 1. Service gets a 5.

Stopped by for lunch after taking a stroll in downtown Castle Rock. I ordered a well-done grilled salmon, and it was flavorful with a nice char. We were seated in a quiet area, allowing my party to easily converse and enjoy our time at the Bistro.

Such amazing food, but the customer service!! They had such wonderful customer service provided by Destiny! Her attitude will keep me coming back for more food.

One of the best stops for apps and drinks. Catch their happy hour and it's even better! The servers are on point with suggestions and will be by your table frequently to keep your plates and glasses full. Want an even better experience? Grab a patio table right off the road and enjoy tue breeze too

I would normally give The Union a 4/5 rating but this visit was a little disappointing. It was a Wednesday evening about 7:30 and the place was moderately busy. We sat in the bar at the community table and waited 15 minutes for service before the manager finally came over to help us. He kept checking on us and took care of us with a random waiter stopping by ONCE. The food and atmosphere are always good and the drinks are amazing!!

This was a Valentine's meal. I love that they had a special menu and that the team was so cool. It was our first time going there so we didn't know what to expect. I would love to go back again and check out the rest of the menu. Kudos to our server and hostess that night. Thank you for the steak recommendation!

Fantastic appetizers and brunch items; great service; Union breakfast, though simple, was tasty and great fresh eggs, but also included lots of bacon; sandwich was also tasty and filling
