Toby's is my favorite for super fresh, delicious seafood! This family owned business brings the flavors of New Orleans to the Denver area and delivers it perfectly. I have traveled all over the metro area just to sample Toby's cooking from their amazing food truck!Their red beans and rice with sausage is outstanding and their poboys overly generous. My favorite is the shrimp poboy and my mouth is watering just writing this review. My grandson loves their hotlinks poboy the best. I haven't tried everything on the menu but what I have tried has been outstanding. As someone who has spent a lot of time in Louisiana, this is as authentic as it gets! The owners are so nice and friendly that it makes your dining experience even better. With all things considered, you can't go wrong with this treasure.

Jambalaya and shrimp po boy with a complimentary Beignet. My wife and her family are from New Orleans and are very particular about their food, WITH GOOD REASON. Recipes are handed down generations, techniques, handed down. Toby's hit that mark. Boy, the crispy breading (a thing of pride also) is phenomenal and crispy with familiar Cajun-like flavor and spice, a little kick and not too heavy on the salt, which I personally like.Jambalaya tasted amazing. Again, salt was there but not biting my cheeks and the spice was perfect with a smoky flavor that was very pleasant. Rice and ingredients were well cooked, comfort food for sure.Service was great, both gentlemen were very friendly and kind. Will definitely dine here again and highly recommend.

I've been craving some New Orleans food for a hot minute now. The food gods answered my calls and routed me to Toby's which is outfitted from an original trolley!I got the Devastator and a side of red beans and rice. 100% legit!!! So happy I didn't have breakfast before this meal. Saved my leftovers for dinner. The po'boy is huge and loaded with Tasty, crisp and fresh fish, shrimp and hot links. I loved it. The rice and beans were super tasty, too. Chatted with Maria one of the owners and we're both from NYC via our born countries. Super friendly and could make anyone's day better! I'll be on the lookout for the trolley.

Fantastic food and truly the nicest service! The catfish was heavenly but truly everything was fantastic. The women taking orders also makes homemade habanero sauce which was truly the highlight of my week and I smothered it in everything, definitely worth the stop!!

Driving through the Green Valley Ranch neighborhood, I recall finding Toby's New Orleans Po'boys Food Truck, but without any idea what is was!! Found by the Omar D. Blair Charter School, look for a wide and lengthy dark green train car on wheels! I was feeling free to give the Jambalaya a try and with some of the favorite meats they served. Also, a great substitute, if you are allergic to seafood! ( add chicken, smoked sausage, ground beef) The Jambalaya was absolutely delicious and super filling, the nice staff are also super warm and welcoming. They also serve Poboys, chicken sausage gumbo, crawfish pasta per demand, cajun taters and beingnets ( traditional, pumpkin spice or churro). I'm also super proud that Toby's didn't go out of business last year, during the March 2020 Restaurant shutdown! It was announced by our local independent news source: Westward.

My hunger pains were satisfied with a DELICIOUS Poboy from Toby's Trolley on the Auraria Campus in downtown Denver today. The SWEET woman taking orders said the portions were generous and that we could order a half and half sandwich. SOLD! My daughter ordered the shrimp and I had the fried catfish. A PIllow of Southern Love...the Poboy was well-dressed on crunchy bread overflowing with well-seasoned shrimp & catfish. Half a Poboy was the perfect size for lunch. The Cajun fries were crunchy and zesty. **I'd definitely order here again!!!** Oh, did I mention FREE JEWELRY? You get FREE Mardi Gras beads with your order. Love that!!!

Let me start by saying service was excellent, friendly customer service, the lady at the window explained the menu , I tried their SHRIMPAGATOR( shrimp and alligator poboy) never had alligator before and I need to say, I loved it!!!!! Can't wait to try the rest of the menu. The portion are huge. I was able to take half for later. Looking forward for them to come back to campus.
